The prep time is nothing. The long haul comes with all the cooking, rinsing and cooking again and again. I filled my quart jars 1/2 full with the hominy, as it does tend to expand during the processing. Make sure you read the box on how to handle the lye safely.

2 quarts dry field corn
8 quarts water
2 ounces lye
salt

Steps:

  • Place corn in an enameled pan; add water and lye.
  • Boil vigorously for 30 minutes.
  • Let stand for 20 minutes.
  • Rinse off lye with several hot water rinses.
  • Follow with cold water rinses to cool for handling.
  • Work hominy with hands until dark tips of kernels are removed.
  • This may take awhile.
  • Separate the tips from the corn by floating them off.
  • Add water to cover hominy about 1 inch and boil 5 minutes; change water.
  • Repeat this step 4 times.
  • Add water and cook until kernels are soft (30 to 45 minutes) and drain; saving this hot water you drain off.
  • Pack hominy into sterile jars about 1/2 full.
  • Add 1 teaspoon salt to each quart jar.
  • Fill to within 1/2 inch of top of jar with water in which the corn was last cooked in or boiling water.
  • Put on cap, screw band firmly tight.
  • Process: using 10 pounds of pressure.
  • Pints for 60 minutes.
  • Quarts for 70 minutes.
  • I used quart jars and only filled them half full with the hominy.
  • Because during the processing, the hominy will expand.

HOMINY-JALAPENO CORNBREAD

1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
Kosher salt
1 egg
1 cup milk
1 cup sour cream or plain Greek yogurt
2 tablespoons unsalted butter, melted
1/2 cup canned hominy, drained
1/2 cup pickled or roasted peppers, drained and chopped
1/2 cup walnuts, chopped
1 jalapeno pepper, minced

Steps:

  • Preheat the oven to 400 degrees F. Coat a 9-inch-square baking dish or a 9-inch cast-iron skillet with cooking spray. Whisk the cornmeal, flour, sugar, baking powder, baking soda and 1/4 teaspoon salt in a large bowl. In a separate bowl, whisk the egg, milk, sour cream and melted butter; whisk into the dry ingredients until combined. Fold in the hominy, pickled peppers, walnuts and jalapeno.
  • Pour the batter into the prepared dish or skillet. Bake until the cornbread springs back when pressed in the center, 25 to 35 minutes. Let cool 15 minutes in the dish, then loosen the edges and slice.

HOMINY WITH POMEGRANATE AND CILANTRO

1 pound dried hominy (pozole)
One 15-ounce can black beans, drained and rinsed
2 limes, juiced and zested
2 oranges, juiced and zested
2 tablespoons good-quality gold tequila
1 teaspoon agave syrup
1/2 teaspoon ground cumin
Pinch red pepper flakes
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
1/2 cup pomegranate seeds
1/2 cup fresh cilantro leaves, torn

Steps:

  • Rinse the hominy, then place in a large bowl and cover with twice its volume of cold water. Soak overnight. Drain when ready to use.
  • In a medium saucepan over medium-high heat, add the hominy and twice its volume of water. Bring to a boil, then reduce to a simmer and cook until the hominy kernels have split open and become tender, 1 1/2 to 2 hours. Drain and set aside to cool.
  • In a medium bowl, add the lime juice and zest, orange juice and zest, tequila, agave, cumin, pepper flakes, salt and black pepper. Whisk together while adding the olive oil in a slow, steady stream.
  • Add the hominy, black beans, pomegranate seeds and cilantro to the vinaigrette and mix well. Refrigerate for 20 to 30 minutes before serving to allow the hominy and black beans to soak up some of the vinaigrette.

8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

Hominy and hominy grits are often confused. Hominy is the whole kernel of corn which has been treated with lye to remove the hulls. Grits are the finer particles or broken hominy. Grits are cooked very much like rice and is served with butter or gravy as a vegetable OR as a cereal. Leftover grits may be molded, cut into thick slices, dipped in cornmeal and fried (delicious served with sorghum, maple syrup or honey).
