TOMATO & AVOCADO SALSA



Tomato & avocado salsa image

This doubles up as both the guacamole and the tomato salsa element of a Mexican meal

Number Of Ingredients 7

½ red onion , finely chopped
1 small red chilli , seeded and chopped
3 ripe tomatoes , chopped
juice 1 lime
1 tbsp white wine vinegar
2 avocados
small bunch coriander , chopped

Steps:

  • In a medium bowl, combine the onion, chilli, tomatoes, lime and vinegar with some seasoning and mix well. Can be made a few hours in advance and kept in the fridge. When you're ready to eat, peel, stone and chop the avocados and add them to the salsa mix along with the coriander. Serve immediately.

Serve this rich-tasting salsa with fish or chicken, or on its own with soft corn tortillas and a sprinkling of queso fresco or feta.

1 pound ripe tomatoes, finely diced
1/2 small red onion, finely diced, soaked in cold water for five minutes, drained, rinsed and dried on paper towels
1 to 3 serrano or jalapeño peppers, minced
1 ripe avocado, peeled, pitted and finely diced
2 to 3 teaspoons fresh lime juice (to taste)
1 tablespoon extra virgin olive oil
1/4 cup chopped cilantro (more to taste)
Salt, preferably kosher salt, to taste

Steps:

  • Mix together all the ingredients. Let sit for 15 minutes, in or out of the refrigerator, before serving.

Seared Tuna Steak With Avocado Salsa image

This recipe is from Eddie V's Edgewater Grill in Scottsdale, Arizona. It is the original recipe; however, I make a few slight changes to the recipe (to accomodate my personal tastes) when I make it. First, I add a little soy sauce to the vinaigrette to bring out the flavors a little more. Second, I only use 2 Tbsp. of olive oil (instead of the recommended 4 Tbsp.) because I like a chunkier vinaigrette. Third, I chop the cilantro and sprinkle it on top of the fish and salsa. Either way, it is a great recipe and worth having at least once!

1 tablespoon red bell pepper, very finely diced
1 tablespoon serrano pepper, very finely diced
1 tablespoon red onion, very finely diced
4 tablespoons rice wine vinegar
4 tablespoons olive oil
1 tablespoon sambal oelek chili paste (Asian chili sauce)
1 pinch kosher salt
2 (10 ounce) ahi tuna steaks, sushi quality
salt and pepper
1 avocado, diced into 1-inch cubes
1/2 cup fresh tomato, diced
6 fresh cilantro stems

Steps:

  • Vinaigrette:.
  • Combine red pepper, serrano pepper, red onion, vinegar, olive oil, chili sauce and kosher salt to make the vinaigrette.
  • Mix well and set aside.
  • Fish:.
  • Season tuna with salt and pepper.
  • Sear tuna on a very hot skillet with olive oil.
  • Cook to desired doneness (rare if preferable).
  • Prepare the salsa while the fish is cooking.
  • Salsa:.
  • Dice the avocado into 1" cubes.
  • Dice the tomatoes.
  • Mix the tomato and avocado together.
  • Serving Recommendation.
  • Place fish on serving dish.
  • Top with diced avocado and tomato.
  • Splash liberally with vinaigrette.
  • Garnish with cilantro.
  • Serve immediately.

  • Again, I like to add a little soy sauce to the vinaigrette to give the flavors a little more punch, I only use 2 tablespoons olive oil in the vinaigrette to make it more bulky, and I like to garnish the fish with chopped cilantro instead of sprigs.

Strips of round steak and chopped scallions are marinated with soy sauce and garlic, then quickly stir fried with sesame seeds. Add a little sesame oil to the marinade if you like that flavor. Serve with rice.

2 cloves garlic, minced
2 green onions, chopped

Seared Beef With Tomato-Avocado Salsa image

Seared beef is one of the most popular and simplest of beef preparations in Mexico. Invented in the 1940's by restauranteur Jose Loredo, the dish always features steak that has been sprinkled with lime juice and salt, then quickly seared. Leave out the chile pepper if you don't want the heat. Enjoy!

2 large plum tomatoes, seeded and chopped
1/4 cup red onion, finely chopped
1/2 cup avocado, diced
2 tablespoons fresh lime juice
1 tablespoon fresh cilantro, chopped (I omit this, not into cilantro)
3/4 teaspoon salt
1 (1 lb) beef tenderloin, trimmed
2 teaspoons extra virgin olive oil
1 pablano chili pepper, seeded and cut into thin strips (wear gloves to prevent irritation)

Steps:

  • To make the salsa, combine the tomatoes, onion, avocado, 1 tablespoon of the lime juice, cilantro, and 1/4 teaspoon of the salt in a serving bowl. Set aside.
  • Cut the beef tenderloin lengthwise (with the grain) into 4 thick slices. Place each slice between 2 sheets of plastic wrap and pound with a meat mallet to 1/4 inch thicknes. Rub the beef with the remaining lime juice and 1/2 teaspoon salt.
  • Heat the oil in a large nonstick skillet set over medium-high heat. Add the beef and cook until browned and cooked to your liking, about 3-4 minutes on each side. Transfer the beef to a plate, cover with tin foil to keep warm. Add the pablano pepper, if using, to the skillet and cook, stirring occasionally, until softened, 2-3 minutes. Place each piece of beef on a plate and top with one-fourth of the poblano pepper. Serve topped with the salsa.
