These Pan Fried Bananas are caramelized in honey and cinnamon for a simple and delicious treat!

2 ripe bananas
1 tbsp oil or butter*
2 tbsp honey
1/2 tsp ground cinnamon
1/8 tsp salt
On Whole Wheat Pancakes
With Homemade Vanilla Ice Cream
As a topping for Fruit Pizza
In a sandwich with peanut butter and marshmallow creme

Steps:

  • Remove the peels from the bananas and slice them 1/2" inch thick.
  • Set a nonstick skillet over medium to medium high heat** and add the oil or butter, honey, cinnamon, and salt. Stir to combine.
  • Add the banana slices, and fry for 2-3 minutes on each side, until golden and caramelized. Be sure to watch the heat and turn it down if it browns too quickly. You want enough heat to caramelize and brown the slices, but you don't want them to burn.
  • Once the bananas are cooked you can enjoy them as is, or with marshmallow creme and peanut butter in a sandwich, with Bananas Foster French Toast, in oatmeal or yogurt, over ice cream, and more. Enjoy!

I discovered I had plenty of bananas on hand, so I "fancied" them up and baked them. It was a big hit!   • Place the bananas in a greased 1-qt. baking dish. Combine the butter, honey and lemon juice; drizzle over bananas. Bake, uncovered, at 350° for 10-12 minutes or until heated through. Sprinkle each serving with coconut and pecans; top with a dollop of whipped topping.

3/4 cup honey
2 large eggs
1 cup mashed ripe banana
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans, toasted

Steps:

  • Beat butter at medium speed with mixer in a large mixing bowl; add honey, beating well. Add eggs, one at a time, beating after each addition, add the banana and mix well.
  • Combine flour, soda, and salt; stir in pecans. Add to the butter mixture, stirring just until the dry ingredients are moistened.
  • Spoon batter into a lightly greased and floured 9 x 5-inch loaf pan.

You could use toasted white bread, but I have found that the combo spread on whole wheat bread or pumpernickel is WONDERFUL! It also gives a bit more nutritious value to what you're eating. I don't normally toast the wheat bread for these little treats, but you could. It's also a great recipe to serve to younger tea party guests.
