- Pour a few drops of oil into a square cake tin.Sprinkle the tin with a little flour. Set aside.Put the chocolate and butter into a heatproof bowl.Put a little water in a saucepan and heat gently until it simmers. Stand the bowl over the water making sure it does not touch the hot water.Turn the heat down to medium. Using a wooden spoon,stir the chocolate and butter until it has melted. Remove the pan and stir in the sugar ,keep on stirring ocasionally.Set aside.
- Sieve the flour and salt together into a large mixing bowl. Break the egg into a small mixing bowl.Pick out any pieces of egg shell that have fallen into the bowl. Beat the egg lightly with a fork until the yolk and the white are mixed together.Add the vanilla extract and set aside.
- On a chopping board,roughly chop the walnuts using a kitchen knife.Set aside.
- Add the chocolate mixture,beaten eggs and walnuts to the flour.Mix well until smooth,using a wooden spoon.Spoon the mixture into the prepared tin and level the surface with a palette knife.
- Place the tin in the oven and bake for 35-40 minutes or until the brownies are well risen.Wearing oven gloves, take the tin out of the oven. Leave the brownies in the tin for about 5-10 minutes or until almost cold. Using a kitchen knife, carefully cut the brownies into 12 bars.Carefully remove the brownies from the baking tin using a palette knife.

- Grease a 9"-13" pan.
- In a medium, microwave-safe mixing bowl, melt the dark and white chocolate chips on medium (50%) heat with the butter, stirring occasionally.
- Quickly whisk in the cream cheese fruit dip (the chocolate will begin to solidify, but don't worry, just work quickly).
- Whisk in the eggs, one at a time, until well combined.
- Add the vanilla, sugar, and salt, whisk until combined.
- Fold in the walnuts and flour at the same time.
- Pour batter into the prepared pan and bake for 20-25 minutes or until a toothpint comes out with only a few crumbs on it.

- Preheat oven to 325 F and prepare 2 greased 2 x 3 1/2-inch loaf pans (or 1 4 x 8-inch loaf pan).
- Melt butter (over stove or in microwave) and pour into a larger bowl. Sift cocoa into butter and stir in. Stir in sugar.
- Add eggs to mixture, blending well after each addition. Stir in vanilla.
- In a separate bowl, combine flour, baking powder and salt (do not sift). Add to cocoa mixture and blend. Stir in walnuts.
- Pour brownie batter into pans and bake for 40-45 minutes, until firm when touched.Allow to cool.
- Thaw ice cream for 5 minutes, just to soften.
- Remove brownies from loaf tins. Wipe tins and line with plastic wrap. Slice each loaf horizontally in half. Place bottom half back into each tin. Spoon ice cream onto brownie in tin and spread into corners. Top ice cream with other half of brownie. Wrap and freeze until ready to serve (brownie should not freeze completely due to high sugar content).
- Heat cream over medium heat with sifted cocoa powder, vanilla and salt.
- In a bowl, whisk together egg yolks and sugar. Gradually add hot cream to egg mixture, whisking constantly until all cream has been added. Return cream to heat and cook for 2 minutes, stirring until thickened. Strain and chill until ready to serve.
- Puree all ingredients; strain and chill.
FUDGY CHOCOLATE CHIP WALNUT BROWNIES RECIPE

- Gather the ingredients.
- Heat the oven to 350 F. Grease and flour a 13x9x2-inch baking pan.
- In a large bowl, combine cocoa and baking soda; blend in 1/3 cup melted butter. Add boiling water; stir until well blended. Stir in sugar, beaten eggs, vanilla, and remaining 1/3 cup butter. Stir in flour and salt.

LOW CARB DOUBLE CHOCOLATE WALNUT BROWNIES
Steps:
- Preheat oven to 325 degrees F.
- Spray pan with nonstick vegetable oil cooking spray. Set aside. Mix wheat bran and 1/2 tablespoon soy flour together and sprinkle evenly over the inside of the greased pan, also coating the sides.
- Place the unsweetened chocolate and butter in a steel bowl and melt over a saucepan of simmering water. Whisk in 1 cup sugar substitute and 1/4 cup heavy cream. Once thoroughly blended, turn off heat and keep warm until needed.
- With an electric mixer on high, beat the eggs, 1 cup sugar substitute and the vanilla extract just until blended. Reduce to low speed and then blend in the chocolate mixture.
- With a wooden spoon, mix in the baking powder, 1 1/4 cups soy flour, walnuts, and 1/4 cup heavy cream. Spread evenly into the prepared pan and bake on the center rack for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. (Do not over-bake or brownies will be dry and hard.) Cool completely before frosting with low carb chocolate frosting. Cut into 5 rows by 5 rows to make 25 pieces.
- Place all ingredients in a medium bowl and whisk until well combined. Use to frost brownies, but make sure brownies are completely cooled, or the butter in the frosting will melt.
CARAMEL WALNUT BROWNIES
The brownie recipe is "Brownies Cockaigne" from the Joy of Cooking. I had to adapt the directions a bit to make them more readable in this format. They are absolutely the BEST brownies I've ever had. They're more fudgey and dense than cakey. I've added all kinds of things to this brownie recipe and it's always turned out good. The addition of caramel was all mine, though, so I feel like I can take a bit of the credit!

- This recipe has appeared in Joy since the original edition. Have all ingredients at room temperature. Position a rack in the center of the oven. Preheat oven to 350* F. Line a 13 x 9- inch baking pan (I always use Pyrex) with greased aluminum foil, allowing it to overhang the 2 narrow ends of the pan by 2 inches.
- In a large, heavy saucepan over very low heat, melt butter with chocolate, stirring constantly until the mixture is smooth.
- Remove from heat and set butter and chocolate aside until completely cool.
- Once cool, stir in sugar and vanilla.
- Stir in eggs until well-combined.
- Add flour and walnuts and stir until just combined (be careful not to overmix!).
- Scrape the batter into the pan and spread to the edges.
- Once level, drizzle caramel ice cream topping over brownies in a swirly pattern or zig-zag. Be careful not to get too much syrup in one spot, or it'll make a delicious, gooey hole in the finished brownies. The syrup will make a slight indentation into the brownies as they bake.
- Bake until the center of the pan is almost firm when lightly pressed and a toothpick inserted in the center comes out clean but still moist at the bottom, 23-28 minutes.
- Remove the pan to a cooling rack and let stand several hours until completely cool.
- Using the overhanging foil as handles, lift the brownies to a cutting board, peel off the foil, and slice into pieces.
- **Helpful hint: Using a plastic knife will keep the brownies from sticking to the knife!***.
