- In a small saucepan, saute onion in butter until tender. Stir in the ketchup, brown sugar, vinegar, Liquid Smoke if desired and seasonings. Cook and stir until heated through. , Store in an airtight container in the refrigerator for up to 1 month. Use as a basting sauce for grilled meats.

SWEET AND SPICY BBQ SAUCE (TEXAS STYLE)

- In a medium pot, cook the bacon over medium-low heat until crispy, 8 to 10 minutes. Remove to a plate lined with a paper towel to drain, then eat the bacon as a snack.
- Add the onions to the pot with the bacon grease and cook over medium-low heat until the onions start to caramelize, 6 to 8 minutes. Add the garlic and cook another 2 minutes. Add the tomato paste and cook, stirring occasionally, another 3 minutes. Whisk in the stock, sugar, vinegar, cumin, cayenne, salt and pepper and bring to a simmer. Cook until thickened, 15 to 20 minutes.
- Let cool to room temperature before using. This sauce is great on brisket or beef ribs.

BBQ SAUCE: SWEET AND SPICY
If I have the time to make homemade BBQ sauce, this is one of several recipes that I use when I grill or oven bake. This is super quick and easy to make. Hubby really loves this on my Recipe #516009, but it is just as good when used on poultry. If you like a sweet BBQ sauce with a bit of a spicy after taste, this could be the one you want (I actually prefer the more mustard based BBQ sauces, but this makes hubby happy). I'm hoping that you enjoy this recipe, and that maybe you will try one of my other BBQ sauces in the future. *Note: I've stopped "tinkering" around with this recipe because hubby said "It's great as is, leave it alone". (I considered maybe sweating some minced onion to add along with some garlic powder, but it is just so simple and tasty now that I would hate to mess it up. Besides, those flavors are not missed). Enjoy! (*Note added: It is an extremely thin sauce, but can probably be altered to make it thicker... maybe less water or longer simmer time).

- Combine all ingredients except red pepper flakes in a small size sauce pan. Whisk while heating over a medium-low flame. Once sugar is dissolved, add in red pepper flakes. Simmer 5 minutes, whisking often.
- Once everything is incorporated, and you've adjusted the taste to your liking, let cool completely and store in an air tight jar for up to 3 weeks in the refrigerator (that's the longest it ever lasted in our house, it may stay fresh longer). If not using right away, mix sauce well, before using. (Nicely fills a recycled and cleaned, 16oz olive jar for storing in the fridge).
- *Note: While the ingredients have time to meld together in the fridge, the flavor will change a bit. Keep this in mind while tasting during the preparation. A little bit hot will get hotter -- a little bit sweet will get sweeter.

BARBECUE SAUCE
This is a great BBQ sauce that I saw get made on FoodTV, I think an Ina Garten show. I made it the same day and did a few changes, based on our preferences. This sauce is thick and rich, a little bit sweet and a little spicy. This makes a lot, make half the first time you make it, then double it the next time so that you can freeze it in batches, which is what I've done.

- In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned.

HOMEMADE SWEET AND SPICY BARBECUE SAUCE
I have made this for years, with a little tweak here and there and finally think I have it perfected. It has just enough bite from the vinegar, but a subtle sweetness too. I make quadruple batches and store it in old mayo jars in my garage fridge for quick meals. The longer you simmer it, the better it gets!

- Melt butter in a large stewpot over med-high heat.
- When the bubbling subsides add the onions all at once.
- Sprinkle with the salt and cook for 5-8 minutes, stirring often, until golden.
- Add the garlic and cook for another minute until fragrant.
- Add the syrup, molasses, vinegar and catsup. (At this point I use a hand blender to puree the onions, but this is optional).
- Bring to a boil, then reduce the heat to med-low.
- Add the remaining ingredients and continue to simmer until thick and bubbly, at least 30 minutes. The longer you simmer it, the better it will be.
SWEET AND EASY BBQ SAUCE
I have spent two years enjoying Steven Raichlen's BBQ books. The other day I blended two sauce recipes from his BBQ USA and it turned out so well, I made a quadruple batch and jarred it. It is very sweet, so you ncan certainly cut the lemon juice/lime juice down by far. I ran out of lemon juice, hence the lime juice, but think the lime helped adda nice flavor. - Heat medium sauce pan over medium high heat.
- Add chopped Bacon and cook until fat begins to render down.
- Add Onions.
- Cook and stir until Bacon and Onions are golden brown.
- Remove from heat and allow to cool while prepping the remaining ingredients.
- Combine remaining ingredients in a mixing bowl and whisk until mixed.
- Add remaining ingredients to sauce pan with Bacon and Onion.
- Heat gradually at medium to simmer.
- Simmer for about 10 minutes until thickened.
- (You can strain to remove Bacon and Onion chunks for smoother sauce).
SWEET AND SMOKY BARBEQUE SAUCE
Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

SWEET BBQ PIT SAUCE

- In a saucepan, add the dry ingredients: salt, sugar, chili powder, paprika, black pepper, garlic salt, onion powder, and light brown sugar. Mix well to break up any lumps. Add ketchup, melted butter, water, vinegar, and Worcestershire sauce. Bring sauce to a simmer over low heat. Continue to simmer, stirring the entire time until the sauce has reduced and thickened, about 15 minutes. (Keeping the heat low helps prevent the butter from separating and the sugar from burning.)
- Sauce is done when it thinly coats a spoon and has reduced by about ⅓. Cool to room temperature, stirring occasionally so it doesn't stick to the bottom. Store in a covered container in the refrigerator (keeps for months, thanks to the vinegar). Makes about 3 cups.
HOMEMADE BBQ SAUCE
I have been tweaking a couple of BBQ sauce recipes and came up with one that I am really happy with. I am putting it here for safekeeping. I guess I would describe it as sweet, spicy and slightly tangy. If you would like it to have a little more kick, you could add 1/4 teaspoon more of chili powder. Please feel free to tweak my recipe to make it your own. I look forward to your comments.
