Steps:
- Preheat your oven to 350 degrees F (175 degrees C) and line a muffin tin with paper muffin liners or coat with non-stick cooking spray.
- In a large mixing bowl, combine the dry ingredients including all-purpose flour, baking powder, salt, sugar, and cinnamon.
- Make a well in the center of the dry ingredients and add the cooled, melted butter, milk, egg, and vanilla extract.
- Mix the ingredients just enough to incorporate the dry flour into the wet ingredients.
- Add the raisin bran cereal, stir to combine. Allow the muffin batter to sit for up to 45 minutes if you want the bran flakes to take on the moisture from the batter. *These muffins are the only time I will ever argue that soggy cereal is best!
- Portion the muffin batter out into your prepared muffin tin, filling each muffin liner between 3/4 and full. Bake at 350 degrees F (175 degrees C) for 16-18 minutes, or until an inserted toothpick comes out clean.
- Remove the baked muffins and allow to cool in the muffin pan for 10 minutes. Serve warm for best results.

Steps:
- Grease the inside of the Bundt pan with some butter.
- Melt the butter in a large pot set over medium heat. Add the marshmallows and cinnamon and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in the vanilla and a pinch of salt. Add the crispy rice cereal and wheat bran cereal and stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Spoon the mixture into the prepared Bundt pan and pat down into an even layer (use the bottom of a measuring cup to help). Let sit at room temperature until firm, about 30 minutes.
- To serve, invert the Bundt pan onto a serving platter. Whisk the sugar with 1 1/4 teaspoons water in a small bowl until a smooth, thick and pourable. Drizzle the glaze over the dessert and let it harden, about 5 minutes. Cut into slices. Store in an airtight container for up to 2 days.

BAKED RAISIN BRAN (BARS)
I created these raisin bran bars in hopes of getting my family started with something healthy in the morning. Good anytime! I try not to use refined sugar so I made with splenda. You may have to adjust amount of sweetner, depend on how sweet the cereal is to start out with. I used regular splenda, not the one for baking. If using splenda for baking or splenda brown sugar, be sure to cut in half.

- Preheat your oven to 350 degrees and line two baking sheets with parchment paper or silicone baking mats.
- In a large bowl whisk together the dry ingredients. In a separate small bowl, whisk together the wet ingredients. Pour the wet ingredients into the dry ingredients and stir until everything is combined and a dough forms.
- Separate the dough in half and place one half on one prepared baking sheet and the other half of the dough on the second baking sheet. Rip off a large sheet of wax paper and lay it over top of the dough on one of your baking sheet. Using a rolling pin, roll the dough out as thin as you can by rolling on top of the wax paper. The dough is really sticky, so the wax paper keeps the dough from sticking to your rolling pin. You want your dough to be so thin that it almost becomes see through it. Once your dough is completely rolled out, slowly pull off the wax paper. I've found that the dough is still really sticky at this point so in order for me to get the wax paper off, I pull it back at a 180 degree angle.
- Repeat this process with the second half of the dough until you have two very thin layers of dough on your baking sheets.
