1/4 cup butter, cubed
5 medium Golden Delicious apples, peeled and thinly sliced
1/4 cup water
1/2 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat; saute apples 1 minute. Add water; bring to a boil. Stir in sugar and cinnamon. Reduce heat; simmer, covered, until apples are tender, 10-12 minutes, stirring occasionally.

1 refrigerated pie crust
2 tablespoons Smart Balance butter spread
1/4 cup sugar, divided
4 apples, peeled cored and sliced
3/4 teaspoon cinnamon
8 scoops low-fat vanilla frozen yogurt (optional)

Steps:

  • Preheat oven to 375.
  • Brush crust with one tablespoon melted smart balance; sprinkle lightly with 2 t sugar. Cut into 8 wedges.
  • Place pieces on baking sheet and bake until puffed and golden, about 7 minutes. Set aside.
  • Heat remaining smart balance over high heat; add apples and saute 4 minutes.
  • Reduce heat to medium high. Sprinkle apples with remaining sugar and cinnamon.
  • Cook 3 more minutes or until sugar dissolves and mixture thickens, stirring occasionally.
  • Place apple mixture into 8 serving dishes. Top each with one wedge of crust.
  • Serve topped with frozen yogurt.

1 1/2 tablespoons safflower oil
2 tablespoons maple syrup or 2 tablespoons agave syrup
3/4 cup granola cereal
1/4 cup dried cranberries

Steps:

  • Heat the oil in a medium skillet over medium heat.
  • Add the apples and cook, stirring often, until golden brown and beginning to soften, 3 to 5 minutes.
  • Add the maple or agave syrup and continue cooking until the apples are tender when pierced with a sharp knife, 3 to 5 minutes more.
  • Divide the hot apples among eight bowls. Sprinkle the granola and a few dried cranberries over the top of each serving.

4 large tart apples - peeled, cored and sliced 1/4 inch thick
2 teaspoons cornstarch
½ cup cold water
½ cup brown sugar
½ teaspoon ground cinnamon

Steps:

  • In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
  • Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

1/4 cup brown sugar
1/2 cup whole wheat flour (or white flour)
1/2 cup rolled oats
2 tablespoons fleishman's olive oil spread, you could use butter (or other healthy butter-like spread (not the kind with added water)
1 tablespoon honey
2 tablespoons cinnamon
cooking spray

Steps:

  • Preheat oven to 375°F.
  • Dice your apples and put them in the bottom of an 8x8-inch baking pan.
  • Mix the remaining ingredients, except for the honey and cooking spray. I start with a spoon and then use my fingers to get that butter mixed in thoroughly.
  • Spread the above mixture on top of the apples.
  • Spray with cooking spray and drizzle with honey.
  • Bake at 375°F for 35 minutes.

1 tablespoon plus 1/2 cup all purpose flour
2 1/2 pounds Granny Smith apples (about 5 large), peeled, quartered, cored, thinly sliced
1 cup frozen unsweetened raspberries (unthawed)
1/2 cup old-fashioned oats
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, diced
Vanilla ice cream or whipped cream

Steps:

  • Preheat oven to 350°F. Mix 1/2 cup golden brown sugar and 1 tablespoon flour in large bowl. Add apple slices and frozen raspberries and toss to coat. Transfer apple and raspberry filling to 8x8x2-inch glass baking dish.
  • Mix oats, cinnamon, salt and re-maining 1/2 cup golden brown sugar and 1/2 cup flour in medium bowl. Add chilled butter and rub in with fingertips until moist clumps form. Sprinkle oat topping evenly over filling.

1 1/3 cups all-purpose flour
1 cup rolled oats
3/4 cup packed dark brown sugar
1/4 cup granulated sugar
3/8 teaspoon ground cinnamon
3/8 teaspoon salt
1 cup unsalted butter, but into tablespoons, softened
1 1/3 cups pecans, toasted and chopped
1/2 cup granulated sugar
1 teaspoon ground cinnamon
5 lbs granny smith apples
1 cup dried cranberries
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 375°F Lightly butter a shallow 3 1/2 to 4 quart baking dish.
  • Topping: Combine flour, oats, sugars, cinnamon, and salt. Mix until well combined. Add butter. I use a mixer but you can use a food processor. Mix until it forms large clumps. With fingers work in the pecans.
  • Filling: Whisk together sugar and cinnamon in a large bowl. Peel, quarter, and core apples and then cut into chunks about 1/2 inch thick. Add apples, cranberries, and lemon juice to sugar mixture. Toss until well combined.
  • Assembly: Spread the apples in the buttered baking dish. Crumble topping evenly over them. Bake until topping is golden brown which takes about an hour and makes the house smell wonderful. Cool to warm and serve.

Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! 1 teaspoon cinnamon

Steps:

  • In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
  • Add sliced, unpeeled apples, cover, and saute, stirring frequently.
  • In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
  • When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
