Chef Gordon Ramsay's lobster capellini recipe is a delight to have with the delicious lobster pasta sauce. Not many people can make an excellent lobster sauce like this. The creamy yet chunky tomato sauce with the lobster is a perfect partner to the thin strands of Capellini pasta.

1 tbsp Olive Oil
300 g Cherry Tomatoes
½ Chili
½ Garlic Clove
½ Spring Onion
250 g Unsalted Butter
65 ml Dry White Wine
250 g Capellini
Meat Of Lobster
50 ml Cream
2 tbsp Chopped Fresh Basil
Parmesan Cheese
Olive Oil

Steps:

  • Place the tomatoes, chili, onion, garlic, and butter in a heavy-based pan and cook over moderate heat until soft but not colored.
  • Break the tomatoes up with a spoon as they cook. Season with pepper, add the wine and slow-cook until the wine has virtually evaporated and the tomatoes have caramelized.
  • The sauce will be quite chunky in texture: if you prefer a smoother sauce, pass the mixture through a sieve and return to the pan.
  • Bring a large pan of water to the boil, add salt, the Capellini and oil and cook till al dente.
  • Take the lobster meat and cut it into small pieces.
  • Drain the Capellini in a colander and transfer to a warm serving plate.
  • Add the cream to the tomato sauce and bring to the boil. Add the lobster and toss to warm through. Do not overcook at this stage.
  • Pour over the Capellini, scatter over the basil and parmesan, drizzle with the oil and serve immediately with a crisp green salad.
  • Serve with a simple green salad with lardoon and soft boiled eggs.

1 pound dried capellini
1/2 pound (2 sticks) unsalted butter
Zest and juice of 2 large lemons
1 lemon for garnish

Steps:

  • Add 2 tablespoons of salt to a large pot of boiling water. Add the capellini and cook for 3 to 4 minutes, until just al dente.
  • Meanwhile, heat a large (12-inch) saute pan, add the butter, and heat until the butter is melted. Add the zest and juice of the 2 lemons. Add 2 teaspoons salt and 1 teaspoon pepper and swirl the pan to combine.
  • As soon as the pasta is cooked, lift the pasta out of the water with tongs, allowing most but not all of the water to drain back into the pot, and add all the pasta to the sauce. Cook for one minute, adding pasta water to the sauce with a ladle just enough to keep the pasta moist.
  • Transfer the pasta to a serving platter or individual plates. Garnish with more lemon zest, sprinkle with salt and pepper, and squeeze a little lemon juice on top. Serve hot.

  • Meanwhile, heat the 1/2 cup of olive oil in a large (12-inch) saute pan. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, 2 teaspoons salt, the pepper, and red pepper flakes. Reduce the heat to medium-low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to soften but don't break up.
  • While the tomatoes are cooking, add the capellini to the pot of boiling water and cook for 2 minutes, or according to the directions on the package. Drain the pasta, reserving some of the pasta water.
  • Place the pasta in a large serving bowl, add the tomatoes and Parmesan and toss well. Add some of the pasta water if the pasta seems too dry. Serve large bowls of pasta with extra basil sprinkled on top and a big bowl of extra Parmesan on the side.

1/4 cup extra-virgin olive oil
4 to 5 large cloves garlic, thinly sliced
1/2 teaspoon fine sea salt, plus more as needed
Pinch freshly ground black pepper
2 pounds ripe red tomatoes, stemmed, hulled and chopped (about 5 cups), including their juices
1 teaspoon sugar, plus more as needed
1 pound dried capellini (angel hair pasta)
1/2 cup lightly packed fresh basil leaves, coarsely chopped, plus a few small whole leaves for optional garnish
1 tablespoon unsalted butter (may substitute non-dairy butter)

Steps:

  • 1 Heat the oil in a medium saucepan over medium heat
  • 2 Once the oil shimmers, add the garlic (to taste), salt and pepper; cook, stirring frequently, until the garlic is fragrant but not burned, 30 seconds to 1 minute
  • 3 (If you burn the garlic, use a slotted spoon to scoop it out of the oil and proceed; if you leave it in, it will ruin the sauce

1 1/2 cups drained canned plum tomatoes, chopped
