Categories     Breakfast     cake     Dessert

Time 1h25m

Number Of Ingredients 11

3/4 cup butter (softened but not melty at all)
1 1/2 cups granulated sugar
2 large eggs
1 cup sour cream
2 tsp pure vanilla extract
1 3/4 cup all purpose flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp table salt
1 1/2 cups fresh ripe blueberries (dry any surface moisture)
Optional: powdered sugar for dusting

Steps:

  • Preheat oven to 350F with rack on lower middle position. Generously grease and flour bottom and sides of a 9-inch Springform pan with removable sides. Tap out excess flour and set aside.
  • In bowl of a stand mixer (or just a large bowl, if using electric hand mixer) combine the softened butter and sugar. Using paddle attachment, cream until light and fluffy, 2-3 min on medium high speed. Lower to medium speed and beat in the eggs, sour cream, and vanilla until combined.
  • In a separate bowl, combine dry ingredients (flour, baking soda, baking powder, and salt) and gently whisk to combine well. Use a rubber spatula to fold dry ingredients into wet butter mixture, just until a few slight flour streaks remain; do not over mix batter.
  • Sprinkle blueberries with a big pinch of flour, just to lightly coat. Gently fold in 1 cup of blueberries into the batter, reserving 1/2 cup blueberries for later. Evenly spread batter into prepared Springform pan, ensuring even surface through the edges. Sprinkle remaining 1/2 cup blueberries evenly on top of batter. Place cake on a baking sheet and place in oven. Bake 65-70 min, or just until toothpick inserted in center comes out with a few tiny tender crumbs attached (start watching cake about 20 minutes beforehand, to make sure it's not browning too quickly. Check often and loosely tent with foil if needed.)
  • Let cake cool completely in pan. Once edges have cooled and pulled away from sides of pan, gently remove the sides. Serve with dusting of powdered sugar, if desired.

I came up with this one using an old recipe and tweaking it with sour cream which makes it moist. Some coffee cakes dry out within a day but this one will surprise you. Bursting with fresh blueberries, this cake is...

BLUEBERRY CREAM CHEESE CRUMB CAKE

Blueberry Cream Cheese Crumb Cake image

Yum! This blueberry crumb cake is delightful. The cake dense and slightly sweet. You get a great surprise when you bite in and taste the cream cheese and blueberries in the middle. The crumb topping adds a little crunch. This will be great for breakfast, brunch or even dessert if you don't like overly sweet desserts.

Time 1h30m

FOR THE FILLING
2 8 - ounce blocks of regular cream cheese
1/2 c granulated sugar
1 tsp pure vanilla extract
1 large egg
FOR THE CAKE:
3 c all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c (1 stick) softened unsalted butter
1 c granulated sugar
4 large eggs
1 tsp pure vanilla extract
1 c sour cream
1 pt fresh blueberries
FOR THE CRUMB TOPPING:
3 Tbsp cold butter
1/4 c all-purpose flour
1/4 c granulated sugar

Steps:

  • 1. Grease a 9 x 13 pan and pre-heat oven to 350. For the filling, beat together cream cheese and sugar.
  • 2. Once creamed, add vanilla and egg. Set aside.
  • 3. For the cake, in another bowl combine flour, baking powder, baking soda, and salt.
  • 4. In a separate bowl, cream together butter, granulated sugar, eggs and vanilla.
  • 5. Add the flour mixture alternately with the sour cream into the wet batter until well blended.
  • 6. Pour half the batter into a well-greased 9x13 pan.
  • 7. Spread the cream cheese filling over the batter.
  • 8. Place about a pint of blueberries, I use a little more, over the cream cheese mixture. Cover the cream cheese layer with remaining batter.
  • 9. For the crumb topping, using a pastry blender combine cold butter, flour and sugar until the mixture looks like small peas.
  • 10. Sprinkle the crumb topping over the top of the cake. Bake in a 350 oven for 55- 60 minutes. Test in center with toothpick. DO NOT LET THE TOP GET BROWN! It will be overbaked and dry!
  • 11. Let cool, cut and enjoy!!

BLUEBERRY JAM

Blueberry jam image

Treat yourself to some homemade blueberry jam, the ideal accompaniment to toast, fruit scones or dolloped onto natural yogurt at breakfast time

Provided by Esther Clark

Categories     Condiment

Time 45m

Yield Makes 2 x 500ml jars

Number Of Ingredients 4

800g blueberries , washed
500g granulated sugar
1 vanilla pod , split lengthways
1 large lemon , juiced

Steps:

  • Put a plate in the freezer for you to test your jam is set later. Sterilise two 500ml jam jars so they are ready to use.
  • Put the blueberries, sugar, vanilla and lemon in a large heavy-based saucepan over a medium heat. Crush the blueberries a little with a potato masher. Bring to the boil, then reduce to a simmer and cook for 30 mins. Skim off any skum that has formed on the top with a spoon and discard.
  • Test the jam is set by spooning a mound on to your cooled plate. Put in to the fridge for 3 mins. If the jam forms a skin and ripples when you push it with your finger, it's ready. If not, return to the heat for 5 more mins then repeat the test. Do this until you reach setting point.
  • Leave the jam to sit for 10 mins off the heat. Ladle into your warm, sterilised jars and seal the lids on top. Leave to cool completely. Will keep for six months unopened in a cool, dry place, or two weeks once opened in the fridge.
