Number Of Ingredients 10

4 cups prepared fruit (about 1 lb. Granny Smith or other tart green apples)
1-1/4 cups water
1/2 cup raisins
2 Tbsp. fresh lemon juice
1 tsp. ground cinnamon
1/4 tsp. ground allspice
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
4 cups granulated sugar, measured into separate bowl (See tip below.)
1 cup firmly packed light brown sugar

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Peel and core apples; finely chop or grind. Add water and raisins. Measure exactly 4 cups into 6- or 8-quart saucepot. Stir in lemon juice, cinnamon and allspice.
  • Stir pectin into fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Stir in all sugars quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon
  • Ladle quickly into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

A friend gave me this wonderful recipe, and oh my, it is so good. Just like a extra good apple pie filling, but in jam form. If you love apple pie, you are going to have to make this wonderful recipe. My husband who only likes strawberry jam, said, "this recipe was EXCELLENT!" It is excellent on English muffins, pancakes or toast. Even over Ice cream too!!

4 cups apples, chopped (tart apples)
1 1/2 tablespoons lemon juice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
4 cups sugar
1 cup brown sugar, packed
1 (1 3/4 ounce) box dry pectin
1 teaspoon butter

Steps:

  • Measure apples in a measuring cup, now add in the same measuring cup water to fill up to the 4 cup line (with the apples in it).
  • Add pectin and the butter and spices, lemon juice.
  • Bring to a boil.
  • Add sugars and bring back to a full rolling boil, boil 1 minute.
  • Stir constantly.
  • Remove from the heat.
  • Skim off any foam.
  • Ladle into hot jars leaving 1/4-inch headspace.
  • Put on lids.
  • Process in water bath 10 minutes.

4 to 5 large Golden Delicious apples, peeled and sliced (about 2 pounds)
1 cup water
5 cups sugar
1/2 teaspoon butter
1 pouch (3 ounces) liquid fruit pectin
1-1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground mace, optional

Steps:

  • In a Dutch oven, combine apples and water. Cover and cook slowly until tender. Measure 4-1/2 cups apples; return to the pan. (Save remaining apple mixture for another use or discard.) , Stir in sugar and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly. , Remove from heat; skim off foam. Stir in spices. Carefully ladle hot mixture into seven hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process 10 minutes. Remove jars and cool.

4 cups bottled apple juice
1 tablespoon pure maple syrup
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 (1.75 ounce) package dry pectin
5 cups white sugar

Steps:

  • Inspect 6 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jelly is ready. Wash new, unused lids and rings in warm soapy water.
  • Place apple juice, maple syrup, cinnamon, and nutmeg in a heavy saucepan. Add pectin; bring juice to a rolling boil over high heat until pectin is dissolved. Slowly stir in sugar and bring mixture back to a rolling boil over high heat. Boil for 1 full minute.
  • Remove mixture from heat and skim off foam with a metal spoon.
  • Wipe jars dry and fill with apple jelly. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 15 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

2 pounds McIntosh and 1 pound Granny Smith, cut up with cores and skin
3 3/4 cups water
Sugar
2 tablespoons fresh lemon juice
Coarse salt

Steps:

  • Combine fruit and water in a saucepan. Bring to a boil, reduce to a simmer, and cook, partially covered, mashing occasionally with a potato masher, until fruit is very soft, 10 to 15 minutes. Transfer mixture to a fine sieve set over a heatproof bowl; let drain without pressing on fruit, 4 hours. Strain again through sieve lined with damp cheesecloth. Measure juice; you will have 3 to 4 cups.
  • In a large heavy-bottomed pot, bring juice to a boil. Add 3/4 cup sugar for each cup of juice. Add lemon juice and 1/4 teaspoon salt. Return to a boil and cook, stirring frequently, 8 to 12 minutes. To test if jelly is done, dip a large metal spoon in, lift it horizontally above pot, and let mixture drip back in. Jelly is done when mixture has thickened slightly and drops of it slide together off spoon in a sheet. (Temperature should register 221 degrees on a candy thermometer.) Skim foam from top.
  • Ladle jelly into clean containers, leaving 3/4 inch of headroom. Let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.

Quick French apple jam that tastes just like apple pie! It's low sugar and can be made without pectin. This favorite apple jelly is a mixture of sour and sweet apples!

10 cups 1/4″ diced apples (about 3-4 pounds)
2 cups granulated sugar**
3 Tbsp ground cinnamon
1 1/2 tsp nutmeg
1/2 tsp cloves
1 1/2 tsp gelatin (I recommend Perfect Supplements)

Steps:

  • In a large stockpot, combine the apples, sugar, cinnamon, nutmeg, and cloves. Bring the mixture to a simmer.
  • After a while, the apples will start to release their juices. When they do, use a glass measuring cup like this one to measure out 1/4 cup of juices. Sprinkle the gelatin over the juices and let it sit to bloom.
  • Meanwhile, let the apples continue to cook until they become soft and the juices have mostly evaporated. Stir often to prevent burning.
  • When there's very little juice left in the pot, remove the apples from the heat. Whisk the gelatin in the measuring cup with the liquid, and then pour the liquid into the apple mixture. Stir well.
  • Distribute between pint-sized jars like these and let the apple jam cool completely before storing in the freezer.

I just made this last night. I was a little confused by the directions compared to what was in the Sure-Jell box, but I mostly followed these directions. It was really simple, and even though it hasn't been 24 hours, my jelly has firmed up. I tasted a sample of what was still in the pan, and it was really good. Sweet, of course, but the cinnamon and spices help cut it somewhat, which is what I like. It made 7 jars for me. The note about the candy thermometer is not mine, I didn't use one, and it came out just fine!

3 teaspoons cinnamon

  • Place apple juice, maple syrup, cinnamon and nutmeg in a heavy saucepan.
  • Add the pectin and bring to a hard boil over high heat until it dissolves into the juice.
  • Slowly stir in the sugar and bring back to a rolling boil over high heat. Boil for one full minute (I still prefer 220 degrees on the candy thermometer!).
  • Remove from heat and skim off foam with a metal spoon.
  • Pour into jars (about 12 1/4 pint jars, or 6 1/2 pints), put on lids and process in a hot water bath for 15 minutes.

1 box powder pectin ( 1.75oz )
5 c white sugar, or a mix of white & brown

Steps:

  • 1. Place apple cider, maple syrup, and apple pie spices in a large stock pot or dutch oven.
  • 2. Add the pectin and bring to a boil until it dessolves into the liquid.
  • 3. Slowly stir in the sugar and bring back to a rolling boil over high heat. Boil for exactly 1 full minute.
  • 4. Remove from the heat and skim off foam with a metal spoon. Ladle into sterilized jars, leaving 1/4" headspace. Wipe rims.Cap and seal
  • 5. Process in a water-bath canner for 15 minutes, or 10 minutes for half pints

OLD FASHIONED APPLE CIDER JELLY PIE

8 sheets phyllo dough
14 tablespoons butter, melted
3/4 cup chopped walnuts
2/3 cup maple sugar or firmly packed light or dark brown sugar
1 1/4 cups pure maple syrup
1 cup apple cider jelly or apple jelly
6 eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees. Butter 9-inch pie plate. Lay 1 sheet phyllo dough on clean surface. Place slightly damp kitchen towel over remaining dough to keep from drying out. With pastry brush, lightly brush with melted butter. Lay another sheet phyllo on top of buttered sheet, lightly butter. Repeat until all 8 layers are buttered, using 6 tablespoons of the butter. Place phyllo dough into the prepared pan, pressing it along bottom and sides. Trim the edges. Sprinkle walnuts over bottom of crust. In medium bowl beat together maple sugar, maple syrup, jelly, remaining 8 tablespoons butter, and eggs. Pour egg mixture over walnuts. Bake 40 to 45 minutes, or until filling is set. Serve chilled.

  • Add 4 teaspoons of calcium water (comes in the Pomona Pectin and activates the pectin). Boil for 1 more minute.
  • Add your spices and the sugar mixed with the powdered pectin. Return to a boil and stir constantly (because burnt sugar is so not wanted here) for 2 minutes. You'll see and feel the mixture start to thicken up. Take it off the heat.

For 4 cups of juice, you’ll need 3 cups of sugar and add the sugar while stirring the jelly. Continue stirring keeping the jelly at a boil until the candy thermometer reads 8 degrees above the boiling point of water - about 220°F - or until the jelly sheets off a spoon.
