- Flatten chicken breast evenly to 1/4-in. thickness; set aside. In a large resealable plastic bag, combine the orange and lemon juices, honey, oil, mustard, poultry seasoning and cayenne pepper. Add chicken breasts; seal bag and turn to coat. Refrigerate for 6-8 hours or overnight. , Drain; discard marinade. Grill, uncovered, over medium-low heat, turning occasionally, for 10-12 minutes or until juices run clear. If desired, top each chicken breast with a slice of cheese and grill 1-2 minutes longer or until cheese begins to melt. Serve on rolls with tomato, onion and lettuce.

HONEY LEMON CHICKEN

- Mix canola oil, lemon zest, lemon juice, Dijon mustard, honey, garlic, Worcestershire sauce, Italian herb seasoning, salt, and black pepper in a bowl; pour into a resealable plastic bag. - In a large bowl or ziplock bag, toss the chicken thighs with the cornstarch well so every piece is covered in cornstarch. Set aside.
- Add all the "Sauce" ingredients to a bowl and whisk together to combine. Set aside.
- Add the vegetable oil to a large pan on medium-high heat.
- Once the oil is hot, add the chicken and fry on medium-high heat until crispy and golden.
- Remove chicken from the pan, save one tablespoon of oil and discard the rest.
- Add garlic, ginger and red pepper flakes to the pan and cook on low heat for about 30 seconds, until you smell the garlic. Stir continuously and be careful as the garlic and red pepper flakes can burn quickly.
- Add in the chicken back to the pan and toss.
- Give the sauce in the bowl a quick stir and add it to the pan.
- Stir to coat well the chicken for about 30 seconds to 1 minute, until sauce has thickened.
- Garnish with chopped green onions, sesame seeds and fresh lemon zest.
- Serve immediately with rice.

- Fried Chicken:.
- In a shallow baking dish whisk together flour, paprika, salt and pepper.
- Working in batches place the chicken in the flour mixture, turning to coat thoroughly. Pour the buttermilk in another shallow baking dish. Coat the chicken in the buttermilk then place back into the flour to coat one more time. Place the chicken on a wire baking rack over a sheet tray until ready to fry.
- In a cast iron pan add enough oil to fill about 2 inches up the sides of the pan. Heat the oil to 350 degrees over medium high heat. Fry the chicken in batches turning once until golden brown and cooked through. The breast should be done in about 3-4 minutes per side. Remove to a paper towel lined plate and season with salt.
- Build the sandwiches by placing the fried chicken on a bun and topping with the slaw, hot honey and pickles.
- Slaw: Combine all ingredients in a large bowl and toss to coat. Season with salt and pepper to taste.

- In a small saucepan combine ingredients. Bring the mixture to a simmer over medium heat. Simmer for 2-3 minutes then remove from heat and allow to cool to room temperature.
HONEY-CITRUS CHICKEN
Steps:
- Puree pineapple, jalapeño and garlic in blender until almost smooth. Pour pineapple puree into 13 x 9 x 2-inch glass dish. Add orange juice, lime juice, soy sauce, chopped cilantro, chopped basil, black pepper, orange peel and lime peel to puree. Stir to combine. Add chicken to marinade and turn to coat. Cover and refrigerate at least 4 hours, turning often, (Can be made 1 day ahead. Keep chilled.)
- Remove chicken from marinade. Using rubber spatula, lightly scrape excess marinade from chicken. Strain marinade into heavy medium saucepan. Transfer 1/3 cup marinade to small bowl; whisk in honey. Boil remaining marinade until reduced to 1 1/2 cups sauce, about 15 minutes. Whisk in butter. Season sauce to taste with salt and pepper.
- Prepare barbecue (medium-high heat). Brush grill with oil. Grill chicken until cooked through, turning and basting often with reserved honey marinade, about 10 minutes.
- Transfer chicken to platter. Garnish with cilantro and basil sprigs. Serve passing sauce separately.

- Place the chicken in a bowl. Add the buttermilk, salt, pepper and garlic salt. Mix together, cover and place in the fridge to marinade for at least 1 hour (up to over night)
- Preheat the oven to a low heat (to keep cooked chicken warm). Heat a large pan of vegetable oil (or preheat your deep fat fryer) until hot (you can test by dropping a small cube of bread in there, if it rises immediately to the top and starts to bubble rapidly, it's hot enough). You'll need at least 1 litre (4 cups) of oil - but make sure your pan is no more than one third full.
- Mix together the crispy coating ingredients in a small bowl. Take the chicken out of the fridge. Lift a piece from the buttermilk and allow the excess to drip off. Dredge the chicken in the crispy coating mixture - ensuring it's fully covered. Place on a tray and repeat until all of the chicken is coated.
- Once the oil is hot enough, add in 5 or 6 of the chicken tenders. You can add more or less depending on the size of your pan, just be sure not to overcrowd the chicken. Cook for 3-5 minutes until golden brown and cooked in the middle. You can check this by cutting open a piece of chicken, if it's no longer pink in the middle, it's cooked.
- Place on a tray in the oven to keep warm whilst you cook the rest of the chicken.
- Make the coleslaw by using a mandoline to julienne the cabbage and carrot (or you can slice thinly by hand). Place in a bowl with the mayonnaise, mustard, honey, lemon juice and black pepper. Stir together, then cover and refrigerate until needed.
- Now it's time to assemble. First, arrange the chicken tenders into four piles and place the gouda on top. Grill or place into a hot oven for a couple of minutes until just melted.
- Place the bottom of the brioche buns on four plates. Top with the lettuce leaves, followed by the cheesy chicken pieces.
- Spoon on the coleslaw, then sprinkle on the red onion slices and jalapeno slices. Place tops of the buns on top and serve.

- Prep the Chicken: Mix all chicken marinade ingredients together in a large tupperware container. Slice chicken breasts in half so they're not so thick - it'll be very hard to fry them without burning them if you don't do this step. I ended up cutting some of the chicken breasts in half through the thick part, and then if one piece was twice as big as the other, I cut that in half across the width of it too. Toss chicken in the marinade mixture, pop the lid on, and let sit in the fridge for 1-2 hours.
- Mix up the Honey Mustard Sauce: Stir all sauce ingredients together, and adjust to taste. Store in the fridge until ready to use.
- Get Your Oil Heating + Mix the Dry Ingredients: At this point, you want to get your oil heating up since it can take a bit. Add about 1 inch of vegetable oil to a sturdy pan or dutch oven and let it heat up over medium heat. Keep an eye on the temp - we're frying our chicken at 350 degrees. I don't recommend making this recipe without a thermometer like this one to check the oil temp. Any hotter, it'll burn, and any colder, it won't fry up nicely. Whisk together the dry mix ingredients in a large shallow bowl. Set a cooling rack over a baking sheet and line the cooling rack with a few paper towels. This is where you'll place the fried chicken pieces as they come out of the oil to cool a bit + to drain.
- Dredge + Fry the Chicken: Coat each piece of chicken in the dry mix, flipping each piece over and back a few times to make sure it's well coated. Set these on a clean plate while you check the oil temp - remember, 350 is the magic number! (It helps if they rest for a few minutes before you begin frying. You can do a few pieces at a time, and then while you're waiting for each batch of 2-3 pieces to fry, you can be dredging the next few pieces). I always fry a smaller piece first as a test piece. If the oil is too hot, the skin on the outside will burn and you'll know to turn the heat down. Once the heat is right, add 2-3 pieces of chicken. Note that each time you add something to hot oil, it will reduce the temperature, so keep an eye on it and adjust as needed. It sounds complicated and scary but I promise you'll get the hang of it! Fry the chicken for about 2 minutes on each side, or until golden brown, and then flip it over. Cook another 2 minutes or so on that side, or until golden

- In a medium size bowl, stir together 2 tablespoons of olive oil, lime juice, lime zest, honey, chipotle chili and garlic powders, cumin, cilantro and salt until well combined. Reserve 1/3 cup of the marinade.
