2 tbsp. Goya® Extra Virgin Olive Oil
1/2 medium yellow onion, chopped (about 1/2 cup)
1 tbsp. Goya® Minced Garlic or 6 cloves garlic, finely chopped
1 tsp. dried oregano
1 tsp. dried thyme
1 tsp. cornstarch
1 cup white wine
1 packet Goya® Chicken Bouillon
1 tsp. sugar
1 can (15.5 oz.) Goya® Cannellini Beans, drained and rinsed
1 can (15.5 oz.) Goya® Red Kidney Beans, drained and rinsed
1 box (10 oz.) spinach fettuccine, cooked according to package directions
Fresh thyme leaves (optional)

Steps:

  • 1. Heat oil in a large skillet over medium-high heat. Add onions and cook until translucent, stirring occasionally, about 5 minutes. Add garlic, oregano and thyme; cook until garlic is light golden brown, about 1 minute. Using a whisk, mix cornstarch with 1/2 cup water until dissolved. Add cornstarch mixture, wine, chicken bouillon and sugar to skillet. Bring wine mixture to a boil and cook until the sauce is reduced by half, 2 - 5 minutes. Stir beans into sauce and cook until heated through, about 2 minutes more.
  • 2. Add cooked, hot pasta to skillet; stir to coat completely with sauce. Divide pasta evenly among serving bowls. Garnish with fresh thyme, if desired.

2 garlic cloves, crushed
1/3 cup pine nuts, toasted
1 tablespoon fresh lemon juice
3 tablespoons fresh basil, minced
3 tablespoons fresh parsley, minced
salt and pepper

Steps:

  • Cook orzo in boiling water until al dente. Drain well and transfer to bowl. Toss with butter, garlic, pine nuts, lemon juice, basil and parsley.
  • Taste to see if you would prefer salt and pepper or a more lemony taste.

  • f using dried herbs reduce the amount to 1 Teaspoon each.

I developed this recipe after having something similar at an Italian restaurant. My husband loves it! The pine nuts really add a special element of flavor. Adjust the amount of feta cheese to your own tastes; I happen to like a lot in this dish.

1 lb penne pasta
3 tablespoons olive oil
3 cloves fresh garlic, minced
8 ounces crumbled feta cheese
3/4 cup shredded parmesan cheese (not grated)
5 cups fresh Baby Spinach
1/3 cup pine nuts

Steps:

  • Cook penne pasta according to package directions.
  • As pasta is cooking, toast pine nuts lightly in a small skillet over medium-low heat, stirring frequently and keeping a close eye on them to prevent burning.
  • Remove pine nuts from heat when lightly browned, after about 1-2 minutes.
  • Set aside pine nuts.
  • Drain cooked pasta and set aside.
  • Heat olive oil in a large, deep skillet or wok.
  • Add garlic and saute over medium heat for about 30 seconds, being careful not to let garlic brown.
  • Stir in cooked pasta.
  • Stir in feta and Parmesan cheese and cook for a 2-3 minutes, until feta cheese just starts to melt and pasta and cheese is thoroughly heated through.
  • Stir in spinach and continue to heat until spinach barely starts to wilt.
  • Take pasta off heat and stir in the toasted pine nuts.
  • Transfer to serving dish and serve.

1/4 pound angel's hair pasta or capellini
3/4 teaspoon minced garlic
2 tablespoons olive oil
2 tablespoons pine nuts, toasted golden
2 tablespoons fresh lemon juice
1 1/2 teaspoons freshly grated lemon zest
1/4 cup minced flat-leafed parsley leaves

Steps:

  • Bring a large saucepan of salted water to a boil for pasta.
  • In a small saucepan cook garlic in oil over moderately low heat, stirring, until softened and transfer mixture to a large bowl. Add pine nuts, crushing them lightly with the back of a fork, lemon juice, zest, parsley, and salt and pepper to taste.
  • Cook pasta in boiling water until al dente and, reserving 2 tablespoons of the cooking water, drain well. Add pasta with the reserved cooking water to bowl and toss with lemon mixture until it is absorbed. Serve pasta warm or at room temperature.

1 lb bow tie pasta
1/4 cup olive oil
3 tablespoons pine nuts, toasted
1 tablespoon garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
4 plum tomatoes, diced
1/2 cup kalamata olive, pitted and chopped
1 cup feta cheese, crumbled

Steps:

  • Heat water and cook pasta according to package directions.
  • Heat olive oil in a medium skillet, over medium heat.
  • Add garlic and saute, but do not let brown.
  • Add toasted pine nuts.
  • Add spices and stir.
  • Add tomatoes and olives and saute for about 3 minutes, until heated through and softened.
  • Pour sauce over pasta and top with Feta cheese.
  • Cover for a minute so cheese and flavors meld.

This recipe was handed down to me by a friend I met years ago. She was born and lived in Italy for 20 years before moving to the states; and this was Mom's favorite recipe. Now, I updated with whole wheat pasta, but that is just something I enjoy. Apparently, this pasta dish was a very common side dish to many Italian dishes in their region. It is extremely light but so full of flavor, and definitely not very much too it. It is literally made in minutes.

12 ounces whole wheat pasta (Spaghetti is what the original recipe called for, but I would think you could use something similar)
2/3 cup pine nuts, toasted and chopped
1 cup parmesan cheese, grated (no green can, and make sure to use grated, no shredded in the package)
3 teaspoons garlic, minced
1/4 cup olive oil
2 lemons (zested and juiced)
1/4 cup fresh parsley, fine chopped
salt
pepper

Steps:

  • Nuts -- First, toast the pine nuts. In a small dry skillet over medium heat, toast the pine nuts until slightly brown and you can smell the aroma. The heat just brings out their flavor. Set to the side and rough chop.
  • Pasta -- Cook the pasta according to package directions in salted water. Once the pasta is tender, (reserving 2 cups of the pasta water) and just keep warm in the strainer you make the sauce. NOTE: Whole wheat makes all the difference in this dish.
  • Garlic -- In the pot you cooked the pasta in, return to the heat and add the olive oil and bring to medium heat. Add in the garlic and cook for one minute to lightly toast.
  • Finishing -- Return the pasta to the pot with the garlic and oil and add the lemon juice, zest, parmesan, pine nuts, parsley, salt (go lightly, the parmesan is salty), pepper and 1 cup of the pasta water and toss until everything is well combined. You may need a bit more water until it is the consistency you like.
  • That's it. You can garnish with extra parmesan or parsley if you want, but I don't think it is necessary. ENJOY.

1 cup (gently packed) fresh flat-leaf parsley leaves
1/2 cup extra-virgin olive oil
Zest of 2 lemons, cut into fine (julienne) strips
1/2 cup pine nuts, lightly toasted
Fine sea salt
1 recipe fresh pasta dough cut into tagliatelle (about 1 3/4 pounds)
Freshly ground black pepper
1 lemon, cut into 6 wedges (optional)

Steps:

  • 1. Mince the parsley and place it in a large shallow bowl. Add the oil, lemon zest, and pine nuts and mix until well combined. Season with salt, cover, and let sit for at least 2 hours at room temperature.
  • 2. Bring a large pot of salted water to a boil over high heat. Add the tagliatelle, stir, and cook until it is al dente (tender but still firm to the bite), 1 to 1 1/2 minutes. Drain, reserving 1/2 cup of the cooking water.
  • 3. Add the hot pasta along with the cooking water immediately to the prepared sauce and toss until the sauce is thoroughly distributed. Season with salt and pepper and toss again.
  • 4. To serve, use two spoons and carefully scoop up the pasta, making sure to get pine nuts with each serving (see Note). Serve with lemon wedges if desired for squeezing atop the pasta.
  • Note: The pine nuts tend to fall to the bottom of the bowl no matter how well you toss the pasta. Once the pasta is served, simply return to the bowl and evenly distribute the remaining pine nuts over each serving.

1/2 cup coarsely chopped fresh parsley (or 3 tablespoons dry parsley works fine too)
1/2 teaspoon basil
1/4 cup parmesan cheese (grated or powder will work)
1/3 cup olive oil (I have also used coconut oil, but not recommended unless you prefer the flavor)
3 -5 tablespoons lemon juice (to taste)
3 -5 tablespoons red wine vinegar (also to taste)
1/4 cup pine nuts (preferably toasted)
2 -4 garlic cloves, minced (depending on how much you love garlic!)

1/2 teaspoon fresh ground pepper
2 -3 cups farfalle pasta (or spiral, or other, about 6 ounces)
8 cups boiling water

1 English cucumber (sliced at about a 1/4 inch and halved or quartered)

Steps:

  • Boil chosen pasta al dente, drain (stir in some butter or olive oil to keep it loose) and allow pasta to cool.
  • Combine all dressing ingredients into a blender or food processor and pulse until pine nuts have broken down and all ingredients combine (Important! Add/subtract dressing ingredients too taste!).
  • Combine cooled pasta, feta, roasted red peppers and cucumbers in a large mixing bowl.
  • Gently stir in dressing.
  • Chill for around 30 minutes to give flavors a chance to meld.
