Chicken soup is not only good for a cold, it may help prevent one! You can garnish with thin slices of ginger, garlic, lemon, or jalapeno pepper for extra immune support. This is from Delicious Living magazine. You can make the homemade stock or use chicken broth instead. Cook time does not include making stock.

Steps:
- To make stock, rinse chicken parts in cold water.
- Put all stock ingredients, except salt, in a large stockpot.
- Bring to a boil, reduce heat.
- Simmer 2 hours, skimming froth from surface occasionally.
- Remove from heat.
- Remove chicken pieces; discard skin.
- Dice and save meat for soup.
- Strain broth and discard remaining solids.
- Season with salt to taste.
- If making ahead, refrigerate; remove any solidified fat before using.
- To make soup, warm 1 tbls.
- olive oil in a large pot over medium heat.
- Add garlic, onion, carrots, and celery.
- Saute 3-5 minutes.
- Add 6 cups chicken stock and stir.
- Bring to a boil, reduce heat.
- Cover and simmer for 30-40 minutes or until vegetables are soft.
- Add cooked chicken and cooked noodles.
- Simmer for 5 minutes.
- Remove from heat.
- Adjust seasoning with salt and pepper.
- Combine all mojo ingredients in a small bowl and stir until blended.
- Drizzle over hot soup.
- Enjoy!

- Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the chicken stock and bring the liquid to a boil. Add the noodles and simmer for 5 minutes until tender. Fold in the chicken, and continue to simmer for another couple of minutes to heat through; season with salt and pepper. Sprinkle with chopped parsley before serving.
- Place the chicken and vegetables in a large stockpot over medium heat. Pour in only enough cold water to cover (about 3 quarts); too much will make the broth taste weak. Toss in the thyme, bay leaves, and peppercorns, and allow it to slowly come to a boil. Lower the heat to medium-low and gently simmer for 1 to 1 1/2 hours, partially covered, until the chicken is done. As it cooks, skim any impurities that rise to the surface; add a little more water if necessary to keep the chicken covered while simmering.
- Carefully remove the chicken to a cutting board. When its cool enough to handle, discard the skin and bones; hand-shred the meat into a storage container.
- Carefully strain the stock through a fine sieve into another pot to remove the vegetable solids. Use the stock immediately or if you plan on storing it, place the pot in a sink full of ice water and stir to cool down the stock. Cover and refrigerate for up to one week or freeze.
COLD-BUSTING GINGER CHICKEN NOODLE SOUP
A spicy addition to a classic soup. I normally make this with a whole chicken and let it cook for an hour, remove the meat, and return the bones for another hour on their own, chicken breasts are used here for simplicity.

- Heat olive oil in a large pot over medium heat. Add chicken, onion, and crushed garlic cloves; cook in hot oil until chicken breast is browned and onions start to turn translucent, about 5 minutes . Pour water, white wine, and lemon juice over the chicken mixture; stir sliced ginger, peppercorns, chicken bouillon, bay leaves, and white sugar into the liquid. Bring to a simmer, reduce heat to medium-low, and cook for 45 minutes.
- Remove and discard the crushed garlic cloves. Remove chicken breasts from the soup to a cutting board; chop into bite-size pieces.
- Add carrot, celery, kohlrabi, rosemary, and thyme to the soup. Reduce heat to low until the vegetables begin to soften, about 20 minutes.
- Bring the soup to a boil. Return chopped chicken to the soup along with the egg noodles, minced garlic, and grated ginger; remove the pot from heat and let sit until the noodles have softened, about 10 minutes. Season with salt. Garnish with parsley.

- Fill Pot (See Pic) 3/4 full with Water and Bring to Boil and leave on High till you get to egg noodles.
- Remove Gizzard or Gut BAg from Chicken, Rinse under Cold Water add to water in Pot.
- While chicken is boiling for 1.5 hours, Peel and slice Carrot, Chop Onion, Slice Celery into small pieces or whatever size you prefer and place to the Side (See Pic).
- Chop about 2 large man size hands of fresh organic parsley (no Stems) and Set to the side.
- Chicken Care- Foamy white fat will float to the top of the pot (Skim and Discard regularly), After approximately 1.5 hours on full boil, remove from heat, remove chicken and set to the side, I prefer to strain the water and remove any fat or parts left over from boiling the chicken (Transfer from one pot to another) Add strained Broth Water from Chicken Add 2 heaping TBSP of Garlic and Chicken Base, and all the veggies and parsley to pot- Boil and cover.
- While that is boiling, Shred the chicken the way you like and add to the pot with all the veggies.
- Once all comes to a boil while covered add egg noodles and bring to boil once again- Turn heat low and simmer for 15-30 minutes.

- In a 5-qt. slow cooker, combine the first 6 ingredients. Place mustard seed and garlic on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. - Clean all vegetables, peel and put through the food processor. I grate all of the vegetables.
- Cut up the parsley and dill.
- Sauté the chicken and vegetable in the oil. Add all the remaining ingredient and let simmer for a few hours. Or put in crock pot and let cook the afternoon.
- Before you are ready to serve cook the egg noodles according to package directions.
- I add some noodles to the bottom of a soup bowl and ladle the soup over the noodles.
- This soup gets better the second and third day. It also freezes very well since you are not putting the noodles into the soup. I freeze it and take out as we need.

- Pat chicken dry with paper towels; sprinkle with salt and pepper. In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken in batches, skin side down; cook until dark golden brown, 3-4 minutes. Remove chicken from pan; remove and discard skin. This is a recipe for making chicken soup from scratch, not with leftovers from last night's roasted chicken. The beauty of this soup is in its simplicity and how one bird makes one pot of soup. It calls for removing the breast meat prior to cooking and reserving for final preparations. The rest of the chicken will be used for making the broth. This is important to note because the chicken parts used to make the broth will be devoid of flavor after 45 minutes of cooking.

- You could use the breast meat in this soup recipe but I prefer to cook them separately in another recipe. If you do use them, wait until the soup is almost finished and then add them back to the pot until they are cooked through. Should only take about 8 to 10 minutes.
- Dice the onion. Peel the carrots and cut them as well as the celery into 1/4 to 1/2 inch pieces then mince the fresh parsley leaves.
- Heat the oil in a large heavy-bottomed soup pot and sauté the breasts until they are light brown, about 5 minutes. Remove the breasts and set aside. Add half of the onions and sauté until translucent, approximately 4 to 5 minutes. Remove and set aside.
- Cut up the remaining parts of the chicken (not the breasts) into small pieces to allow them to release their juices in the shortest time possible. This is the hardest part of the recipe. If you have a meat cleaver, it makes the job easier, but if you don't, do the best you can with a chefs knife.
- Add the pieces to the pot, and cook for 8 to 10 minutes until no longer pink. Return the onion to the pot, reduce the heat to low, cover, and simmer until the chicken releases its juices, about 20 minutes. Add boiling water, reserved chicken breasts, 2 teaspoons of salt, and bay leaves. Cover and simmer until chicken breasts are cooked, about 20 minutes. Increase the heat if necessary.
- Remove chicken breasts and set aside. Strain and reserve broth. Skim fat from the broth, reserving 2 tablespoons to be used to cook the vegetables. Add the reserved fat to the soup pot and sauté the remaining onions along with the carrot and celery for about 5 minutes.
- When the chicken breasts are cool enough to handle, remove and discard the skin and bones. Shred the breast meat into bite sized pieces and add to the pot. Add thyme and reserved broth; simmer until the vegetables are tender.
- Season with salt and pepper, add parsley and serve. You can also add noodles, orzo, or small pasta shells and cook until tender.

- Pour the stock into a pan and add the chicken breast, ginger and garlic. Bring to the boil, then reduce the heat, partly cover and simmer for 20 mins, until the chicken is tender.

- For Noodles: Mix egg, oil, salt, and water together.
- Add all purpose flour until it becomes a soft dough.
- Roll dough out on a floured surface to very thin.
- Let dry for at least 3 hours.
- Cut into small noodle sized strips.
- For soup: Cover chicken with water in a large stove top pot.
- Add chicken broth, carrots, celery, garlic and onions.
- Boil until chicken is done.
- Remove chicken and debone.
- Place chicken back in pot.
- Add additional water to soup mixture if needed, usually about 4 cups.
- Bring soup mixture to boil and then add noodles.
- Boil soup until noodles are soft and ready to eat.
- Salt and pepper to taste.
