2 onions, chopped (if very large, use only 1)
3-4 pounds beef bones that have cartilage and some meat on them (i.e. knuckle bones, shank bones, oxtail, rib bones, femur bones)
1 tablespoon turmeric powder
1 tablespoon sea salt
1 teaspoon black pepper

Steps:

  • Add all ingredients to a large pot (or pressure cooker) and add enough water to just cover the bones. Let it boil and once it boils, turn it off so you can skim any scum that may have surfaced. (This is optional but some believe it to be helpful in keeping the taste pure. Sometimes I do it and sometimes I don't. Totally up to you.)
  • If using pressure cooker like InstantPot, put it on the pressure cooker setting on high for 3 hours and allow the pressure to naturally release when it's done. If using a regular pot over the stove, let it simmer for 12-16 hours.If using a slow-cooker, let it simmer for 12-16 hours.
  • Strain the cooked broth to keep the liquid gold you've just made.

Whatever your reason for liking bone broth, a slow cooker makes it easy to cook-and eliminates the need to simmer a pot over an open flame for 12 plus hours. Enjoy it plain, or try a few of our tried-and-tested flavor additions to customize and brighten your cup.

3 pounds beef oxtails or short ribs
3 pounds beef bones, such as marrow, knuckle or neck bones
3 tablespoons tomato paste
3 medium carrots, cut into large pieces
3 stalks celery, cut into large pieces
1 onion, quartered
3 cloves garlic, smashed
5 sprigs fresh parsley
3 bay leaves
12 black peppercorns
1/2 cup apple cider vinegar
crushed lemongrass

Steps:

  • Preheat the oven to 400 F.
  • Arrange the oxtails and bones on a baking sheet and rub all of the pieces with the tomato paste. Roast the bones until very brown in spots, about 45 minutes.
  • Transfer the roasted bones to a 7-quart slow cooker. Use a metal spatula to scrape up any of the brown bits from the baking sheet and add them to the slow cooker, too. Nestle in the carrots, celery, onion, garlic, parsley and bay leaves. Toss in the peppercorns. Pour in the vinegar and 8 cups water (the water should just cover the bones and vegetables).
  • Set your slow cooker to low and cook anywhere from 12 to 24 hours, the broth will be deeper and stronger in flavor the longer it cooks.
  • Once you've decided the broth is ready, remove the insert and transfer the bones and pieces of meat to a baking sheet with tongs. Strain the remaining broth through a fine sieve. Let cool to room temperature. Let the bones cool and pick off and reserve any good-looking pieces of meat to add to soups and stews.
  • Store the bone broth in airtight containers for up to 5 days in the refrigerator or up to 3 months in the freezer. Serve hot with desired mix-ins.

1 meaty chicken carcass, plus any jellified roasting juices from it, skin and fat discarded
1 large onion , halved and sliced
zest and juice 1 lemon
2 bay leaves
1-2 red chillies , halved, deseeded and sliced
1 tsp ground coriander
½ tsp ground cumin
small pack coriander , stems and leaves chopped and separated
1 large garlic clove , finely grated
250g pouch wholegrain basmati rice

Steps:

  • Break the chicken carcass into a large pan and add the onion, 1.5 litres of water, the lemon juice and bay leaves. Cover and simmer for 40 mins. Remove from the heat and allow to cool slightly, to make things a bit easier to handle.
  • Place a colander over a bowl and scoop out all the bones into the colander. Pick through them, stripping off the chicken and returning it with any onion as you work your way down the pile of bones.
  • Return any broth from the bowl to the pan - and any jellified roasting juices - along with the chilli, ground coriander, cumin, coriander stems, lemon zest and garlic. Cook for a few mins until just bubbling - don't overboil as you will spoil the delicate flavours. Taste, and season only if you need to. Meanwhile, heat the rice following pack instructions, then toss with the coriander leaves. Ladle the broth into bowls and top with the rice.

Number Of Ingredients 11

4 pounds beef bones, preferably a mix of marrow bones and bones with a little meat on them, such as oxtail, short ribs, or knuckle bones (cut in half by a butcher)
2 medium unpeeled carrots, cut into 2-inch pieces
1 medium leek, end trimmed, cut into 2-inch pieces
1 medium onion, quartered
1 garlic head, halved crosswise
2 celery stalks, cut into 2-inch pieces
2 bay leaves
2 tablespoons black peppercorns
1 tablespoon cider vinegar
Special equipment:
6-quart (or larger) stockpot or a large slow cooker

Steps:

  • Preheat oven to 450°F. Place beef bones, carrots, leek, onion, and garlic on a roasting pan or rimmed baking sheet and roast for 20 minutes. Toss the contents of the pan and continue to roast until deeply browned, about 20 minutes more.
  • Fill a large (at least 6-quart) stockpot with 12 cups of water (preferably filtered) . Add celery, bay leaves, peppercorns, and vinegar. Scrape the roasted bones and vegetables into the pot along with any juices. Add more water if necessary to cover bones and vegetables.
  • Cover the pot and bring to a gentle boil. Reduce heat to a very low simmer and cook with lid slightly ajar, skimming foam and excess fat occasionally, for at least 8 but up to 24 hours on the stovetop. (Do not leave on stovetop unattended, simply cool and continue simmering the next day.) The longer you simmer it, the better your broth will be. Add more water if necessary to ensure bones and vegetables are fully submerged. Alternately, you can cook the broth in a slow cooker on low for the same amount of time.
  • Remove the pot from the heat and let cool slightly. Strain broth using a fine-mesh sieve and discard bones and vegetables. Let continue to cool until barely warm, then refrigerate in smaller containers overnight. Remove solidified fat from the top of the chilled broth.

1 turkey carcass, from a roasted bird (OK to have some meat and skin attached to the bones)
1 turkey giblets
1 large onion, coarsely chopped (or quartered)
6 garlic cloves, smashed
1 cup parsley (1 small bunch) (optional)
1 orange peel (optional) or 1 lemon peel (optional)
2 bay leaves (optional)
7 quarts filtered water
2 carrots, rough cut (optional)
2 celery ribs, rough cut (optional)

Steps:

  • Place the turkey carcass and giblets in a large stockpot. Add the onion, garlic, parsley, orange peel, and bay leaves, and cover with cold water.
  • Bring to a boil and reduce the heat to medium-low. Simmer for 8-10 hours (can use slow cooker for the long simmer on low).
  • Discard the solids and strain the broth through a fine-mesh strainer into a large container. Ladle the broth into mason jars. Once it's cool, you'll be able to remove the fat on the surface easily with a spoon. Enjoy and refrigerate or freeze the leftovers for later.

  • Arrange racks in upper and lower thirds of oven; preheat to 400 degrees F.

  • Combine carrots, celery, onions, tomatoes and garlic on a second rimmed baking sheet. Move the bones to the upper rack and place the vegetables on the lower rack. Roast until the bones are deep brown and the vegetables are starting to brown in spots, 30 to 45 minutes more.
  • Transfer the bones and vegetables to a 10- to 12-quart stockpot. Add 1 cup water to the bone pan and scrape up any browned bits with a wooden spoon; add to the pot. Add the remaining 15 cups water, vinegar, thyme, bay leaves, peppercorns and salt. Cover and bring to a boil over high heat. Reduce heat to maintain a low simmer and cook, covered, for 8 hours.
  • Remove the bones (if desired, remove any meat from the bones and save for another use). Strain the broth through a large sieve into a large bowl; discard the solids. Skim fat from the surface, if desired.

  • Next, cover the bones with water and add the apple cider vinegar. Cover the pot and cook on low heat for 24 hours. Check the broth occasionally, and add more water if it dips below the top of the bones.
  • When it's finished cooking, strain the broth into a large container. DO NOT feed the cooked bones to your dog. The cooking process makes the bones brittle, which could be very dangerous to your dog's digestive tract.
  • Allow the broth to cool and then refrigerate it for at least 3 hours. A fat layer will congeal on the top of the broth. Scoop the fat and throw it out, and then you are ready to serve the broth to your pup.

Steps:

  • Add the beef bones, bay leaves, sea salt, and apple cider vinegar to an Instant Pot. Add the water to just under the max capacity line. Close the lid and then close the vent to the Sealing position. Press the "Manual" button and set to 120 minutes on High pressure.
  • Allow the Instant Pot to naturally release before opening the lid. Remove and discard the beef bones and bay leaves.
  • Add the beef bones, bay leaves, sea salt, and apple cider vinegar to the slow cooker. Fill with water to cover.
  • Cook for at least 12 hours, or 24-48 hours for richer broth.
  • Add the bones to a large stockpot. Fill with water to cover, leaving room at the top of the pot to keep it from boiling over.
  • Heat on high to a rolling boil until you see foam rising to the top. Skim off any foam that you see and discard.

  • Cover a large bowl with a nut milk bag fitted over a fine-mesh strainer, and pour the bone broth through it to strain the liquid.
  • Allow broth to cool, then scrape off the fat layer from the surface and discard. Store the bone broth in mason jars in the refrigerator.
