Homemade Rose's Lime Juice (Lime Cordial) image

Rose's Lime Juice is difficult to find and prohibitively expensive where I live. Internet to the rescue! Here's a recipe by Maria J. on Chowhound. I've posted the recipe exactly as written, but I never add the drop of food coloring. For some reason, it always turns my cordial a bright turquoise color... Use this anywhere you would use Rose's Lime Juice. We especially love our Gimlets!

24 limes
1 cup sugar (approx.)
1 drop blue food coloring (optional)

Steps:

  • Measurements are just approximate, read all instructions first to determine what you might need.
  • Wash the limes VERY thoroughly, then remove zest from ten of them using a vegetable peeler. Avoid the white, bitter pith. Set aside.
  • Squeeze enough limes to make 16 oz. (2 cups) juice. Place in a saucepan.
  • Bring the lime juice to a boil, reduce heat to medium and reduce the juice by half. Have a heatproof measuring cup on hand. When it looks close to half its former volume, pour into the cup and check. Return to the boil if necessary. Reducing it too much is better than not enough.
  • Once it's reduced by half, measure the lime juice reduction again and add an equal amount of cane sugar, by volume (ie: using the same cup to measure). That is, if it's 8 FL oz of juice, add 8 FL oz sugar. Stir to dissolve.
  • Stir in the zest and allow to steep for 15 minutes, then strain.
  • OPTIONAL: Add a very small drop of BLUE food coloring and mix well! It is supposed to turn a pale green, but I've never been successful at this. Mine always turns a bright turquoise blue. YUCK! The food color is purely for aesthetic purposes but does not affect the taste. The "real" Rose's Lime Juice uses the food coloring.
  • Pour into a sealable glass bottle and store in the refrigerator. Will keep indefinitely.
  • Note: you can make a grapefruit cordial the same way. Looks wonderful (red grapefruit), but the color vanishes in a cocktail. It tastes great by itself, or try a Paloma (tequila, grapefruit cordial, fresh lime and soda). Bottoms up....

Homemade lime cordial. Perfect to add to water or your cocktails.

6-8 limes ((they should weigh around 500 grams in total and yield 200-250ml juice))
2 teaspoons tartaric acid
2 1/2 cups caster sugar
2 cups water

Steps:

  • Juice limes. Add tartaric acid and stir to combine.
  • Use a fine grater to get zest from two of the limes.
  • Add sugar, zest and water to a saucepan. Stir over medium-high heat until the sugar dissolves and the mixture just starts to simmer. This should take about 5 minutes. Remove mixture immediately as it starts to simmer.
  • Pour sugar mixture over lime juice and leave for 15 minutes.
  • Strain mixture using a muslin cloth, pour into a bottle and place the lid on the bottle.
  • Allow to cool and store in the pantry for up to 6 months. Or pop it in the fridge to enjoy immediately.
  • Enjoy mixed with water or soda water, using 1 part cordial to 4 or 5 parts water.

Cordials can be a bit cowlick-y, sticking out here and there: kind of tart, kind of sweet, a bit bitter, and all a touch in disarray. But giving them 24 hours to mellow or cure in the refrigerator somehow brings them into harmony. This uncooked cordial requires a lot of time but none of it at the stove, and results in mind-boggling flavor: a dense, sweet syrup with a magnified fresh lime aroma and the perfect tart zip.

18 limes, room temperature, very ripe, well puffed and heavy
2 1/2 cups sugar
1 lb fresh ginger (optional)

Steps:

  • Wash limes in a sinkful of warm water, scrubbing with your hands or a vegetable brush, and let them dry them on a dish towel. Peel them with a vegetable peeler, removing as little of the underlying white pith as possible. To begin each, it's helpful to cut the polar ends off, where the stem attaches and opposite. This should produce about 140 grams of peels.
  • Cut limes in half and juice them. This should produce about 2 1/2 cups of juice.
  • In a non-reactive, coverable container, add sugar to juice and stir until fully dissolved, 3 to 5 minutes. Crush peels up in handfuls to release the oils as you add them into the juice mix. Stir a bit to initiate extraction of the oils. (If you're making a ginger version, wash the ginger, then shred it in a blender or food processor (no need to peel it), employing some of the lime juice to allow it to liquefy, and add it into the lime mixture, stirring well.) Cover and refrigerate for 12 to 24 hours. When ready, strain the cordial off from the peels in a fine mesh strainer or chinoise. Funnel cordial into covered container or cappable bottle and return to refrigerator for another day, to cure, before using. Makes roughly 1 liter.

3/4 teaspoon citric acid
Optional: 1/2 teaspoon tartaric acid
3/4 cup granulated sugar
1 1/2 cups water
2/3 cup lime juice (fresh-squeezed; about 3 large limes)
Peel of 3 limes (cut into pieces or grated)

Steps:

  • Gather the ingredients.
  • In a small bowl, stir the citric acid (and tartaric acid, if using) into the sugar.
  • In a medium saucepan, bring the water to a boil and add the sugar.
  • Stir constantly until the sugar is fully dissolved.
  • Remove the pan from the heat, add the lime juice and peel, and stir well. Place it back on the stove, reduce the temperature, and allow to simmer for 2 minutes.
  • Remove from heat, cover, and let rest until the cordial cools completely (about 1 hour).
  • Pour the mix into a well-sealed container and refrigerate overnight.
  • Strain out the lime rinds using a fine-mesh strainer.
  • Pour the cordial into a clean bottle with a tight-fitting lid and refrigerate for another day before using it. Use it in your favorite drinks and enjoy!

3/4 cup packed light brown sugar
3/4 cup roughly chopped unpeeled fresh ginger (about 3 ounces)
1 tablespoon packed lime zest (from about 2 limes)
1/4 cup lime juice (from 2 to 3 limes)

Steps:

  • In a small pot, bring 7 ounces water, sugar, and ginger to a boil. Stir to dissolve sugar. Remove from heat, add zest, and steep for 30 minutes. Strain, add lime juice, and let cool.

  • Combine lemon & lime juice, rind & sugar in a saucepan, stir over low heat until sugar dissolves.
  • Add a small bunch of mint if using & simmer the syrup for approx 10 minutes.
  • Remove from heat & pour through a sieve, allow to cool and add bitters, stir until well combined.
  • Pour into sterilised bottles & refrigerate.
