BAKED MAPLE CHICKEN THIGHS (BONELESS AND SKINLESS)

12 chicken thighs ((skinless and boneless))
2 Tbsp olive oil
1 tsp sesame oil
2 tsp kosher salt ((or to taste))
1/2 tsp black pepper
2 Tbsp maple syrup
2 Tbsp apple cider vinegar
3 garlic cloves ((pressed))
2 Tbsp fresh parsley ((finely chopped))

Steps:

  • Preheat oven to 425F.
  • Add the chicken thighs to a large bowl. Add the salt, pepper, oils, maple syrup, apple cider vinegar, pressed garlic and one tablespoon of chopped parsley. Mix well and let sit at room temperature for 30 minutes.
  • Mix once again and transfer the chicken thighs to a 9" x 13" baking dish.
  • Bake for 20 minutes or until the the thighs reach about 150F - 155F internal temperature. Move the baking dish to the top rack and turn on the broiler to high. Broil for a few minutes, constantly watching, until slightly browned.
  • Remove the thighs from the oven, baste with pan juices and let rest for about 5 minutes. Sprinkle with the remaining chopped parsley and serve.

Steps:

  • Whisk maple syrup, Dijon mustard, and balsamic vinegar together in a bowl. Pour over chicken thighs in a bowl and marinate for 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
  • Place chicken in the prepared casserole dish and pour remaining marinade on top.

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a 10x15-inch baking pan with foil.
  • Whisk 1 teaspoon olive oil, maple syrup, thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper together in a small bowl. Set aside.

2 tablespoons grainy French mustard
2 tablespoons Dijon mustard
1 clove minced garlic
1/2 teaspoon dried marjoram

Steps:

  • Preheat oven to 375 degrees F.
  • Rinse chicken and pat dry. Combine mustard, garlic, marjoram and maple syrup in a small bowl. Spread about 1 1/2 tablespoons mustard mixture evenly on top of each chicken thigh, being careful to cover as much of the surface as possible to form a "crust." This is a recipe I modified from Eating Well magazine that pairs that richness with a slightly sweet flavorful marinade and sauce. These are fabulous when marinated overnight, but you can go a short as two hours. The thighs can be cooked on an indoor or outdoor grill or broiled.

4 skinless chicken thighs or 4 boneless skinless chicken thighs, all visible fat removed
3 tablespoons pure maple syrup

  • Place thighs on the grill and cook for 4 to 6 minutes per side or until a thermometer registers 165 degrees. Actual cooking time will vary depending on the type of grill chosen. Remove chicken to a serving plate.
  • Place the marinade in a small sauce pan over medium heat and bring to a boil. Reduce temperature to a low simmer and cook for 3 to 5 minutes.

Since I found this recipe a month ago in Essence Great Cooking, we've had this three times! Smells like honey-mustard when baking, and serves up slightly sweet and spicy, without a mustard-y taste. Enjoy the cookbook original, but I have added quite a bit and here is the version my family prefers. Works fine with just the poultry seasoning if you are short on spices.

2 tablespoons fried poultry seasoning (McCormicks Salt-free Grill Mates is best) or 2 tablespoons poultry seasoning (McCormicks Salt-free Grill Mates is best)
1/4 teaspoon marjoram
1/4 teaspoon onion powder
1/4 teaspoon Italian spices
salt and pepper
1/2 cup maple syrup
1/4 cup prepared mustard (spicy is good)

2 tablespoons butter, cut into pieces

Steps:

  • Remove any visible fat from chicken, then rinse chicken under cold water and pat dry with paper towel.
  • Coat sides with poultry seasoning, pepper, marjoram, onion powder& italian seasonings (more or less to taste).
  • In large baking dish, arrange chicken pieces in single layer.
  • In medium bowl, blend syrup, mustard, lemon juice & brown sugar; pour mixture over chicken.
  • Dot each piece with butter, cover with foil, and bake at 350°F for 30 minutes.
  • Uncover dish, bake basting occasionally with pan juices, until brown& glazed- about 20 additional minutes.
  • Transfer to serving platter and garnish with parsley.

This easy chicken thighs recipe is packed with flavor thanks to maple, soy sauce, and ground cinnamon.

4 tablespoons olive oil
4 tablespoon soy sauce
5 tablespoons pure maple syrup
5 cloves of garlic, minced
1/2 teaspoon ground cinnamon
1/2 teaspoon ground pepper
Generous pinch of kosher salt
4-5 chicken thighs (bone in, with skin)

Steps:

  • In a large bowl combine the olive oil, soy sauce, maple syrup, minced garlic, cinnamon, ground pepper, and kosher salt.
  • Place the chicken thighs in the bowl to marinate while your oven preheats. (Or you can place them in a ziploc bag or tupperware, add the marinade, then let them marinate overnight in the fridge.)
  • Usually you would do this first but heating your oven after the chicken is marinating gives it about 30 minutes to soak up the flavor a bit.
  • When your oven reaches temperature add the chicken pieces and marinade to a baking dish. I used a 7×11 pyrex dish but you can also use a 9×13 if that's what you have. Just make sure the pieces are in a single layer. Bake for 25 minutes skin side up.
  • After 25 minutes has passed, flip the chicken pieces onto the other side using tongs and raise the oven temperature to 450F. Cook for another 5 minutes. Flip the chicken one more time so that the skin is facing up, and cook for another 5-10 minutes until the skin has a deep golden color and some crispiness.
  • Test with an instant-read thermometer to confirm that the chicken has finished cooking. It is done when it reaches an internal temperature of 165F. Serve with your desired sides, spooning any remaining marinade onto the chicken when serving.

MAPLE ROASTED CHICKEN

Set it up the night before, then simply roast the chicken just before serving. Pair the roasted chicken with sweet potatoes and brussels sprouts or bitter greens, like collard greens and kale, and use any leftovers in a salad or rice bowl the next day.

  • In a medium bowl, stir together the maple syrup, apple cider vinegar, garlic powder, onion powder, smoked paprika and 2 tablespoons salt. Pour into the bag with the chicken, seal and refrigerate overnight or for at least 1 hour.
  • Heat oven to 400 degrees. Pull the brined chicken out of the fridge, drain off the brine and pat the chicken dry. On a rimmed sheet pan, rub the chicken with the olive oil, 1 teaspoon salt and the pepper.
  • Set it skin side up and roast for 25 to 35 minutes, or until the juices run clear when pierced and the internal temperature reaches 165 degrees.
  • As the chicken roasts, make the glaze: Add the maple syrup, cinnamon, salt, fennel, paprika and ½ cup water to a small saucepan. Bring to a simmer over medium heat and cook for 10 to 15 minutes, or until the mixture has reduced and thickened enough to coat the back of a wooden spoon.
  • Brush the cooked thighs with the glaze and set under the broiler for 30 seconds to 1 minute, keeping an eye on the glaze as it is quick to burn. Serve hot.
