Steps:
- Preheat the oven to 350 degrees F.
- Sift the flour, sugar, cocoa, baking soda, and salt into an ungreased 8X8 glass baking dish.
- Make 3 depressions in the dry ingredients.
- Pour oil into one, vinegar into one, and vanilla into one.
- Pour water over all and mix thoroughly with a fork to moisten all dry ingredients.
- Bake for 30 minutes, or until a toothpick comes out clean.
- sprinkle with powdered sugar or ice.

- Preheat the oven to 350°F [177°C].Spray an 8x8 pan (or 9x9) with cooking spray.
- Sift flour, sugar, cocoa, baking soda, and salt together directly into the pan.
- Flatten the sifted dry ingredients and form three depressions in the top - one large and two small.
- Pour oil into the large depression, vanilla into the second depression, and vinegar into the third.Pour water over the whole thing.
- Stir with spoon or fork until thoroughly mixed. Be sure to check the corners.The cake batter will produce bubbles on the top of the cake.
- Gently tamp the cake pan on the countertop once or twice to release gas. Bake at 350°F | 177°C for 25-30 minutes, until the top springs back when touched.Remove cake from the oven and allow cake to cool on rack.
- Wacky Cake can be served as is, or with a sprinkling of powdered sugar, or iced with your favorite frosting.

- Preheat Oven to 350°Melt Chocolate and shortening in microwavable container. 2 minutes on medium power.
- Break into liquid measuring cup, 1 egg. Fill to 1 cup level, sour cream. Approximately 1 cup.
- In Small bowl, measure flour, salt, soda, sugar and blend well --

It's an ideal snacking cake, or you could gussy it up with a simple ganache frosting.

- Heat oven to 325 degrees. Add the flour, sugar, cocoa powder, baking soda and salt to an 8-by-8-inch square glass or metal baking dish. Whisk the mixture together until uniform in color. Use your fingers to break apart any lumps.
- Add 1 cup water along with the oil, vanilla extract and vinegar. Stir slowly with a fork or a whisk in small circles to blend. Mash, scrape and stir with a fork and spoon until the mixture becomes a smooth and uniform batter.
- Scrape the sides of the baking dish with a rubber spatula and spread the batter in an even layer. Sprinkle with chocolate chips, if using.
- Use a damp paper towel to wipe the edges of the baking dish clean. Carefully transfer the dish to the oven and bake until a toothpick inserted into the center of the batter comes out mostly clean, 28 to 33 minutes. (Instead of looking like you dipped the toothpick in chocolate frosting, it should look like it has some chocolate cake crumbs clinging to it.)
- Remove from the oven, let cool, then cut the cake into squares. If you're feeling fancy, this tastes good (and looks pretty) with some confectioners' sugar dusted on top.

ONE PAN CHOCOLATE SNACK CAKE
This is a recipe my mother made when we were children. It was so moist it never needed frosting. Mom would use a paper doily to make a pretty powdered sugar design on the top. I have found a couple online, but they just were not as good.

- Preheat oven to 350 degrees.
- Thoroughly mix dry ingredients in an ungreased 8 x 11" pan. Make 3 wells in the dry mixture and pour the vegetable oil in one, the vanilla in a different one and the vinegar in the last one. Pour the cold water over all and stir with fork until well blended.

This is that same cake that everyone seemed to make back in the '70's. Pillsbury discontinued their line of dry frosting mixes, and came up with their own revised version, which was NOT the same. I was thrilled to find this version in a food column from the "Minneapolis Star Tribune."

Steps:
- Preheat oven to 350 degrees.
- Grease and flour a 10 inch Bundt pan.
- Measure 3/4 cup of the frosting mix for the chocolate glaze.
- Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the remaining frosting mix and flour, mixing just until incorporated.
- Fold in the nuts.
- Pour batter into prepared pan.
- Bake in the preheated oven for 60 minutes.
- The top of the cake will form a brownie like crust before it is done.
- Allow to cool for 60 minutes in the pan, then cool completely on a wire rack before glazing.
- To make the chocolate glaze; Mix together reserved 3/4 cup frosting mix and 2 tablespoons boiling water, stirring until smooth.
- Thin with additional boiling water if necessary to reach desired consistency.
- Spoon glaze over the cooled cake.
