Fig Cobbler. When Figs are in season you simply have to make a cobbler! This is a delicious recipe and lovely served warm or chilled with some ice cream or a blob of whipped cream!

1 cup all purpose flour
1 cup regular sugar
1 cup milk
1 stick (115 g) butter
2 cups of figs chopped

Steps:

  • Chop the figs about 3 hours before making the cobbler and put 1/2 cup sugar on them and cover them in the fridge.
  • Melt the stick of butter in the bottom of a 6-8 inch baking dish, mix flour, sugar, and milk, pour into the melted butter dish, then add the figs and stir it all up in the dish.
  • Bake at 350 F until it just starts to brown. Approximately 30 to 40 minutes.
  • Serve warm with some ice cream or eat just as it is.

I love fig preserves from my tree, but I haven't run across a lot of recipes for using the preserves on this website. So I am submitting one of my family's favorites. This one is quick and easy, yet so yummy. You can substitute any fruit preserves or jam or fresh fruits boiled down in sugar to make a syrup base. Serve with vanilla ice cream or whipped topping.

¼ cup butter
1 cup all-purpose flour
1 cup white sugar
2 teaspoons baking powder
1 cup milk
1 large egg
1 teaspoon vanilla extract
22 ounces fig preserves

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place butter in a baking dish; melt butter in the preheated oven, about 5 minutes.
  • Mix flour, sugar, and baking powder together in a bowl; add milk, egg, and vanilla extract. Stir until smooth; pour into the melted butter. Spoon fig preserves evenly over the batter.
  • Bake in the preheated oven for 20 minutes. Cover with aluminum foil; bake until bubbling and lightly browned, 20 more minutes.

5 -6 cups peeled fresh figs
3/4 cup sugar
3 tablespoons all-purpose flour
butter or margarine
9-inch pie pastry

Steps:

  • Add the figs, sugar, and flour to a mixing bowl; mix to combine.
  • Spoon mixture into an 8-inch square baking pan; dot with butter.
  • Roll out pastry to 1/4 inch thickness on a lightly floured surface; cut into 9 x 1/2 inch strips; arrange strips of pastry in a lattice pattern.
  • Trim edges as needed.
  • Bake in a 375° oven fpr 45 minutes or until golden brown.

1 cup vegetable oil or 1 cup butter
1 teaspoon baking sod
1 teaspoon baking powder
1/2 teaspoon ginger
1 1/2 teaspoons cinnamon
3 cups flour
2 eggs
Dash salt
1 pint fig preserves, mashed
1 cup boiling water
1 cup chopped pecans

Steps:

  • Combine all ingredients and mix well if using oil. If using butter, cream with sugar before adding remaining ingredients; beat well.
  • Pour into well greased and floured 12-inch tube pan; bake at 325 degrees for 1 1/2 hours or until cake tester inserted in center comes out clean.
  • Cool in pan; run knife around sides and turn out.
