FLAXSEED BREAD

- In a large bowl, combine the whole wheat flour, 1 cup all-purpose flour, yeast and salt. In a large saucepan, heat the milk, brown sugar, honey and 2 tablespoons butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in ground and whole flaxseed until blended. Stir in enough remaining all-purpose flour to form a firm dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a large bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface. Shape into a loaf; place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack. Melt remaining butter; brush over bread. Cool.

- In a large bowl, dissolve yeast in warm milk. Add honey, butter, salt and 5 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured board; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down and shape into 2 loaves. Place in greased 9x5-in. loaf pans. - Preheat the oven to 350F and grease an 8″ x 4″ metal loaf pan.
- In a large bowl, beat the oil and sugar until combined.
- Add the eggs and milk and whisk to get a pale yellow liquid mixture.
- In a medium bowl, whisk the gluten-free all-purpose flour, flaxseed meal, baking powder, salt, and cinnamon to combine.
- Sift the dry ingredients into the bowl with the wet ingredients and mix well to get a homogeneous batter (the batter will be rather liquid).
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 55 minutes until the loaf is golden brown on top and a toothpick inserted in the middle comes out clean.
- Allow the loaf to cool for at least 5 minutes in the pan before removing it and then cooling it completely on a wire rack before slicing.

- Add the ingredients in the order listed and sprinkle the ground flax over top. I use the whole wheat, 2 lb, and light crust settings and make the bread overnight so it's fresh first thing in the morning. I have also added a 1/4 cup of sunflower seeds sprinkled over top of the flaxseed.

- Place all ingredients into bread machine in the order listed and mix on the "dough" cycle. Punch down dough after the cycle is complete and roll into a sandwich loaf and place in a well-greased bread pan. Allow dough to rise in a warm location for about 45-60 minutes, then bake at 375 degrees for 40 minutes.
- Optional - brush the dough with milk or egg wash prior to baking.
- * Note - prior to making this recipe, soak chia seeds in water to create a chia gel. I keep a fair amount of chia gel in my fridge and use about 2 tbsp of chia gel in this recipe, however food.com does not recognize Chia Gel as an ingredient.

- The easy way: Throw it all into a bread machine and select dough. When finished proceed to step 9.
- The hard way: Dissolve yeast in warm water.
- In a large bowl, combine butter, molasses, honey and salt and mix well.
- Add yeast mixture and then gradually add flours.
- Turn onto floured surface and knead until smooth.
- Place in buttered bowl and let rise until double.
- Punch down and let rest for a few minutes.
- Divide dough into 4 parts and shape into loaves.
- Place in greased pans and let rise for about an hour.
- Bake at 375* for 35 to 40 minutes.
