TANGY CORN RELISH

2 ears corn
3 tablespoons extra-virgin olive oil
1 teaspoon ground cumin
Kosher salt and freshly ground pepper
1/2 cup chopped sweet piquante peppers
1/2 small red onion, chopped
1/4 cup finely chopped sweet gherkins
1/4 cup chopped fresh parsley
1 red jalapeno pepper, seeded and minced
1/2 teaspoon sugar
Serving suggestion: Grilled Sausage, recipe follows
1 tablespoon vegetable oil
2 pounds good-quality kielbasa or other smoked sausage, cut into bite-size pieces
3/4 cup ketchup
3/4 cup spicy brown mustard
1 tablespoon hot sauce

Steps:

  • Preheat a grill to medium-high. Brush the corn with 1 tablespoon olive oil and sprinkle with the cumin, and salt and pepper to taste. Grill until golden and toasted on all sides, 5 to 8 minutes, turning as needed.
  • Combine the remaining 2 tablespoons oil, the sweet piquante peppers, onion, gherkins, parsley, jalapeno and sugar in a large bowl and season with salt and pepper. Slice the corn kernels off the cobs and toss with the relish. Cover and refrigerate for at least 30 minutes. Serve with Grilled Sausage.
  • Soak 8 to 10 wooden skewers in water for about 20 minutes.
  • Preheat a grill to medium and brush with the oil. Thread the sausage onto the skewers, leaving space between each piece. Grill until slightly crisp, 3 to 4 minutes per side.
  • Mix the ketchup, mustard and hot sauce in a bowl. Serve with the sausage for dipping.

Enjoy this delicious and versatile relish on hamburgers, hot dogs, sandwiches, fish, served with roasted chicken, in a cheese omelet, pasta or tuna salad, sprinkled over tacos or in burritos, or mix it with black beans/tomatoes/onions/cilantro for a summer salad (just for example)!

10 fresh ears of sweet yellow corn (husks and silk removed, slice kernels off the cob with a sharp knife)
2 large red bell peppers (, cored, and finely chopped)
2 large green bell peppers (, cored and finely chopped)
8 ribs celery (, finely chopped)
1 large yellow or sweet onion (, finely chopped)
4 cups apple cider vinegar
2 cups sugar
1 tablespoon ground mustard
3 teaspoons salt
4 whole allspice berries

Steps:

  • Combine all the ingredients in a pot and bring to a boil, stirring until the sugar is dissolved. Reduce the heat to medium and simmer uncovered for about 20 minutes until the vegetables are tender.
  • Ladle the relish into hot sterilized jars and seal with lids. Process the jars in a water bath for 10 minutes.
  • Keep stored in a dark, cool place. Will keep at least one year. Once opened, store in the fridge for up to two months.Makes approximately 8 pints
  • Note: Wait a week or two before eating the relish to allow time for the vinegar to mellow out.

2 cups fresh or frozen corn
2 cups chopped onions
2 cups chopped seeded cucumbers
2 cups chopped tomatoes
1 large green pepper, chopped
1 cup sugar
1 cup cider vinegar
1-1/2 teaspoons celery seed
1-1/2 teaspoons mustard seed
1 teaspoon salt
1/2 teaspoon ground turmeric

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until thickened. Store in the refrigerator.

4 cups white vinegar
1 1/4 cups white sugar
2 tablespoons salt
8 cups corn kernels
4 cups diced green and red bell peppers
1 3/4 cups diced celery
1 cup finely chopped onion
2 tablespoons dry mustard
2 teaspoons celery seeds
2 teaspoons ground turmeric
1/4 cup water

Steps:

  • You will need 2 tablespoons of Clearjel for this recipe.
  • If using fresh corn blanch for 5 minutes.
  • If using frozen corn thaw.
  • In a large stainless steel saucepan combine the vinegar, sugar and salt.
  • Bring to a boil over medium high heat, stirring to dissolve sugar.
  • Gradually add corn, red and green peppers, celery and onion, stirring constantly to maintain the boil.
  • Stir in mustard, celery seeds and turmeric.
  • In a small bowl combine the water and Clearjel, making a paste-no lumps.
  • Stir into vegetable mixture.
  • Reduce heat and boil gently, stirring frequently until thick enough to mound on a spoon. This should take around 5 minutes.
  • Ladle hot relish inot hot jars leaving 1/2 inch headspace.
  • Remove air bubbles, wipe rim, center lid and screw down band until fingertip-tight.
  • Process in a boiling water bath canner for 15 minutes.
  • Remove canner lid letting jars stand in hot water an additional 5 minutes.
  • Remove jars, cool and store.

12 ears fresh corn
2 cups water
1 1/2 cups green pepper, chopped
1 1/2 cups roasted red pepper, chopped
1 cup onion, chopped
2 1/2 cups vinegar
1 3/4 cups sugar
4 teaspoons dry mustard
2 teaspoons black pepper
2 teaspoons pickling salt
3 tablespoons cornstarch
2 tablespoons water

Steps:

  • Cut corn from cobs. Measure out 8 cups of corn in a 10 quart Dutch oven pot. Combine corn and water. Bring to boil and reduce heat. Simmer, covered for 5 minutes. Drain corn. In same Dutch oven combine with corn, red and green peppers and onions. Stir in vinegar, sugar, mustard, salt and black pepper. Bring to a boil. Boil gently, uncovered for 5 minutes, stirring occasionally. Stir together cornstarch and 2 tablespoons water. Add this mixture to corn mixture. Cook and stir until slightly thickened and bubbly. Cook for 2 minutes more. Ladle relish into hot sterilized jars leaving 1/2-inch headspace. Remove any air bubbles. Wipe jar rims and adjust lids and rings. Process in hot boiling water canner for 15 minutes.

1 tsp vegetable oil
1 shallot , finely chopped
200 - 250g fresh corn (about 2 cobs)
1 red chilli , deseeded and finely chopped
75ml cider vinegar
25g caster sugar
½ tsp dry mustard powder
handful coriander leaves, finely chopped (optional)

Steps:

  • Heat the oil in a saucepan. Tip in the shallot and cook for 5 mins until softened. Stir in the remaining ingredients (except the coriander) with ½ tsp salt.
  • Bring to the boil, then cook for 10 mins until the corn is golden and the sauce coats the kernels. Add the coriander, if using, and leave to cool. Serve with hot dogs, burgers or pork chops.

Something different to do with fresh, in-season corn. Since this makes 2 cups, I usually make this up when I am invited to a bbq, bringing a jar as a hostess gift. It keeps in the refrigerator for 1 month. Recipe comes from Canadian Living magazine. NOTE: Prep time does not include cooling time before serving.

2 cups fresh corn kernels
1/2 cup sweet red pepper, diced
1/2 cup white onion, diced
1/3 cup cider vinegar
3 tablespoons sugar
3/4 teaspoon salt
1/2 teaspoon mustard seeds
1/4 teaspoon celery seed
1/4 teaspoon hot pepper flakes
1/4 teaspoon ground turmeric
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Combine corn, red pepper and onion together in a pot.
  • Stir in the vinegar, sugar, salt, mustard seeds, celery seeds, hot pepper flakes and turmeric.
  • Bring to a boil, stirring constantly. Lower heat, cover and simmer for 3 minutes.
  • Stir the cornstarch into 1 tablespoon cold water until dissolved. Stir this into corn mixture and cook for 1 minute until thickened.
  • Ladle into jars. Seal and let stand 30 minutes. Refrigerate until cold, about 1hr.
  • Keeps refrigerated for 1 month.

1 cup chopped green bell pepper
1 1/4 cups chopped celery
3/4 cup chopped onion
1 1/2 cups sugar
2 1/2 cups distilled white vinegar
2 cups water
1 teaspoon salt
1 teaspoon celery seed
1 1/2 teaspoons mustard seeds
1/2 teaspoon ground turmeric

Steps:

  • Cook ears of corn in boiling salted water for 4 minutes.
  • Remove and plunge in ice water-strain-and cut corn from cob-you want 10 cups.
  • Combine corn with remaining ingredients in a large pot and simmer for 20 minutes.
  • Immediately pack into clean hot pint jars, leaving 1/2 inch head space; seal.
  • Process for 15 minutes in a boiling water bath.

  • I start making a batch of corn relish by putting the husked ears of corn in the Instant Pot with about 1 cup of water and setting it for 4 minutes.
  • While the corn is cooking in the pressure cooker I chopped the other ingredients that need to go into the relish. As you know all processed canned goods need to have a water bath so I start a huge canning pot full of water to boil on the stove.
  • Next, I mix all the ingredients together and set aside. I remove the corn kernels off the cob just using a sharp kitchen knife. I’ve tried many of the other gadgets and none of them seem to work as well as just using a straight knife and taking my time.
  • When the corn kernels are off the cob I mix them with the additional ingredients and fill the sterilized mason jar’s leaving an inch of room at the top.
