An adaptable and easy chilaquiles recipe turns stale chips or leftover corn tortillas into a crunchy base for a customizable breakfast.

2 to 3 cups tortilla chips (approximately 30 chips from a bag)
1 1/4 cups green salsa (or red salsa )
1/2 cup queso fresco cheese (or cotija, crumbled)
2 tablespoons Mexican crema (or substitute regular sour cream thinned with a splash of milk)

Steps:

  • Gather the ingredients.
  • Lightly coat a large frying pan with vegetable oil. Heat over medium-high heat until oil shimmers.
  • Spread tortilla chips in pan.
  • Quickly pour salsa over chips and reduce heat to medium-low. Simmer the chips in sauce, undisturbed, until chips absorb some of the liquid and soften, for approximately 10 minutes.
  • Divide chilaquiles between two plates; sprinkle half of the cheese on each and drizzle with half of the crema.

Chilaquiles is one of the simplest dishes of Mexican cuisine-unless, of course, you like to complicate it with all the add ons you can think of.

1/2 cup vegetable oil for frying
3 corn tortillas, cut into triangles
Kosher salt, to taste
1 pound husked and chopped tomatillos
1/4 cup chopped white onion
1 minced clove of garlic
1 diced green habanero chile, optional
1 tablespoon cumin powder
1/2 cup fresh, chopped cilantro
1 tablespoon unsalted butter or vegetable oil
2 large eggs
2 tablespoons cotija cheese, for garnish
2 teaspoons crema or sour cream, for garnish
1/2 sliced avocado, for garnish
1/2 chopped red onion, for garnish

Steps:

  • Gather the ingredients.
  • In a large, heavy-bottom pot, heat oil to 360 F. Carefully lower tortilla wedges into the oil, making sure none overlap. You may need to do this step in batches.
  • Fry tortilla wedges, turning over half-way through, until golden-brown and crisp. This should take 2-3 minutes per batch. Remove and allow to drain on a plate lined with paper towels. Salt to taste while the chips are still hot. Set aside.
  • In large skillet over medium-high heat, add tomatillos, water, onion, garlic, habanero chile, and cumin. Bring to a boil, then lower heat to medium-low and simmer until tomatillos break down, about 10 minutes. Remove from heat and allow to cool.
  • Add the ingredients from the skillet to a blender with the cilantro. Blend the salsa to desired consistency.
  • Return salsa to skillet over medium heat and cook for 5 minutes, stirring occasionally.
  • Meanwhile, add the butter to a large non-stick skillet over medium heat until melted. Gently crack eggs into the melted butter. Fry to your preference and set aside.
  • Just before serving, add tortilla chips to salsa in the skillet and cook until coated and heated through, about 2 minutes.
  • Divide chilaquiles between 4 plates and top each serving with a fried egg. Add cotija cheese, crema, avocado, and onion, if desired, and serve immediately.

10 ripe Roma tomatoes, quartered
8 serrano chiles, left whole, stems removed
5 cloves garlic, peeled
1 white onion, peeled and quartered
4 tablespoons oil
Salt
Chicken base, for seasoning
6 ounces tomato puree
8 ounces cooked and shredded chicken
3 ounces chopped fresh cilantro, plus cilantro sprigs for serving
6 ounces tortilla chips, strips or squares are best
6 ounces sour cream
1 onion, sliced into rings
12 ounces crumbled queso fresco cheese or panela cheese
Prepared guacamole, for serving
Prepared refried black beans, for serving
Prepared pico de gallo salsa, for serving

Steps:

  • Grill the tomatoes, chiles, garlic and onions until they have a slightly blackened skin. Do not burn!
  • Bring 6 cups water to a boil with the blackened veggies until they are cooked through and soft inside.
  • Pour the veggies with the hot water and a little added cold water into a food processor and process. Don't blend too much, you want the mixture to be chunky.
  • In a large pot, heat up the oil until smoking. Then (carefully!) add a small amount of the sauce mixture and let it burn away for 1 minute (this is for a nice smoky flavor). Then slowly add the rest of the mixture and season with salt and some chicken base.
  • Add the tomato puree for color, and mix well. Add the shredded chicken and cook until it is heated through. Add the cilantro. Add the chips and serve immediately on 4 plates. Top each plate with some sour cream, sliced onions, queso fresco and a sprig of cilantro.
  • Serve with guacamole, refried black beans and pico de gallo on the side.

Usually, chilaquiles are eaten at breakfast time. This makes them a popular recipe to use leftover tortillas and salsas. Chilaquiles are often thought to be a cure for the common hangover; this is because in Mexico it is believed that spicy foods help in the recovery process from a hangover.

4 boneless skinless chicken breasts
1 onion, quartered
2 garlic cloves
2 onions, finely chopped
1 garlic, minced
12 tomatoes, peeled and seeded and pureed
1 tablespoon cilantro, minced
salt and pepper, to taste
2 tablespoons Tabasco sauce (optional)
4 round corn tortillas
1 cup sour cream (thinned with a small amount of water)
1/2 lb manchego cheese
1/2 lb mozzarella cheese

Steps:

  • Cut the tortillas into strips.
  • Cook chicken with a little water, the quartered onion, a pinch of salt and two cloves of garlic. Cover, cook slowly over a medium heat.
  • Remove cooked chicken from the pan and discard onion and garlic; allow to cool enough to handle.
  • Sautee the chopped onion and garlic in a little olive oil.
  • Once the onion is translucent, add tomatoes, cilantro and Tabasco sauce; simmer over medium heat for 10 minutes; salt and pepper to taste.
  • Shred the chicken and add to the sauce; lower heat and cook for a few minutes to absorb some of the flavors from the sauce. Do not over cook.
  • Deep fry the corn tortillas. When they are crisp, remove and drain on paper towels.
  • Assemble the chilaquiles like lasagna. Use a large lasagna pan and layer the following: tortillas, chicken in sauce, thinned sour cream, cheese.
  • Repeat layers and finish with cheese and sour cream.
  • Bake at 325 degrees F for about 45 minutes.

1 cup vegetable oil
3 cups tomato salsa (26 ounces)
1 cup chopped cilantro, divided
3 garlic cloves, finely chopped
1/2 cup sour cream
1/4 cup heavy cream
1/2 cup chopped red onion
1 cup crumbled queso fresco or ricotta salata (1/4 pound)

Steps:

  • Stack tortillas and cut stack into 8 triangles.
  • Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then fry tortillas in 6 batches, turning once, until golden brown, 3 to 5 minutes per batch. Drain on layers of paper towel.
  • Purée salsa with 1/2 cup cilantro in a blender.
  • Pour off all but 2 tablespoons oil from skillet, then cook garlic over medium heat, stirring occasionally, until pale golden, about 2 minutes. Add salsa mixture and cook, stirring, until sauce comes to a simmer, about 2 minutes.
  • Whisk together sour cream, heavy cream, and 1/4 teaspoon salt.
  • Spread tortillas on a platter, then spoon sauce over them. Drizzle with sour-cream mixture, then sprinkle with onion, cheese, and remaining 1/2 cup cilantro.

  • Cut tortillas into bite-sized pieces or strips. Peel and chop the tomato. Carefully remove the stem and seeds from the jalapeno and discard. Mince the jalapeno.
  • Heat oil in a medium skillet. Fry tortilla pieces until crisp. Pour off most of the oil, leaving just enough to cook the eggs. Salt the tortillas well.
  • Beat the eggs; mix in the tomato and jalapeno. Add to the skillet of crisp tortillas and scramble together until eggs are done.
