found this on veganchef.com and wanted to remember to store it here. we love cajun seasoning, but i have been trying to find a low salt or salt free version. this one worked out perfectly.

3 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon cayenne pepper
1 tablespoon fresh ground black pepper
1 tablespoon white pepper
1 1/2 teaspoons dried thyme
1 teaspoon dry mustard

Steps:

  • In a small bowl, stir together all of the ingredients. Store in an airtight container in a cool place.

5 tablespoons paprika
3 tablespoons salt

Steps:

  • In a small bowl, combine onion powder, garlic powder, oregano, basil, thyme, black pepper, white pepper, cayenne pepper, paprika and salt. Store in an airtight container.

Since I use a lot of spicy seasoning, I experimented until I think I came up with a mixture that's the same as Zatarain's Creole Seasoning

5 Tbsp paprika
4 Tbsp garlic powder (not salt)
2 Tbsp onion powder (not salt)
2 Tbsp ground black pepper
2 Tbsp cayenne pepper
2 Tbsp ground dried oregano
2 Tbsp ground dried thyme
1 Tbsp sea salt (optional)

Steps:

  • 1. Place all spices in bowl and blend together well with mixer on low speed. Store in airtight glass jar in a cool place in pantry. Will last indefinitely if kept in sealed jar
