If you like pizza, here's a muffin recipe that combines many of the ingredients that make pizza taste so good.

1 can (14-1/2 ounces) diced tomatoes
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon sugar
1 teaspoon dried oregano
1/2 teaspoon salt
1 large egg
1/4 cup butter, melted
1/2 cup shredded part-skim mozzarella cheese, divided
2 tablespoons grated Parmesan cheese, divided

Steps:

  • Drain tomatoes, reserving 1/4 cup liquid. In a bowl, combine the flour, baking powder, sugar, oregano and salt. Combine the egg, butter, tomatoes and reserved juice. Stir into dry ingredients just until moistened. Stir in 1/4 cup mozzarella cheese and 1 tablespoon Parmesan cheese. , Fill greased jumbo muffin cups two-thirds full. Sprinkle with the remaining cheeses. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes before removing to a wire rack.

These pizza muffins have all the flavor of pizza, but are made with wholesome ingredients, including whole-grain flour and fresh tomato sauce, as well as minimal amounts of cheese. The best part is that they are portable and perfect for lunchboxes or picnics.

2 cups whole wheat pastry flour, white whole wheat flour, or whole spelt flour (not GF), or King Arthur Gluten-Free Multi-Purpose Flour plus 1 1/2 teaspoons xanthan gum
1 tablespoon aluminum-free baking powder
1/2 teaspoon baking soda
1 teaspoon sea salt
2 teaspoons dried oregano
2 large eggs
2 tablespoons unrefined cold-pressed extra-virgin olive oil
3/4 cup buttermilk
1 tablespoon pure Grade A or B maple syrup
1 1/4 cups marinara sauce
1/2 cup shredded mozzarella
Grated pecorino, for topping

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with unbleached parchment liners or reusable silicone liners.
  • Whisk together the flour, baking powder, baking soda, salt, and oregano in a medium bowl to combine.
  • In a large bowl, beat the eggs, olive oil, buttermilk, maple syrup, and 1 cup of the marinara sauce, and stir. Add the mozzarella and stir to combine. Slowly stir in the dry mixture until just combined. Do not overbeat.
  • Using a large ice-cream scoop, divide the batter evenly between each muffin cup. Use the remaining 1/4 cup marinara sauce to top each muffin with 1 teaspoon of sauce, then sprinkle with pecorino.
  • Bake for 20 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool for 10 minutes in the pan and then transfer to a wire rack to completely cool.

1 pound pizza dough
Nonstick cooking spray, for the muffin pan
All-purpose flour, for dusting
Olive oil, for brushing
1/2 cup pizza sauce
1 cup shredded mozzarella
Pizza toppings, as preferred

Steps:

  • Bring the pizza dough to room temperature and preheat the oven to 450 degrees F. Grease the cups of a mini muffin pan with cooking spray.
  • Roll out the dough on a lightly floured surface to a thin 12-by-18-inch rectangle and cut into 3-inch squares. Place one square of dough in each cup, making sure that the corners of the dough are sticking out. Brush the edges of the dough with olive oil.
  • Parbake the dough for 8 minutes, then remove from the oven.
  • Pour 1 teaspoon sauce in each cup and evenly distribute the cheese among the cups (you can add toppings now as well). Bake for an additional 5 minutes. Cool and serve.
  • Cook's Note: To freeze, allow to cool entirely. Place on a parchment-lined baking sheet and freeze until solid, about 1 hour. Transfer to a freezer storage bag, then label and freeze for up to 3 months. When ready to serve, place in a toaster oven or oven preheated to 300 degrees F until heated through, 8 to 10 minutes.

10 tablespoons pizza sauce (such as Ragu® Homestyle)
10 slices pepperoni
10 tablespoons shredded mozzarella cheese, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.
  • Press biscuits, one at a time, between hands to flatten. Place each flattened biscuit in a muffin cup; press into bottom and up sides of muffin cup. Set aside for biscuit to settle and slightly rise, about 5 minutes. Lightly press biscuits into cups as needed.
  • Spoon 1 tablespoon pizza sauce into each biscuit; top each with 1 slice pepperoni and 1 tablespoon mozzarella cheese.
  • Bake in the preheated oven until biscuit is lightly browned and cheese is melted, about 10 minutes. Remove each pizza from tin and place on a cooling rack, about 5 minutes.

⅓ cup mini pepperoni slice
1 cup shredded mozzarella cheese
1 cup milk, of choice
18 cherry tomatoes, or grape tomato
2 tablespoons heavy cream
2 tablespoons grated parmesan cheese
marinara sauce, for serving

Steps:

  • Preheat oven to 350°F (190°C).
  • In a medium bowl, add the pancake mix, butter, and 1 egg and mix until combined.
  • Press about 1 tablespoon of dough into a greased 12-portion muffin pan.
  • Sprinkle basil, oregano, garlic powder, pepperoni, mozzarella cheese, and tomatoes over the dough.
  • In a large measuring cup, whisk together 2 eggs, milk, and heavy cream. Pour mixture over the other ingredients in each muffin slot. Top with parmesan cheese.
  • Bake 20-25 minutes, or until golden brown.
  • Cool for 5 minutes.
  • Serve with marinara sauce for dipping.

8 tablespoons prego no-salt-added spaghetti sauce
1/8 teaspoon garlic powder
1/2 cup sliced fresh mushrooms
1/4 green bell pepper, cut in thin strips
2 ounces part-skim mozzarella cheese, shredded

Steps:

  • Split open English muffins.
  • Toast until lightly browned.
  • Layer on each muffin half: 2 tablespoons sauce with garlic powder mixed in, mushrooms, green peppers, and 1/2 ounce of cheese.
  • Place on a cookie sheet and broil in oven until lightly browned and cheese melts.
  • Serve hot.

12 rhodes frozen buttermilk biscuits or 12 southern style biscuits, thawed but still cold
1 cup pizza sauce
1 -2 cup grated mozzarella cheese
1 cup mini pepperoni
1/2 cup chopped mushroom
1 tablespoon italian seasoning

Steps:

  • Pour pizza sauce into a large bowl.
  • Cut each biscuit into 10-15 small pieces and stir into pizza sauce.

2 teaspoons olive oil
1 (16 ounce) package cold, prepared pizza dough
4 ounces provolone cheese, diced
¾ cup cooked, crumbled Italian sausage
½ cup cooked, diced sweet peppers
4 ounces mozzarella cheese, grated
½ cup prepared pizza sauce
¾ cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Generously grease a 12-cup standard muffin pan with 2 teaspoons oil.
  • Roll dough on a lightly floured surface to a thickness of 1/8 inch. Pick it up from the edges to make sure it's not stuck to the surface, then cut out twelve 4-inch circles. Reroll the dough to cut all 12 circles if necessary.
  • Place each circle into a prepared muffin cup, making sure it's centered. Press and push dough up the sides of the cups, getting close to, but not all the way up to the top. When all circles have been placed in the muffin pan, go around one more time to push and press on each one.
  • Put 1 tablespoon provolone cheese into each cup, followed by 1 tablespoon cooked sausage and 2 teaspoons cooked peppers. Lightly press on the fillings to compress, then top with 1 rounded tablespoon mozzarella cheese and 2 tablespoons pizza sauce, pushing the sauce down gently into the fillings; it's okay that the fillings will be slightly higher than the pan. Sprinkle Parmigiano-Reggiano cheese generously over top.
  • Bake in the upper center of the preheated oven until the tops are beautifully browned, 30 to 35 minutes.
  • Remove from the oven and cool in the pan for 10 to 15 minutes. Go around the edge of each muffin with a knife, then use a fork or small spatula to remove from the pan.
  • Let cool on a rack for a few minutes, then garnish with parsley and serve.

The dough turned out so fluffy and fun to work with. Pretty quick and easy, the only part that takes time is the rising process, which is about 30 minutes. All in all, you and your kids will love them, trust me!

1 1/2 teaspoons dry yeast
3 tablespoons butter, softened
1 1/2 teaspoons salt
1 cup warm water
1 tablespoon sugar
2 1/2 cups flour
1 cup pizza sauce (I prefer Onion and Garlic flavored.)
1 cup grated mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Mix the cup of warm water with the sugar and dry yeast. Let stand 10 to 14 minutes.
  • Add the butter, salt and flour. Stir well, turn out and knead until dough is smooth. Cover and allow to rise in a warm place. Punch down and allow to rise again.
  • Cut dough into small-meduim sized balls, place each ball on oiled muffin tins, punch the ball with your thumb and spread the edges of the ball around the muffin tins to make a hollow muffin cup shape. Let rise again, press the edges to make sure they stick to their muffin cup figure.
  • Bake for about 20 minutes or until slightly golden. Bring out of the oven.
  • Press top of puffed muffins with the back of a spoon to create a slight dent. Spread the sauce and cheese or any other topping you have in mind. Bake until cheese is melted. Tada!
