Make your own animal crackers! Cut these tasty not-too-sweet cookies into animal shapes. Made with buttermilk, oats and honey.

½ cup rolled oats
¾ cup all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
¼ cup butter
2 teaspoons honey
¼ cup buttermilk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grind oats until fine using a blender or food processor.
  • In a medium bowl, stir together the blended oats, flour, baking soda and salt. Cut in the butter using a pastry blender or your fingers until the butter lumps are smaller than peas. Stir in the buttermilk and honey to form a stiff dough. On a lightly floured surface, roll the dough out to 1/8 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 inch apart onto cookie sheets.
  • Bake for 5 to 7 minutes in the preheated oven, until edges are lightly browned. Remove from cookie sheets to cool on wire racks.

If you use larger cookie cutters, you may need to bake on the longer end of the baking time-and mini cookie cutters on the shorter end. This makes a relatively small batch, so double it if you want extras to last all week!

1 cup whole-wheat flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1/4 cup unsalted butter (softened at room temperature)
2 tablespoons milk
2 tablespoons maple syrup
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375°F and line two baking sheets with parchment paper.
  • Place all ingredients into a bowl and use your hand to mix together to form a dough. (If the dough is a little crumbly, be sure that it's throughly combined and then if it's still crumbly, add 1/2-1 tablespoon additional milk until it comes together.)
  • Make a flattened disc of dough.
  • Roll the dough ¼-inch thick between two pieces of lightly floured pieces of parchment paper. (The flour will ensure that the cut outs are easy to move.)
  • Cut out the dough with a cookie cutter and transfer to the prepared baking sheets. Bake for 7-9 minutes, until lightly browned around the edges.
  • Remove from the oven, let cool on the baking sheet for a minute, and transfer to a wire rack to cool completely.

1/2 cup butter
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon salt
1 teaspoon baking powder
1/2 cup oats
1 1/2 cups flour
2 tablespoons cocoa powder (optional)

Steps:

  • Cream together the butter and brown sugar.
  • Add in the egg and vanilla and combine well.
  • Mix in the cinnamon, allspice, and salt.
  • Finally, add in the baking powder, oats, flour, and optional cocoa powder. Cocoa powder should be subbed for flour. Simply add the powder to your measuring cup and then fill the rest of the way up with flour.
  • Mix it up good and form into a ball. Store in the fridge for a minimum of one hour and up to overnight.
  • When ready, pull dough from fridge, grab off a hunk and roll it out to 1/4" thick.
  • Cut out crackers and place on a cookie sheet lined with parchment.
  • Bake for 5-7 minutes in an oven preheated to 350 degrees.
