1 clove garlic, minced
1 large red pepper, cut into thin strips

1 lemon, cut in half, divided

2 cups hot cooked angel hair pasta

Steps:

  • Heat oil in large nonstick skillet on medium heat. Add chicken and garlic; cook and stir 4 to 5 min. or until chicken is evenly browned. Add peppers; cook 3 to 4 min. or until chicken is done, stirring frequently.
  • Stir in pasta sauce and juice from 1 lemon half; top with cheese. Cover; cook on low heat 2 to 3 min. or until cheese is melted. Spoon over pasta.
  • Serve with remaining lemon half, cut into wedges.

Steps:

  • Saute garlic in butter and olive oil until fragrant. Cook pasta while sauce cooks, according to package directions.
  • Add chicken, whipping cream, salt, and pepper (to taste).
  • Let sauce simmer until slightly thickened, about 5 minutes.
  • Add pesto and parmesan. Stir until creamy and thickened.
  • Pour pasta, sprinkle desired amount of parmesan over dish.

1 pound penne pasta
1/4 cup pine nuts, toasted
2 pints cherry tomatoes, halved
3 cloves garlic, minced
1 teaspoon red pepper flakes, or to taste
1/2 cup basil leaves, torn

1/3 cup grated Parmesan, optional

Steps:

  • Cook the pasta in rapidly boiling water until al dente. Just before draining the pasta, reserve 1 cup of the water.
  • In a medium saute pan over medium high heat, toast the pine nuts until fragrant and golden, about 2 to 3 minutes, set aside. Place pan back on the heat over medium-high heat. Add the tomatoes and 1/2 cup of the pasta water. Add the garlic and the red pepper flakes. If the sauce is too dry, add the remaining pasta water. Add the basil to the pan. Saute until just wilted. Remove the sauce from the heat.
  • Place the pasta in a large bowl. Season the pasta with salt. Top the pasta with the tomato sauce. Sprinkle the toasted pine nuts over the pasta and cheese (if using). Toss to combine, taste and adjust seasonings, serve immediately.

One-pan chicken pesto and vegetables makes the perfect weeknight meal in 20 minutes! I recommend homemade pesto for this recipe, but you can totally use store-bought pesto for a shortcut if you need to.

1.5 lb chicken breast cutlets
Salt and Pepper
Extra virgin olive oil
1 zucchini (cut into half moons)
1 red bell pepper (cored and cut into strips)
½ red onion (sliced)
1 cup about 5 oz grape tomatoes
1/3 cup basil pesto ((homemade or store-bought) )
1/3 cup cream
Juice of ½ lemon
Zest of 1 lemon
Toasted pine nuts for garnish (optional)
Fresh basil for garnish (optional)

Steps:

  • Pat chicken breast cutlets dry and season with salt and pepper on both sides. (Boneless skinless chicken breasts can be used, simply cut them in half horizontally so that you have thinner pieces. Watch the video to see how I do this).
  • In large cast iron skillet, heat a little bit of extra virgin olive oil (about 2 tbsp) until shimmering but not smoking in a cast iron skillet. Add chicken to the heated skillet and cook over medium-high heat for 2 to 3 minutes on each side, turning over once. Remove from the skillet and set aside for now.
  • If needed, add a little bit more extra virgin olive oil to the skillet. Add zucchini, bell peppers, onion, and grape tomatoes. Season with kosher salt and black pepper. Cook for 6 to 7 minutes or so, tossing occasionally, until the veggies have softened.
  • In a small bowl or glass measuring cup, mix together the basil pesto and cream.
  • Add the chicken back to the skillet. Pour the pesto and cream mixture in. Reduce the heat to medium-low and cook for a minute or so.
  • Remove the skillet from the heat, add lemon juice and lemon zest. Add pine nuts and fresh basil for garnish. Serve hot with your favorite grain or plain orzo pasta.

1 medium red bell pepper
1 medium yellow bell pepper
1 thinly sliced yellow onion
1/2 pound asparagus, trimmed

4 teaspoons chopped sun-dried tomatoes (packed in oil), drained
3/4 cup Pesto Genovese, Cilantro Pesto, or Spinach Basil Pesto, divided - see Note

1 pound linguine, tagliatelle or pappardelle

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • In the mean time, core, seed and slice the bell peppers into thin strips and cut into 1-inch pieces. Cut the asparagus into 1-inch pieces.
  • In a large skillet, heat the olive oil until hot and sauté the peppers, onions and asparagus over medium-high heat until softened but still crisp, about 10 minutes.
  • Transfer cooked vegetables to a large mixing bowl and add the chicken and sun-dried tomatoes. Toss with 1/2 cup of the pesto and 2 tablespoons of the Parmesan cheese. Season with salt and pepper to taste.
  • Once the water boils, cook the pasta in the boiling water until al dente (per package instructions). Drain, return to the pot and toss with the remaining pesto and 2 tablespoons of the Parmesan cheese. Season with salt and pepper to taste.
  • Mound the cooked pasta on a large serving dish (or 4 individual serving plates) and top with the chicken and vegetable mixture. Sprinkle with the remaining 2 tablespoons Parmesan cheese (or more to taste). Serve immediately.

2 x 200 g skinless free-range chicken breasts
1 teaspoon fennel seeds
2 sprigs of fresh rosemary
2 tablespoons rapeseed oil
4-5 cloves of garlic
1-2 fresh red chillies
8 ripe cherry tomatoes
PASTA & PESTO
250 g green beans
1 big bunch of fresh basil
50 g blanched almonds
50 g Parmesan cheese, plus extra to serve
2 tablespoons extra virgin olive oil
1 lemon
1 clove of garlic
300 g fresh lasagne sheets
200 g baby spinach

  • Ingredients out • Kettle boiled • Large frying pan, high heat • Large lidded casserole pan, high heat • Food processor (bowl blade)
  • START COOKING On a large sheet of greaseproof paper, toss the chicken with sea salt, black pepper, fennel seeds and the rosemary leaves. Fold over the paper, then bash and flatten the chicken to 1.5cm thick with a rolling pin.
  • Put the chicken into the frying pan with the rapeseed oil, the bashed unpeeled garlic cloves and halved chillies, turning after about 3 or 4 minutes, until golden and cooked through.
  • Line the beans up and cut off the stalks, put into the casserole pan, cover with boiling salted water and cook for 6 minutes with the lid on.
  • Pick a few basil leaves for garnish, then rip off the stalks and put the rest of the bunch into the processor with the almonds, Parmesan, extra virgin olive oil and lemon juice.
  • Squash in the unpeeled garlic through a garlic crusher. Blitz until smooth, adding a ladle or two of cooking water from the beans to loosen, then season to taste.
  • Slice the lasagne sheets up into random handkerchief shapes and add to the beans to cook for a couple of minutes. Halve or quarter the tomatoes, add to the chicken and give the pan a shake.
  • Stir the spinach into the pasta pan, then drain, reserving a cupful of the starchy cooking water. Return the pasta, beans and spinach to the pan, pour in the pesto from the processor and stir together, loosening with splashes of cooking water until silky.
  • Slice the chicken breasts in half and serve with the tomatoes and chilli spooned over the top. Finely grate a little extra Parmesan over the pasta, then sprinkle everything with basil leaves.

200 g pasta
6 tbsp pesto
2 garlic cloves

Steps:

  • Add the pasta to boiling water and cook according to the instructions on the package. Most types of pasta will cook through in 3-10 minutes.
  • Meanwhile, grate the garlic, and finely dice the chicken. Heat some cooking spray or vegetable oil in a frying pan, then add the chicken. Cook until the chicken has barely cooked through, then add the garlic and saute for another minute. Set the chicken aside.
  • When the pasta has finished boiling, drain off the excess water. Add the pesto, chicken and garlic, and stir to combine. Serve the chicken and pesto pasta immediately while it's still hot.

2 tablespoons olive oil
1 lb skinless chicken breast half, cut into strips
1 red bell pepper, cut into strips
4 cups small broccoli florets
3/4 cup prepared basil pesto
1/3 cup freshly grated parmesan cheese

Steps:

  • Cook the penne in a large pot of water for 8-10 minutes until tender but firm.
  • While pasta cooks, heat oil in a large skillet over medium high heat. Add chicken and pepper strips and cook for 3-5 minutes.
  • Set aside.
  • Place the broccoli florets in a colander and drain the pasta over it. Place the pasta and broccoli back into the large pot.
  • Add the chicken mixture, pesto and parmesan cheese. Stir to combine.

1 medium onion, diced
4 slices bacon, diced
1 clove garlic, crushed
400 g chicken thigh fillets, cut into bite-sized pieces
200 g mushrooms, sliced
100 ml dry white wine
100 ml chicken stock
1 (175 g) jar sun-dried tomato pesto (or similar)
1 (300 ml) container light cream
50 g shredded parmesan cheese
1/4 cup green onion top
500 g pasta (of your choice-I prefer Penne)

Steps:

  • Saute the onion and bacon until the onion is soft (about 5 minutes).
  • Add the garlic and cook another couple of minutes.
  • Add the chicken and mushrooms and cook until the chicken turns white.
  • (about 10 minutes), stirring frequently.
  • Add the white wine and allow to cook to reduce for a couple of minutes, then add the stock.
  • Add the pesto and the crean and cook until heated through.
  • Add the Parmesan and stir through along with the green onion tops.
  • Serve over the cooked pasta and offer extra Parmesan cheese.

1 lbs Chicken, boneless thigh or breast, small diced
1/2 lbs Pasta, tubular pasta such as penne or farfalle
1 Zucchini, diced to half moons
1 Cup Cherry Tomatoes
1/4 Bunch Fresh Herbs, such as parsley or basil, optional, for serving.
1 tbsp Cooking Oil
1 tsp Garlic, 1-2 cloves, minced
1/2 tsp Salt and Black Pepper, half and half
1/2 Cup Basil Pesto, to make fresh, check recipe link in notes.
1/2 Cup Cream, half and half
1/2 tsp Chili Flakes
1 tbsp Lemon, juice
1/3 Cup Parmesan Cheese, grated
1/4 Cup Water, use Chicken Stock for more flavor

Steps:

  • Bring pot of water to rolling boil. Season with salt. Add pasta and cook boiling until pasta is al-dente (about 10-12 minutes) For best results, check pasta package for al-dente cooking time.
  • Heat oil in a large heavy bottom skillet to medium-high heat. Add garlic and chili flakes. Cook stirring often for 20-30 seconds or until garlic is fragrant. Don't let garlic burn. Add diced chicken. Sprinkle generous pinch of salt on chicken before stirring. Stir cook chicken for 2-3 minutes or until chicken is no longer pink and develops some color. Transfer chicken to a plate.
  • In, now empty, same pan on medium heat, add basil pesto. You don't need more oil since pesto has oil in it. Cook pesto for 30 seconds to 1 minute or until it is fragrant. Add cream half and half, water (or stock if using). Bring to boil then lower heat to medium. Mix in half of the parmesan cheese. Add chicken back into the sauce with cherry tomatoes and zucchini. Cook for 3-5 minutes or until Pesto Sauce thickens and chicken is fully cooked. Once sauce thickens, mix in lemon juice and salt. Taste and adjust salt and black pepper.
  • Add cooked and drained pasta to chicken with pesto. Sprinkle remaining parmesan cheese on the top of pasta. Now, coat the pasta in the sauce. Add 2-3 tbsp of the chopped fresh herb of your choice. Serve Chicken Pesto Pasta while still hot. Enjoy.

If you want to make a one dish meal out of this, toss in a 10 ounce bag of thawed frozen vegetables. I used homemade stock as well, but canned will work fine.

3/4 lb chicken (cooked)
4 tablespoons pesto sauce (homemade or bottled)
4 tablespoons butter
4 tablespoons flour
3 cups chicken stock
1 chicken bouillon cube
salt
pepper
1 teaspoon lemon juice
1/2 cup parmesan cheese, grated

Steps:

  • In a large pot of boiling salted water, cook the pasta to just short of al dente.
  • Drain the pasta, and place in a large mixing bowl.
  • Add the chopped chicken and pesto to the bowl, and stir to coat.
  • If adding vegetables, add them to the bowl now.
  • Preheat the oven to 350°F.
  • Spray a 9x13 baking dish with cooking spray.
  • In a medium saucepan, melt the butter over medium heat.
  • Add the flour, and whisk to form a roux.
  • Cook for 2-3 minutes.
  • Slowly whisk the stock into the roux.
  • Bring to a boil, and contiue to whisk until the sauce is slightly thickened.
  • Crumble the boullion cube, and add to the sauce.
  • Stir in the lemon juice.
  • Taste the sauce for seasoning, and add salt or pepper as needed.
  • Add the sauce to the chicken and pasta mixture.
  • Stir to combine well, then place the mixture in the prebared baking dish.
  • Top with the grated cheese.
  • If making ahead, cover at this point and chill until needed.
  • Bake at 350F for 20-25 minutes, or until the sauce is bubbly and the top is golden. If made ahead, the baking time may need to be increased.

1/4 cup sun-dried tomatoes (, drained of most oil, chopped)

1 cup milk

Steps:

1 pound DeLallo Whole Wheat Pasta
1 6.35 ounce jar DeLallo Simply Pesto (Traditional Pesto flavor)
1 cup nonfat plain Greek yogurt
1 (10-ounce) package frozen spinach (thawed with as much of the liquid squeezed out as possible.)
2 pints cherry tomatoes
1/4 teaspoon red pepper flakes
1 cup shredded part-skim mozzarella cheese (or a blend of mozzarella and provolone)
¼ cup tightly packed fresh basil leaves (roughly chopped, divided)

  • Preheat the oven to 375 degrees F. Lightly coat a 9x13-inch baking dish with nonstick spray.
  • In a large skillet, heat the olive oil over medium high. Once the oil is hot and shimmering, add the diced chicken. Sprinkle with salt and pepper. Sauté the chicken until golden on all sides and fully cooked through, about 4 minutes. Remove to a plate and set aside.
  • In a large stockpot of boiling, generously salted water, cook the pasta to al dente according to package instructions. Reserve 1 cup of the pasta cooking liquid, then drain. Return pasta to the stockpot.
  • While the pasta cooks, in a small bowl, whisk together the pesto and Greek yogurt until evenly combined.
  • Stir in the spinach, breaking it up as needed and stirring until evenly combined.
  • To the stockpot with the pasta, add the pesto/Greek yogurt mixture. Gently stir to coat the noodles in the pesto mixture. If the sauce is too thick, splash in some of the pasta water. It should be a little saucy.
  • Add the cooked chicken, cherry tomatoes, and red pepper flakes. Gently toss to combine.
  • Pour half of the pasta into the prepared baking dish. Sprinkle evenly with 1/2 cup mozzarella and half of the basil. Layer the remaining half of the pasta over the top, spreading it into an even layer. Sprinkle with the remaining 1/2 cup mozzarella.

  • Cook the pasta according to the packet intructions.
  • Meanwhile, heat the oil in a large pan. Cook the chicken for 3-4 minutes until well-browned. Add the bacon ( i suppose you could add some sliced mushrooms or something here aswell, or use all mushrooms if cooking this for veggies) and fry until starting to crisp.
  • Take the pan of the heat, then stir in the creme fraiche. Return the pan to the heat and stir in the pesto. Simmer for another 1-2 minutes until the chicken is properly cooked through. Season to taste.
  • Once cooked, drain the pasta well and add it to the pan. Mix well so the sauce coats the pasta.
  • Decant into a big bowl and scatter over parsley and parmesan cheese. Serve!

2 chicken breasts, approx. 120g/4½oz each
6-8 tbsp olive oil, plus extra for drizzling
1 onion, peeled and cut in half (optional)
1 carrot (optional)
1 garlic clove
1 tbsp pine nuts
45 basil leaves
20g/¾oz pecorino, grated
20g/¾oz Parmesan, grated
450g/1lb dried pasta
salt, to season

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7.
  • Drizzle the chicken breasts with olive oil, season and wrap in kitchen foil. Bake in the oven for around 15-16 minutes until cooked through. (Note that if the chicken breast is larger than specified, it may take longer to cook. A 150-200g/5½-7oz skinless chicken breast fillet will need 16-18 minutes; a 200-250g/7-9oz one 18-20 minutes; and a 250-300g/9-10½ one 20-22 minutes. If cooking more than four breasts at a time, increase the cooking time by 5 minutes, and don't forget to check that each breast is cooked through.) Alternatively you can poach the chicken - place the chicken in a pan along with the peeled onion and carrot and cover with 2.5cm/1in cold water. Bring to a simmer, add a good pinch of salt and poach for 10-15 minutes, with a lid on, until the chicken is completely cooked.
  • While the chicken is cooking, make the pesto. If you are using a pestle and mortar, start by pounding the garlic and salt to a rough paste, then add the pine nuts, then basil, then oil, and pound to a consistency you like. Stir in the cheese to finish. If you are working in a food processor you can blend the garlic, salt, pine nuts, basil and oil all together, and once you have a consistency you like, stir in the cheese.
