EASY CHERRY BREAD RECIPE



Easy Cherry Bread Recipe image

A simple quick bread with maraschino cherries in every bite. Don't forget the almond cherry glaze on top!

3/4 cup granulated sugar (150 grams)
1/2 cup 2% milk
1/2 cup canola oil ((or vegetable or melted coconut oil))
1 large egg
1 teaspoon almond extract* ((or vanilla extract))
2 cups all-purpose flour (260 grams)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 jars maraschino cherries** ((10 ounces each))
1 cup powdered sugar
1 tablespoon melted butter
2 1/2 tablespoons maraschino cherry juice
1/2 teaspoon almond extract

Steps:

  • Preheat the oven to 350ºF. Spray a 9"x5" loaf pan with cooking spray, or grease with shortening, then dust with flour.
  • In a medium bowl, stir together the sugar, milk, oil, egg and almond extract.
  • In a separate bowl, combine the flour, baking powder, baking soda and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
  • Drain the maraschino cherries, reserving the juice for the glaze. Coarsely chop the cherries in a food processor or with a knife. Gently fold the cherries into the batter.
  • Pour the bread batter into the prepared pan. Bake for 50-55 minutes***. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
  • To make the glaze, combine the powdered sugar, melted butter, cherry juice and almond extract in a small bowl. Whisk until it is smooth.
  • Once the bread is cool, spread the glaze on top of the bread. If you spread the glaze on while the bread is still warm, it will melt and run off.
  • Slice and serve. Store any leftovers at room temperature in an airtight container. The bread freezes well, too.

1/2 cup (8 tablespoons, 4 ounces) butter, softened
1/2 granulated sugar
2 large eggs, beaten
1 tablespoon vanilla extract
1 cup milk
2 cups 1 to 1 Gluten Free Baking Flour plus 1 tablespoon, separated.
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 tablespoon baking powder
1 cup (1/2 pound) fresh (**Or 10 ounces frozen) cherries

Steps:

  • Preheat the oven to 350 degrees F. Prepare a 9 inch loaf pan with parchment and baking spray.
  • If using frozen cherries, let them thaw in a strainer for ten minutes. Toss with one tablespoon of gluten free flour. Set aside.
  • Mix the dry ingredients of gluten free flour, salt, baking powder and nutmeg. Set aside.
  • Beat the sugar and the butter until fluffy. Add the eggs one at a time. Add the vanilla and the milk.
  • Gently fold the wet and dry ingredients together. Fold the cherries into the batter. Do not overmix.

3 tablespoons butter, soften
1/2 cup sugar
1 large egg
1/2 teaspoon almond extract
1/2 teaspoon vanilla
3 tablespoons maraschino cherries, chopped, juice reserved
2 tablespoons cherry juice (maraschino juice)
2 tablespoons orange juice
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • In a bowl, beat butter and sugar until creamy. Add the egg, almond extract and vanilla while beating. Add cherries and the juices. Beat to combine everything.
  • Put flour in a small bowl. Add baking powder and salt. Add to the mixture of cherries. Stir just enough to wet the dry ingredients. Pour the dough in a greased loaf pan. Cook in the oven at 350 F for about 45 minutes or until a toothpick inserted in it comes out dry. Cut in 8 slices.

½ cup milk
¼ cup cherry juice
1 teaspoon vanilla extract

1 ½ cups white sugar

1 cup maraschino cherries

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Whisk together the eggs, shortening, milk, cherry juice, and vanilla extract in a bowl until evenly blended; set aside. Stir together the flour, sugar, baking powder, and salt in a separate large bowl; make a well in the center of the flour mixture. 1/4 cup all-purpose flour
2 tablespoons sugar
1/4 cup cold butter, cubed
1/4 cup slivered almonds, toasted and finely chopped
2 tablespoons maraschino cherries, drained and finely chopped
1/2 teaspoon almond extract
1 tube (16.3 ounces) large refrigerated flaky biscuits (8 count)
ICING:
1/2 cup confectioners' sugar
1 teaspoon butter, softened
1/4 teaspoon almond extract
2 to 3 teaspoons water
2 tablespoons slivered almonds, toasted and chopped
1 tablespoon maraschino cherries, drained and chopped

Steps:

  • Preheat oven to 350°. In a small bowl, mix flour and sugar; cut in butter until crumbly. Stir in almonds, cherries and extract until crumbly and well blended., Split biscuits horizontally in half. Line bottom of a greased 8x4-in. loaf pan with three biscuit halves. Sprinkle 2 tablespoons crumb mixture over biscuits; press gently into dough., Place remaining biscuit halves on a lightly floured surface. Top each with remaining crumb mixture; press gently to adhere. Stack seven of the topped biscuits; place stack sideways at one end of the pan, facing crumb sides inward. Repeat with remaining six biscuits, placing stack at opposite end of pan, again facing crumb sides inward., Bake until golden brown, 35-40 minutes. Cover loosely with foil if top browns too quickly. Cool in pan 10 minutes before removing to a serving plate., For icing, mix confectioners' sugar, butter, extract and enough water to reach a drizzling consistency. Spoon over warm bread. This quick bread tops my list of ways to enjoy chocolate for breakfast! I love the harmony between the smooth chocolate flavor and the tart sweetness of cherries joined together in this moist and slightly dense loaf.

Nonstick cooking spray
3/4 cup dried cherries, chopped
1/2 cup (45 grams) Dutch-process cocoa powder, plus 1 more teaspoon for coating the cherries
3/4 cup cherry juice (or water)
1 1/4 cups (155 grams) all-purpose flour
1 cup (200 grams) sugar
1 3/4 teaspoons baking powder
Heaping 1/2 teaspoon fine salt
1/2 cup vegetable oil
1 large egg, at room temperature, beaten
1 large egg white, at room temperature, beaten
2 teaspoons pure vanilla extract
1/4 cup mini chocolate chips

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Spray an 8-by-4-inch loaf pan with nonstick spray and line it with parchment paper.
  • Combine the dried cherries with the 1 teaspoon cocoa powder in a small bowl. Toss to evenly coat and set aside.
  • Microwave the cherry juice in a microwave-safe measuring cup until steaming, about 1 minute. Transfer to a medium bowl, add the 1/2 cup cocoa and whisk until smooth. Set aside while you prepare the dry ingredients.
  • Put the flour, sugar, baking powder and salt in another medium bowl and whisk well to combine.
  • Add the oil, egg, egg white and vanilla to the warm cocoa mixture then whisk to combine. Pour into the dry ingredients and stir until incorporated. Pour about 1/3 of the batter into the prepared pan. Stir the cocoa-coated cherries into the remaining batter, then pour that batter into the pan. Sprinkle the chocolate chips on top.
  • Place the loaf pan on a baking sheet and bake on the center rack until a toothpick comes out with a few moist crumbs, 60 to 64 minutes. Let cool in the pan for 15 minutes then remove the quick bread to a wire rack to cool completely before slicing with a serrated knife (this will cut through the cherries easily and yield a clean slice).
  • Serve or wrap the cooled loaf in plastic wrap or foil and store on the counter for up to 3 days.

CHRISTMAS CHERRY NUT BREAD

This is so easy to make as you just put everything, except the cherries, in a bowl and mix it, adding the cherries last. It is so pretty and so good. It is nice with a cup of tea or for giving in a pretty little basket along with some tea. You could put a pretty tea cup in the basket, too. If you like fewer cherries, use the lesser amount; I like more so I use the whole jar.

1/4 cup maraschino cherry juice

1 cup chopped walnuts
2/3-3/4 cup chopped maraschino cherry (about a 10-11 oz. jar)

Steps:

  • Dump everything but the cherries in a mixing bowl and beat well, scrape, and mix again.
  • Add the cherries and mix well.
  • Put into a greased bread pan.
  • 350 oven for 60-70 minutes still a tester comes out clean.
  • Remove from pan and let cool.
  • Store at least 8 hours before slicing.
  • Note: To substitute soured milk for buttermilk, add vinegar to the whole milk and let sit for 5 minutes before adding to the bowl. This is what I use usually.

I am very proud of my banana bread recipe, which is why I adapted it into this amazing cherry-chocolate loaf. While cherries really aren't anything like bananas, this really did work out extremely well--this loaf is a delicious option for breakfast, brunch, or dessert.

1 teaspoon unsalted butter
2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking powder
½ teaspoon baking soda
½ cup unsalted butter, softened
1 cup white sugar
2 large eggs, at room temperature
¼ cup plain yogurt
¼ teaspoon vanilla extract
2 cups pitted cherries
½ cup dark chocolate chunks
½ cup chopped walnuts
¼ cup powdered sugar
3 teaspoons milk, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
  • Whisk flour, salt, baking powder, and baking soda together in a bowl.
  • Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.
  • Chop pitted cherries coarsely with a knife, or by pulsing on and off a few times in a food processor. Add to the wet ingredients along with the chocolate chunks and chopped walnuts. Stir briefly to combine. Batter may look curdled, but don't worry.
  • Pour in the flour mixture and mix with a spatula until all the flour has disappeared. Transfer batter into the prepared loaf pan, making sure to smooth the top evenly and fill in the corners. Tap pan on the counter to release any air pockets.
  • Bake in the preheated oven until nicely browned and a toothpick inserted into the center comes out clean, about 1 hour. Let bread rest in the pan for 15 minutes before removing to a wire rack.
  • While bread is resting, combine powdered sugar and milk in a bowl for icing, adding more milk as needed to reach a thin, runny consistency.
  • Brush icing over loaf, allowing to drip down the sides. Let cool completely before slicing and serving, about 20 minutes more.
