Crumbled bacon and breakfast sausage mingle with potato tots, eggs and melted American cheese in this garbage bread, which is reminiscent of a breakfast sandwich or burrito. Serve it with lots of hot sauce or ketchup for early-morning tailgating or for a portable breakfast on a camping trip.

2 1/2 cups frozen potato tots
One 12-ounce package pork breakfast sausage
10 strips bacon (8 ounces)
5 large eggs
2 cups grated American cheese (6 ounces)
2 cups grated white Cheddar (6 ounces)
All-purpose flour, for dusting 1 1/2 pounds store-bought pizza dough (see Cook's Note)
Ketchup and/or hot sauce, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment and spread the potato tots on the sheet. Bake until golden brown and crisp, about 25 minutes. Transfer the baking sheet to a wire rack and let cool. Lower the oven to 400 degrees F.
  • Meanwhile, heat the sausage in a large nonstick skillet over medium heat and cook, stirring to break up the sausage, until browned and no longer pink, about 8 minutes. Transfer the sausage to paper towels with a slotted spoon to drain; discard any remaining fat. Let the sausage cool, then crumble into 1/2-inch pieces.
  • Heat the bacon in the skillet over medium heat and cook, flipping once, until browned, about 8 minutes. Using tongs, transfer the bacon to paper towels to drain; discard any remaining fat. Let the bacon cool, then crumble into 1/2-inch pieces.
  • Prepare a bowl of ice water and set aside. Cover 4 eggs by 1 inch with water in a small saucepan and bring to a boil. Cover the pan, remove from the heat and let the eggs stand for 6 minutes. Uncover and drain the eggs, then transfer to the bowl of ice water and let stand for 3 minutes. Drain and peel the eggs, then quarter each egg lengthwise.
  • Toss the American cheese and Cheddar together in a small bowl until evenly combined.
  • Roll the dough into a 20-by-14-inch rectangle on a lightly floured work surface. Starting from the shorter end, spread the cheese mixture evenly over half of the dough, leaving a 1-inch border on the sides. Scatter the sausage, bacon and potato tots evenly over the cheese. Arrange all the egg quarters, yolk up, along the short side of the rectangle. Working from this short side, tightly roll the dough up, jelly roll-style, into a log. Pinch the open seams together to seal, then tuck them underneath the log.
  • Beat the remaining egg. Transfer the log to the prepared baking sheet and brush with the egg wash. Bake until the bread is golden brown all over, about 40 minutes.
  • Let the bread cool for 10 minutes. Halve the bread lengthwise, cut each half crosswise into 4 equal pieces and serve warm with ketchup or hot sauce.

⅔ cup warm water (110 degrees F/45 degrees C)
6 egg yolks
3 eggs, room temperature
½ cup vegetable oil
¼ cup white sugar

1 egg
1 pinch salt

Steps:

  • In a large bowl, dissolve yeast in water. Stir in the yolks, 3 eggs, oil, sugar, and salt. Add about 3-1/2 cups of flour to make a sticky dough.
  • Turn dough out onto a lightly floured surface. Knead with remaining flour until smooth and elastic, about 7 minutes. Place in a well oiled bowl, and turn to oil the entire surface of the dough. Cover with a damp cloth. Place in a warm place until double in size, about 1-1/2 hours.
  • Punch down the dough, and divide into 3 pieces. Roll each piece into a rope about 12 inches long. Braid the three strands together, and seal the ends. Place the bread on a greased cookie sheet. Beat the remaining 1 egg with a pinch of salt; brush onto bread. Let the bread rise until doubled, about 45 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Brush the bread with eggwash again.
  • Bake for 40 minutes, or until golden. Cool on a wire rack.

1 1/4 cups milk (whole or lowfat)

2 toasted English muffins or 2 slices toasted bread

Steps:

  • Separate the whites and yolks of cooked eggs, dice the whites, set aside yolks.
  • Place butter in saucepan, and melt over medium heat.
  • Stir in flour, stirring constantly, until butter and flour are well blended; then cook over low heat stirring at least 2 minutes more.
  • Slowly add milk, stirring constantly and cook for 5 minutes.
  • Stirring until sauce has thickened, add salt and pepper to taste.
  • Add the diced egg white to the sauce.
  • Place toasted english muffin halves on serving plates, spoon sauce over muffins.
  • Using a fine grater, grate egg yolks over each portion.
  • Serve hot.

3 to 3 1/4 cups Gold Medal™ all-purpose flour* or Better for Bread™ bread flour
1/4 cup sugar
1 1/2 teaspoons salt
1 package regular or quick active dry yeast (2 1/4 teaspoons)
1 cup very warm water (120° to 130°)
2 tablespoons vegetable oil
1 large egg
Butter or margarine, melted, if desired

Steps:

  • In large bowl, mix 1 1/2 cups of the flour, the sugar, salt and yeast. Add warm water and oil. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Add egg; beat until smooth. Stir in enough remaining flour to make dough easy to handle.
  • Place dough on lightly floured surface. Knead about 10 minutes or until dough is smooth and springy. Grease large bowl with shortening. Place dough in bowl, turning dough to grease all sides. (At this point, dough can be refrigerated up to 24 hours.) Cover bowl loosely with plastic wrap and let rise in warm place about 1 hour or until dough has doubled in size. Dough is ready if indentation remains when touched.
  • Grease bottom and sides of 9x5-inch or 8x4-inch loaf pan with shortening or spray with cooking spray. Gently push fist into dough to deflate. Flatten dough with hands or rolling pin into 18x9-inch rectangle. Roll up tightly, beginning at 9-inch side. Pinch edge of dough into roll to seal. Pinch each end of roll to seal. Fold ends under loaf. Place loaf, seam side down, in pan. Cover loosely with plastic wrap lightly sprayed with cooking spray and let rise in warm place about 1 hour or until dough has doubled in size.
  • Move oven rack to low position so that top of pan will be in center of oven. Heat oven to 375°F. Bake 30 to 35 minutes or until loaf is deep golden brown and sounds hollow when tapped. Remove from pan to wire rack. Brush loaf with butter; cool.

Steps:

  • In a large bowl, combine 1 cup flour, sugar, salt and yeast; stir well. Combine milk and butter in a small saucepan; heat until milk is warm and butter is softened but not melted.

4 to 4-1/2 cups bread flour
1/2 cup sugar
2 packages (1/4 ounce each) active dry yeast
1-1/2 teaspoons salt
1/2 cup 2% milk
1/4 cup water
1/4 cup butter, cubed
2 large eggs, room temperature
2 raisins
2 large egg yolks
2 to 3 drops red food coloring

Steps:

  • In a large bowl, combine 2 cups flour, sugar, yeast and salt. In a small saucepan, heat milk, water and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Beat in eggs until smooth. Stir in enough remaining flour to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Shape and flatten 1 half into a beard. Place beard over face; using a sharp knife, cut deep slits to resemble hair. , Use the remaining dough for the mustache, nose, eyebrows, hat pompom and brim. Shape a portion of dough into a mustache; flatten and place on face over beard. Using sharp knife, cut slits to resemble hair. Place a small ball above mustache for nose. With scissors, cut 2 slits for eyes; insert raisins into slits. Form another small portion of dough into eyebrows; flatten and place above eyes. Roll out a narrow piece of dough to create a hat brim; position below hat. Fold tip of hat over and add dough ball for pompom. If desired, using scissors or sharp knife, cut small lines along edges of brim and pompom to resemble fur., In separate small bowls, beat each egg yolk. Add red food coloring to 1 yolk; carefully brush over hat. Brush plain yolk over remaining dough., Cover loosely with foil. Bake 15 minutes. Uncover; bake until golden brown, 10-12 minutes longer. Cool on a wire rack.

6 tablespoons honey
1 ½ tablespoons active dry yeast
6 cups bread flour, divided, or more as needed

3 tablespoons vital wheat gluten
2 tablespoons butter, softened
1 tablespoon salt

Steps:

  • Combine water, honey, and yeast in a stand mixer fitted with the dough hook. Let sit until mixture becomes foamy, about 10 minutes.
  • Pour 3 cups flour, olive oil, eggs, wheat gluten, and butter into the yeast mixture; mix on speed 2 (or low speed) in the stand mixer until flour mixture is incorporated, 2 to 3 minutes. Add salt and 3 cups flour and mix on speed 2 until flour is incorporated into the dough. If dough is pulling away from the sides of the bowl, continue mixing, 5 to 7 minutes. If dough is still sticky, add 1/4 cup flour at a time and knead for 2 minutes after each addition until dough pulls away from the sides of the bowl; mix for 5 to 7 minutes.
  • Grease a large bowl.

  • Bake in preheated oven until golden brown and an instant-read thermometer registers an internal temperature of 200 degrees F (93 degrees C), 25 to 30 minutes.

A nice change from the usual Ester sweet breads, it goes wonderfully well with the Easter ham-both at dinner, and later, when you're making those yummy ham and cheese sandwiches (plain or, even better, grilled). Note: The dough for this bread is very soft and sticky, and it's best made using a mixer or bread machine.

2 1/2 cups king arthur unbleached all-purpose flour
1 1/4 teaspoons instant yeast
3 large eggs, at room temperature
1 large egg yolk, white reserved
1/4 cup water
1/4 cup butter

1 1/2 cups romano cheese or 1 1/2 cups asiago cheese

  • To make the dough in an electric mixer: Combine all of the dough ingredients except the cheese in the bowl of an electric mixer, and beat on medium speed for 10 minutes, until the dough becomes shiny and satiny. Add the cheese and beat until blended. Place the dough in a lightly greased bowl, cover the bowl, and set it aside to rise for 1 hour. Gently deflate the dough, turn it over, return it to the bowl, and allow it to rise for an additional hour, or until it's nearly doubled in size.
  • To make the dough in a bread machine: Place all of the dough ingredients into the pan of your machine, program the machine for manual or dough, and press Start. Check the dough about 10 minutes before the end of the final kneading cycle, and adjust its consistency as necessary with additional flour or water; it should be shiny and elastic. Allow the machine to complete its cycle.
  • To shape the dough: Oil or flour your hands. It is an Italian tradition to make this sweet, golden braid at Easter. This family heirloom recipe came from my mother-in-law and was passed down to her from her mother. If you're not a fan of raisins, the bread is just as wonderful without them. -Kathi West, Canton, Michigan

Number Of Ingredients 12

2 packages (1/4 ounce each) active dry yeast
3 tablespoons warm water (110° to 115°)
1-1/3 cups warm milk (110° to 115°)
2/3 cup sugar
2/3 cup butter, softened
1-1/4 teaspoons salt
2 large eggs
3 teaspoons anise extract
6 to 6-1/2 cups all-purpose flour
2/3 cup raisins
1 large egg white, beaten
1 tablespoon water

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, butter and salt; mix well. Add eggs, extract and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; sprinkle with raisins and knead in. Divide in half. Divide each portion into thirds. Shape each into a 14-in. rope. Place three ropes on a greased baking sheet, and braid; pinch ends to seal and tuck under. Repeat with remaining dough. Cover and let rise until doubled, about 45 minutes., Whisk egg white and water; brush over braids. Bake at 325° for 35-40 minutes or until golden brown. Remove from pans to wire racks to cool.

This egg bread recipe comes from Merridee's Cookbook. Merridee's is a family owned bakery and restaurant in the town of Franklin, TN. They sell homemade breads, rolls, pies and sandwiches.

Number Of Ingredients 9

1/2 cup dry milk
1 3/4 cups hot water
2 tablespoons butter
3 tablespoons honey
2 teaspoons salt
2 eggs (slightly beaten)
1/2 cup water
3 tablespoons yeast (2 packages)
7 1/2-8 cups bread flour

Steps:

  • Dissolve dry milk in hot water, add butter, honey, salt and eggs.
  • Mix well and determine temperature of mixture. Add warmer or cooler water (1/2 cup) to bring temperature to lukewarm.
  • Add yeast and stir well.
  • Mix in about 5 cups of the flour; beat well until mixture falls in sheets from spoon.
  • Then add 2 1/2 - 3 cups more flour or until just stiff enough to knead.
  • Turn out on floured board and knead until smooth and elastic. This will take 8-10 minutes. Use as little flour as possible without letting stickiness overcome you.
  • Place in greased, covered plastic bin or large bowl in warm place.
  • Let rise until double in bulk.
  • Punch down and let rise again until almost double.
  • Turn out on lightly floured board and divide into three parts. Round each part into a smooth ball. Let rest, covered for a few minutes then form into loaves.
  • Meridees divides each ball into three parts, rolls into ropes and braids together pinching ends securely. They then place into greased loaf pans, let rise until double and bake at 325 degrees until nicely browned, about 25 minutes.
  • I make dinner crescents by rolling dough into a 12 inch circle and using a pizza cutter cut 12-16 pieces. Starting at wide end, roll up each piece and place on greased cookie sheet. Let rise until double and bake at 400 degrees for 8-10 minutes.

This recipe is a generational French family tradition for Easter morning. I have searched the entire internet and I've never heard of anyone having it but our family. Everyone likes it so much that we have it more often than just Easter. It's a food that grows on you!

½ cup butter
½ cup flour
salt and pepper to taste
1 quart milk
8 hard-cooked eggs
8 slices white bread, toasted
1 pinch paprika

Steps:

  • Melt butter in a large saucepan over medium heat. Whisk in flour to make a roux, and cook, stirring constantly, for about 3 minutes. Whisk in the milk, and bring to a simmer, stirring constantly. Reduce heat to medium-low, and cook until thickened, 5 to 10 minutes more, stirring occasionally. Season to taste with salt and pepper.
  • Separate the hard-cooked egg whites from the yolks. Roughly chop the whites and stir into the white sauce. Press the yolks through a mesh strainer and set aside.
  • To serve, place a slice of toast on a plate, and ladle 1/2 cup of white sauce over top. Garnish with egg yolks and a sprinkle of paprika.

1 tbsp butter

Steps:

  • Lightly beat the egg in a shallow bowl along with the milk. Season with salt and black pepper.
  • Dip each slice of bread into the egg mixture, making sure it has soaked up all of the liquid. Heat a frying pan over a medium heat and add the butter. Swirl the butter around the pan and when it's beginning to foam, add the bread and fry on each side for 1 min or until golden brown. Transfer to a plate and serve with crispy bacon or fruit compote.
