HOMEMADE GRANOLA (CRUNCHY CLUSTERS)
Steps:
- Preheat oven to 325 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside.
- Meanwhile, in a bowl, mix oats with almonds.
- In another bowl, whisk together the coconut oil, maple syrup, brown sugar (if using), vanilla extract, cinnamon, salt and nutmeg until well combined. Pour over oat/almond mixture. Stir well to combine.
- Pour mixture onto prepared baking sheet, pressing down so it's an even layer. Bake for 20 minutes.
- Rotate the baking sheet and bake the granola for another 15 minutes.
- Remove the baking sheet from the oven, add coconut chips (or shredded coconut) over top and bake for another 3 to 4 minutes.
- Allow the granola to cool completely on the baking sheet before breaking up into clusters. The more you handle, the smaller the pieces you will have. If desired, stir in optional granola add-ins to taste. Serve and enjoy!

Steps:
- Preheat the oven to 300º F (177° C). (If your oven runs cool or is older, 325º F also works.)
- Combine the oil and maple syrup (or honey), vanilla extract, and salt in the bottom of a large bowl (mixing bowl is best) and give it a quick stir. The coconut oil might be solid depending on your climate (it has a melting point of about 75ºF), and that's ok! A rough mix to incorporate the vanilla into the coconut oil and sweetener is all you need to do here.
- Add the rest of the dry ingredients, use your clean hands to mix well, and toss it to coat. It will be sticky and messy, but that's the fun part. Your hands will warm the oil and melt it into the mixture if it's solid; just be sure to mix it all through the other ingredients, so there aren't any chunks of oil left.
- Spread the mixture in a thin layer on a rimmed baking sheet or sheet pan lined with parchment paper and bake for 10-12 minutes until very lightly toasted. (To make this recipe completely raw-friendly, dehydrate the mixture 5-6 hours at 115ºF in a food dehydrator instead.)
- Cool 10-15 minutes before serving or storing.

- In a large bowl, toss the oats with the cinnamon and salt.
- In a medium bowl, stir together the oil, honey, brown sugar, and vanilla. Whisk until completely combined.

- Pour the mixture onto the prepared baking sheet. Spread it out evenly, but leave a few clumps here and there for texture.
- Bake for 10 minutes, then remove from the oven and use a metal spatula to lift and flip the granola. Sprinkle the almonds over the granola and return the baking sheet to the oven.
- Bake for 5 minutes, then remove from the oven and use a metal spatula to lift and flip the granola. Sprinkle the hazelnuts over the granola and return the baking sheet to the oven.
- Bake for 10 minutes, then remove from the oven. Let cool completely. Sprinkle the raisins and cherries over the granola and use your hands to transfer it to an airtight container.

Steps:
- Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
- Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
- Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
- Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
- Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

HOMEMADE GRANOLA
Steps:
- Preheat the oven to 350 degrees F.
- Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.
- Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.
THE BEST HOMEMADE GRANOLA RECIPE EVER
Steps:
- Preheat oven to 325F.
- In a small bowl, whisk together the oil and maple syrup.
- In a large bowl, stir together the oats and nuts, salt, and cinnamon (leave the dried fruit out for now).
- Pour the oil and maple syrup mixture over the dry ingredients and toss to thoroughly coat.
- Spread granola onto a parchment-lined baking sheet. Spreading it thinly will result in a toastier taste, spreading it thickly will result in bigger clumps.
- Bake at 325F for 20 mins or until nuts smell toasted.
- Remove from oven and spread the dried fruit on top of granola and leave to cool.
- Break into pieces.
- Keep in an airtight container (I use a large Ziploc freezer bag).
HOMEMADE GRANOLA
My husband found this recipe in a mountain bike magazine that we changed just a bit. This granola is really easy to make and very good. You can use oats, but I like to use multi-grain hot cereal that includes oats, barley, rye, and wheat. Enjoy!

Steps:
- Preheat oven to 360 degrees.
- Toast nuts in pan over stove until lightly brown.
- Mix the fruit juice, honey, maple syrup, oil, vanilla, and spices in a large bowl. It's okay to add more honey, maple syrup, cinnamon, or spices - just depends how you like your granola to taste.
- Add oats and nuts into honey mixture and combine together.
- Spread mixture on a baking sheet and bake 30 minutes until golden. Stir occasionally. Use your best judgement when baking. I like mine a little crunchy, so sometimes I bake it 40 minutes.
- Leave on pan to cool.
- If you are using dried fruit stir in once completely cooled.
- Store granola in container with lid (not in refrigerator). It will last about a week or a little longer. Add granola to vanilla yogurt, or with milk, or eat plain.
