Steps:
- Dissolve sugar in 4 cups water in a pan over medium heat; boil for 10 minutes; set aside.
- Dissolve coffee granules in 1 cup water in a pan over medium heat; boil for 8 minutes.
- Combine sugar mixture and coffee mixture; cool to room temperature.
- Stir vodka and vanilla into cooled coffee mixture.
- Store in sealed, decorative bottles.

This recipe was given to me by a very nice cocktail waitress at a little neighborhood Mexican restaurant called Dave and Dar's in Denver about 25 years ago. The restaurant is long gone, but te recipe still lingers.

Steps:
- Bring sugar and water to a boil.
- Stir until sugar is completely dissolved.
- Add coffee.
- Let cool to room temperature.
- Add vanilla and grain alcohol.
- Bottle and let set for at least one week, and preferably a month or longer, before serving.
- Note: I have also had it after allowing it to age for 15 minutes, and it was still pretty good, but definitely a little rough around the edges.

- Combine the brown sugar, granulated sugar and water in a small sauce pan. Simmer for 10 to 15 minutes until sugar is dissolved.
- Remove from the heat. Stir in the coffee. Allow to cool completely.
- Pour into a large plastic container with a lid. Add the vodka, vanilla flavoring and vanilla bean.
- Cover and let stand for two to three weeks or until fully aged. Kahlua, when properly stored, can last safely for up to a few years.

HOMEMADE KAHLUA IN 20 MINUTES OR LESS
I've been making this for a long time now. It's closer to Kamora than Kahlua but for the time and cost, give it a try at least once. I think you'll be very surprised at how good it is! Sept. 2014: I discovered Kahlua is rum based so, try substituting rum for the vodka. I also realized brown sugar was white sugar with molasses added, so I now use 1 cup sugar and 1 tablespoon molasses.

- Brew up 3 cups of your favorite coffee, make it strong, preferably in a standard drip coffee maker.
- Remove from the coffee maker and add the brown sugar (or sugar/molasses combo) right in the coffee pot. It will dissolve quicker while the coffee is hot, of course. Once the sugar is dissolved, throw in a couple of ice cubes to cool it down quicker.
- Finally, add the vanilla and vodka.
- That's all there is to it. Use immediately or let it set a while. You'll have enough to fill a 750 ml bottle.

Scott Baird, the mixologist at 15 Romolo's recipe makes kahlua with more flavor, thicker and richer by adding dark rum to vodka or light rum as well as whole coffee beans before filtering. It takes a full 3 weeks so start now if its for christmas gifts :) He suggests using Pampero rum for the dark, but any good dark will do. Standing time of 3 weeks is not included

- Combine all of the ingredients in a sealable container. Shake hard to combine.
- Label with the date and let sit in a cool, dark place for three weeks. Shake or stir the mixture several times a week.
- Strain through cheesecloth or a fine mesh strainer into a clean vessel. Use like you would Kahlua or any other coffee liquor.
