PRALINE LIQUEUR
Homemade praline liqueur made with fresh pecans seeped in vodka with a brown sugar simple syrup. Also can make a pecan extract for baking purposes.

Steps:
- Toast pecans in oven at 350 °F for 5 minutes. Then take out and let cool.
- In a large mason jar combine vodka, split vanilla bean, and toasted pecans. Cover and store vodka mix in a cool dark place for 3 weeks. Mix up mason jar often.
- After two weeks remove pecans and vanilla pods in a strainer. Store in cool dark place for pecan extract.
- After pecans and vanilla have seeped in vodka and strained out then you can turn pecan extract into liqueur. Combine white sugar, brown sugar and water in a medium saucepan and heat over medium heat to a boil or until all the sugar as dissolved.
- Take sugar mixture off heat and let cool completely. Add to mason jar and store in refrigerator to keep chilled for later.

Steps:
- 1. combine brown sugar, sugar, and water in a pan over medium heat until mixture starts to boil. Reduce heat and simmer 5 minutes.
- 2. Place vanilla beans and pecans in a gallon jar. Pour hot mixture into jar and let cool. Add vodka.
- 3. Cover tightly and store in a dark place at room temp for 2 weeks. Shake jar once daily.
- 4. Strain mixture and discard solids. Will make 4 1/2 cups liqueur
PRALINE PECAN FUDGE

Steps:
- Line a 9-inch Pyrex dish in aluminum foil and set aside.
- In a two quart heavy bottom pot, melt butter over medium-high heat.
- Add sugar and evaporated milk and blend well into butter.
- Bring to a rolling boil, reduce heat to simmer and cook approximately five minutes stirring constantly.
- Be careful not to scorch butter as mixture will caramelize.
- Remove from heat and using a large cooking spoon, stir in morsels, vanilla, marshmallow creme, praline liqueur and pecans, whipping constantly.
- Stir until mixture becomes creamy and slightly thickened.
- Pour into the Pyrex pan and allow to cool.
- Cut fudge into 1-inch squares and serve.
PRALINE POPCORN CRUNCH
My mom used to make this around Christmas time. I also remember submitting it to the 4-H fair and getting a blue ribbon ;-)

- Butter baking sheet and large bowl.
- Toast pecans and almonds until light brown.
- Combine popped corn and nuts in a large bowl.
- Heat sugar, butter, 1/4 cup Praline liqueur and corn syrup in a heavy 2 quart saucepan.
- Stir over medium high heat, to 275~, or until soft crack stage.
- Remove from heat, stir in 1 tbls. Praline liqueur and salt.
- Pour over the popcorn and nuts.
- Mix and spread immediately on baking sheet.
- Let stand 1 hour. Break into bite sized pieces.

- Combine pecans and 1/4 cup praline liqueur; cover and set aside overnight.
- Cream butter and gradually add sugar, beating well.
- Add vanilla; beat well.
- Add eggs and milk, beating well.
- Combine flour, baking powder and cinnamon; add to creamed mixture, stirring well.
- Stir in pecan mixture.
- Pour batter into two greased 7 1/2x3x2 inch loaf pans.
- Bake at 325°F for 55 minutes or until wooden toothpick comes out clean.
- Cool in pans 10 minutes.
- Remove from pans; place on wire racks to cool completely.
- Drizzle 1/4 cup praline liqueur evenly over each cooled loaf.
- Allow to season for 3 days before serving.

PECAN CRUSTED CHICKEN WITH PRALINE CREAM

- In heavy saucepan heat oil over medium heat.
- Combine flour and pecans and season to taste using salt, pepper, thyme and basil.
- In mixing bowl combine egg, water and milk.
- Using a wire whisk whip ingredients until well blended.
- Season eggwash with salt and pepper.
- Dip chicken in eggwash and then in pecan flour shaking off excess.
- Pan fry chicken until golden brown on both sides or approximately 7 to 10 minutes.
- Remove and keep warm.
- Drain all but 1 tablespoon of oil from skillet keeping pan drippings.
- Add pecans and saute 1 minute.
- Remove from heat and deglaze with praline liqueur.
- Return to flame being careful as liqueur will ignite.
- Add heavy whipping cream and bring to rolling boil then reduce to a simmer.
- Reduce cream to one half volume.
- Season to taste using salt and pepper.
- Place chicken breast in the center of a ten inch plate and top with 2 ounces of the praline cream.

- The crust-in a small bowl stir together the crushed cookies and pecans; stir in the melted butter until well combined.
- Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan.
- The filling-In a large bowl, combine the cream cheese, brown sugar, corn syrup, and cornstarch.
- Beat with an electric mixer until smooth.
- Add eggs and egg yolk, one at a time, beating well after each addition.
- Beat in liqueur and vanilla extract.
- Stir in pecans.
- Pour the cream cheese mixture over the crust.
- Bake at 350° for 15 minutes; lower temperature to 200° and bake for 1 hour and 10 minutes or until the center no longer looks wet or shiny.
- Remove the cake from the oven and run a knife around the inside edge of the pan.
- Turn the oven off; return the cake to the oven for an additional 1 hour.
- Chill, uncovered, overnight.
- The topping-sprinkle the pecans over the top of the cheesecake.
- In the top of a double-boiler, melt caramels.
- Stir in sour cream.
- Drizzle over pecans; chill until serving time.

- Line a baking sheet with aluminum foil.
- In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
- Drop by spoonfuls onto prepared baking sheet. Let cool completely.
