This sauce came from a good friend's Italian mother-in-law. It is easy, and by far the best homemade sauce I know of. Great for both spaghetti and lasagna. Pssst...the secret is the sugar! Also, as I am now vegetarian, it tastes great with out the meat! Just substitute two tablespoons olive oil for the beef.

1 (28 ounce) can stewed tomatoes
1 (28 ounce) can crushed tomatoes
1 pound lean ground beef
2 yellow onions, chopped
2 green bell peppers, chopped
5 cloves garlic, chopped
2 tablespoons white sugar
1 tablespoon dried basil
½ teaspoon dried oregano
salt and pepper to taste

Steps:

  • Blend the stewed tomatoes and crushed tomatoes in a blender. In a stock pot or large kettle, brown the ground beef with the onions, peppers, garlic. Pour in tomatoes, and reduce heat. Add sugar, basil and oregano, and simmer about 40 minutes. Season with salt and pepper before serving.

1 pound ground beef
1 cup finely chopped celery
1 cup finely chopped onion
1 garlic clove, minced
1 cup half-and-half cream
3 ounces cream cheese, cubed
2 teaspoons dried basil
1 teaspoon dried oregano
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups shredded cheddar cheese
7 ounces shredded Gouda cheese
2 cups 4% cottage cheese
1 large egg, lightly beaten
8 ounces lasagna noodles, cooked and drained
12 ounces sliced or 3 cups shredded part-skim mozzarella cheese
Minced fresh parsley

Steps:

  • In a large skillet, cook the beef, celery and onion over medium heat until meat is no longer pink. Add garlic. Cook for 1 minute or until garlic is tender; drain. Stir in the cream, cream cheese, basil, oregano, Italian seasoning, salt and pepper; cook and stir over low heat until blended. , Gradually add cheddar and Gouda cheeses, stirring until cheese is melted; remove from heat. Combine cottage cheese and egg; set aside. , Layer half of the lasagna noodles in a greased 13x9-in. baking dish. Top with half of the meat sauce, half of the cottage cheese mixture and half of the mozzarella cheese. Repeat layers with remaining ingredients. , Bake at 375°, uncovered, for 30-35 minutes. Sprinkle with parsley. Let stand for 10 minutes before serving.

1 lb ground beef (cooked)
2 (26 ounce) jars spaghetti sauce
1 (16 ounce) bag mozzarella cheese
1 (16 ounce) package lasagna noodles (cooked and drained)
2 eggs (beaten)
1 teaspoon garlic salt
1/2 cup parmesan cheese
1 (15 ounce) container ricotta cheese (small curd) or 1 (15 ounce) container cottage cheese (small curd)

Steps:

  • Preheat oven to 375°F
  • Cook noodles according to directions on package.
  • In small bowl, combine beaten eggs and cottage cheese.
  • Add 1 1/2 jars of sauce to cooked ground beef.
  • Add garlic salt.
  • Stir and simmer 5 minutes.
  • Set aside.
  • Spread 3/4 cup sauce on bottom of baking dish.
  • Place 3-4 noodles over the bottom, slightly overlapping.
  • Spread 1 tablespoon of the egg/cottage cheese mixture over each noodle.
  • Add 1 tablespoon meat/sauce mixture over each noodle.
  • Sprinkle Parmesan cheese and then mozzarella.
  • Repeat layers.
  • Cover last layer with remaining noodles and sauce.
  • Sprinkle with remaining mozzarella cheese.
  • Cover with foil and bake for 30 minutes.
  • Remove foil and bake an additional 10 minutes.
  • Let cool 10 minutes before serving.

Looking to use up some stuff in my freezer, I came up with this recipe with things I had on hand. It is really tasty and made a great lasagna! There aren't many ingredients, so it's simple to make. You will need a larger pot for this.

1 lb Italian sausage (any variety, casings removed)
1/2 lb ground beef
2 (28 ounce) cans tomatoes (I used one crushed and one puree)
1 (8 ounce) can tomato sauce (I use Red Pack)
1/2 large onion, diced
1 large carrot, peeled and diced
1 clove garlic, minced
1/2 cup beef or 1/2 cup vegetable stock
1/3 cup white zinfandel wine or 1/3 cup blush wine
salt and pepper

Steps:

  • Remove sausage from casings.
  • In a large pot, brown sausage and ground beef.
  • Remove meat from pot and set aside.
  • Remove excess grease (reserving some to saute veggies) from the pot and add carrot, onion and garlic.
  • Cook until soft and onion is transparent.
  • Add meat back into the pot, stirring mixture for about two minutes.
  • Add wine and cook until liquid evaporates.
  • Add tomatoes and tomato sauce to meat and veggie mixture.
  • Bring sauce to quick boil.
  • Simmer on low for at least 3 hours.
  • If sauce beomes too thick for your taste, thin it with the broth.

1 green bell pepper, chopped
3 garlic cloves, chopped
1/2 tablespoon crushed basil leaves

1/4 teaspoon dried oregano
salt substitute
pepper

Steps:

  • Blend the stewed tomatoes and crushed tomatoes in a blender.
  • In a stock pot or large kettle, brown the ground beef with the onions, peppers, garlic.
  • Pour in tomatoes and reduce heat.
  • Add basil, sugar, oregano and simmer about 40 minutes.
  • Periodically check consistency; if sauce is too runny or liquid, add no salt added tomato paste or cornstarch paste to taste.
  • Sprinkle with salt substitute and pepper before serving.
