Honduran Mango Avocado Salsa image

My grandma came back from Honduras with some amazing snack recipes up her sleeve and I just needed this one in particular. It is great for parties and adds a very festive feel to your surroundings. It is best served alongside some tortilla chips, and I prefer yellow corn tortilla chips and if you have to use a name brand I prefer Tostitos.

Number Of Ingredients 7

1 mango, peeled and diced
2 avocados, peeled and chopped
1 tomatoes, diced into very small pieces
1/8 red onion, diced
1 red pepper, diced into very small pieces
1 dash garlic powder (optional)
1 dash lime juice (optional)

Steps:

  • Cut up the mango avocados, tomato, red onion and red pepper in to the amounts described.
  • For extra flavor, add a dash of garlic powder and/or a dash of lime juice.
  • Then when all the work is done, let it sit in the bowl for about 20 minutes or over night with a plastic wrap over it to keep its flavor.
  • After that, all you have to do is serve it with chips and enjoy!

This is an easy tropical dish that is full of flavor! I like to serve it with chips, or as a side dish. It would be easy to try slightly different versions by adding lime juice, ginger, pineapple, or jalapenos, depending on your personal taste. 1 mango, peeled and chopped
1 red pepper, diced
1 tomatoes, diced
2 avocados, peeled and chopped
1/4 red onion, diced
1 dash garlic salt (optional)

Steps:

  • Combine all ingredients in a medium size bowl.
  • Cover and chill for 20-30 minutes.
  • Enjoy!

This is a light, refreshing salsa to serve with fish or chicken. It can stay good overnight one night, but that's about its limit. I rarely have to worry about leftovers, if there is any someone eats it as a salad.

1 ripe mango
1 -2 firm ripe avocado
1 small red onion
1 large red bell pepper
1 -2 clove garlic
1 inch fresh ginger
1 jalapenos or 1 serrano chili
lime juice
salt and pepper

Steps:

  • Peel and stone the mango and avocados.
  • Dice into small cubes (1/4 inch).
  • Peel and clean the onion, bell pepper, garlic, ginger and chile.
  • Cut any large items into small chunks.
  • Place all ingredients escept the mango, avocado and lime juice in a food processor and pulse until very finely minced.
  • Scrape into a bowl.
  • Gently stir in the mango and avocado.
  • Sprinkle with lime juice, salt and pepper and toss lightly to combine.
  • Serve immediately or cover tightly and chill for a couple of hours.
  • Serve with fish, chicken or pork.

1 slightly green mango, peeled,pitted and finely diced
1 large avocado, pitted,peeled and finely diced
1/2 red onion, finely chopped
1 red chile, seeded finely chopped (or leave seeds in for hotter flavor)
1 tablespoon fresh lime juice
1 tablespoon red wine vinegar
2 tablespoons lite olive oil (or virgin)
2 tablespoons of fresh mint, finely chopped
salt
denzil hot sauce (or Tabasco or Peri-Peri)

Steps:

  • Combine mango, avocado, onion, chili, lime juice, vinegar, oil& mint.
  • Add salt& hot sauce to taste (do a bit at a time of the hot sauce).
  • Cover and let stand, at room temperature, for at least 30 minutes to allow the flavors to meld.
  • Serve chilled or at room temperature (I like mine well chilled).

A few years ago I was looking through a mini Kraft cookbook and came across this recipe - everytime I make it I'm asked for the recipe! It is refreshing and very tasty. It's excellent with corn chips, but I think it would go nicely on some grilled chicken or fish, too.

1 avocado, chopped
1 tablespoon chopped fresh cilantro
1/2 red onion, finely diced
1/4 cup Italian dressing

Steps:

  • Mix all ingredients together into a small bowl.
  • Let stand in refrigerator 4 hours, or overnight for flavors to mix.
  • To prevent avocado from browning, cover with plastic wrap directly touching salsa.
