HOMEMADE EVAPORATED MILK
Well, in my search for the best way to make homemade evaporated milk; it seems like there are basically two ways: either with whole or low fat milk, cooked down to 1/2 it's volume, or reconstituted dry powdered whole milk dry powder or low-fat dry powder milk cooked down to 1/2 it's volume OR mixing up a batch of whole powdered milk, using twice as much powdered milk than called for. All of these ways work. The consensus SEEMS to be that boiling the whole milk down is the best tasting...but both opinions are plentiful out there! I've used the non-cook down method. It works great!!!

- The above amounts will make the equivalent of one 12 oz. can of evaporated milk. That being said, the following information will be of interest to you. Evaporated milk is concentrated or reduced milk.
- Just double the ratio of powder to water. For the authentic taste full-cream whole milk powder should be used but skimmed could be used in a real pinch.
- To reconstitute evaporated milk back to regular milk it is diluted with an equal amount of water. With this in mind it is easy to make evaporated milk from milk powder.
- No milk powder? Simply reduce whole milk by half in a bain-marie (double-boiler). Voila!

- Boil sugar,salt and corn syrup to 245 degrees.
- Stir occasionally.
- Add butter and evaporated milk so gradually that the mixture does not stop boiling.
- STIR CONSTANTLY!
- Cook rapidly to 240 degrees, being careful not to scorch.
- Add vanilla and nuts.
- Pour into greased pan.
- Cool before cutting.
- Cut with heavy,sharp knife with saw-life motion.

EVAPORATED MILK
Canned evaporated milk is expensive, and every recipe for homemade that I found used powdered milk (yuck!). I searched the web and found this one. This makes the equivalent of one 14 ounce can. The time is estimated as I didn't pay attention to that while making it - I just let it simmer while I worked on other things. This isn't a quick substitute for when you don't have canned milk around; it takes a long time to simmer to the right level. But it's cheaper than canned, fresher and you have control over the process, unlike store-bought.

- Pour 1 3/4 cups of the milk into a heavy bottomed pot.
- Note the level of the milk in the pot, marking it if necessary (I'm not sure how, but the original instructions said to do it). This is the level the milk will be when it is finished.
- Pour in the rest of the milk.
- Slowly bring the milk to a boil over medium high heat, stirring frequently with a flat-bottomed utensil and scraping the bottom and sides of the pot. If the milk is scorching, reduce the heat some.
- As soon as the milk reaches a boil, reduce the heat to the lowest possible setting.
- Allow to simmer, scraping the bottom and sides of the pot about every six or seven minutes. If a thin skin has formed on top of the milk, remove it with a spoon before scraping and stirring.
- When the milk has reduced to the level previously noted or marked, your milk is done.
- Cool and refrigerate.

- There are several methods of making evaporated milk, you can make it from whole milk or from the powdered version. We will explain each process so you can select whichever one you prefer. We'll start with the one using whole milk. To do this, pour a litre of milk in a pot with a wide mouth. The smaller it is the harder it will be to evaporate.
- Heat it over medium-high until boiling. If you do not have an induction hob and use gas instead, when the milk reaches boiling point you must place a heat diffuser between the stove and pot. You must stir occasionally with a wooden spoon or spatula to prevent cream lumps from forming. Lower the heat slightly and let the milk evaporate for an hour and a half.
- After this time, remove from heat, let it become tepid and pass it through the strainer to remove lumps. Your evaporated milk made from whole milk is now ready! Now you can use it or store it in a sealable jar, previously sterilized. You see, this is a very simple method, now lets see the other method.
- The second form of making evaporated milk consist in adding the milk, water and butter in a pot, also with a wide mouth. The butter should be at room temperature. Heat it over a medium-high heat until all ingredients are dissolved and integrated properly. Stir with a spoon.
