1 lb beef stew meat
2-3 large russet potatoes (washed-peeled-chopped)
4 large carrots (washed-peeled-chopped)
2-3 ribs of celery (chopped)
2 large leek
1 large onion (chopped)
1 1/2 cup frozen peas and carrots (or just peas)
15 oz canned diced tomatoes
1 1/4 cup sliced mushrooms
2 tsp minced garlic
32 oz beef stock
1/3 all purpose flour
1 tsp crush basil
1 tsp Rosemary leaves
1/2 tsp oregano
2 tbsp salt free seasoning or 2 tsp salt
1/2 tsp ground black pepper
2 tbsp vegetable oil
2 tbsp cornstarch

Steps:

  • Pour vegetable oil into a skillet, and place over medium heat.
  • Coat the meat with the flour, and once the oil is hot brown the meat.
  • Remove the meat from the pan, and pour in the beef stock.
  • Toss the meat back into the pan, and cook for 2 minutes, then remove from the heat.
  • Toss all of the vegetables into the Crock-Pot, along with the meat, and seasonings.
  • Cook on high for 3 hours.
  • Dish out about 1 cup of beef stock, and add 2 tbsp of cornstarch to it. Whisk.
  • Pour the thickened stock back into the slow cooker. Mix, and let sit for 5-10 minutes.
  • Serve, and enjoy!

  • Layer the potatoes, carrots, onion and celery in a 5-qt. slow cooker. Place flour in a large shallow dish. Add stew meat; turn to coat evenly. In a large skillet, brown meat in oil in batches. Place over vegetables., In a large bowl, combine the tomatoes, broth, mustard, salt, pepper, thyme and, if desired, browning sauce. Pour over beef. 2 1/2 pounds boneless chuck roast
1 teaspoon kosher salt (divided)
1/2 teaspoon ground black pepper (divided)
1/4 cup white whole wheat flour (or all-purpose flour)
3 tablespoons extra-virgin olive oil (divided)
1 1/2 cups dry red wine
1 large yellow onion
3 celery stalks
2 cloves garlic
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
4 large carrots
2 parsnips
3/4 pound red potatoes (about 2 medium)
1 bay leaf
3 sprigs fresh thyme
3 to 4 cups low-sodium beef broth
1 1/2 cups fresh or frozen peas (no need to thaw)
Fresh parsley (optional for serving)

Steps:

  • Cut the beef chuck roast into 1-inch cubes, removing any large, tough pieces of fat or gristle. I found it easiest to cut it into 1-inch-thick large, round slices, then strips, then cubes. Place the cubes in a large bowl and sprinkle with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Sprinkle on the flour, then toss lightly to coat.
  • Place a large, deep Dutch oven over medium-high heat. Add 1 tablespoon of the oil. Once the oil is hot and shimmering (a drop of water should sizzle if added to the surface), add one-third to one-half of the beef. The cubes should be in a single layer and not too crowded so that they brown nicely. Let the cubes of beef cook undisturbed for 4 to 5 minutes (resist the urge to peek!), until the bottom of the cubes develop a dark-brown crust and come away from the pan easily. Turn and continue searing until dark and golden all over, about 4 to 5 additional minutes. Transfer the seared meat to a clean bowl or plate.
  • Add another 1 tablespoon olive oil to the pot, and once hot, sear the remaining beef, working in batches and ensuring that you do not overcrowd the pieces. It may take two or three batches total depending on the size of your pan. If the pan gets too dry, add a bit more oil as needed.
  • While the meat browns, dice the yellow onion and celery. Mince the garlic.
  • When the last batch of beef has been seared, transfer it to a plate and reduce the heat to medium.
  • Add the final tablespoon of olive oil to the pan. Add the onions and celery and cook until the onions are soft and translucent; about 7 minutes. Add the garlic and cook 30 seconds, until fragrant. Stir in the tomato paste, Worcestershire, and remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  • While the onions sauté, peel and dice the carrots and parsnips. Scrub the potatoes and cut into a rough dice. Set aside.
  • Increase the pan heat to medium-high heat and add the wine or beer (stand back, as it will sputter). Cook, letting the wine reduce and scraping up all of the brown bits from the pan. Continue to scrape and stir until the liquid is slightly reduced and thickened, 2 to 3 minutes.
  • Transfer the sautéed vegetables and any sauce from the pan to a 6-quart or larger slow cooker. Add the beef, carrots, parsnips, potatoes, bay leaf, thyme, and 3 cups beef broth. Stir to roughly combine.
  • Cover and cook on low for 6 1/2 to 8 hours or high for 3 1/2 to 4 1/2 hours, until the beef is cooked through and fall-apart tender. Remove the bay leaf and thyme stems and stir in the peas. If you'd like the stew thinner, add additional broth until it reaches your desired consistency. Taste and add additional salt or pepper as desired. Serve hot, garnish with fresh parsley.

1 1/2 pound chuck roast (cut into 1 1/2 inch pieces or pre-cut stew meat)
1/4 cup flour
2 teaspoons salt
1 teaspoon pepper
2 tablespoons olive oil
2 pounds Yukon Gold potatoes (halved or quartered depending on size)
1 pound baby carrots
2 tablespoons butter
1 yellow onion (diced)
3 cloves garlic (minced)
3 cans beef broth (approximately 40 ounces)
1 small can tomato paste
2 tablespoons Balsamic or red wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch (+ 2 Tbsp cold water)
1 tablespoon dried thyme
1 teaspoon dried parsley flakes
2 bay leaves
Fresh parsley (for garnish)

Steps:

  • Cut roast into 1 1/2 inch bite size chunks and place them in a gallon size resealable bag or other airtight container. Add flour, salt, and pepper. Shake bag until the meat is coated with flour.
  • Heat olive oil in a large heavy bottom skillet or pot. Add coated meat and brown each piece on all sides.
  • While meat is browning, cut potatoes and carrots and place both in the bottom of a crock pot. When meat is browned, layer the meat on top of the potatoes and carrots and leave remaining juices in the skillet.
  • Return the skillet to the stovetop and add butter. Melt the butter on medium-high heat, then saute onions and garlic. Stir in beef broth, tomato paste, red wine vinegar, and Worcestershire sauce. In a small cup, combine cornstarch and cold water. Mix until smooth then add to the liquid mixture in the skillet. This will thicken the liquid. Pour all the contents of the skillet over the meat and vegetables in the crock pot. Add thyme, parsley flakes, and bay leaves.
  • Cook on low for 7-8 hours or on high for approximately 4 hours. 30 minutes before serving check the taste of the broth and add salt, pepper, or seasonings as needed. Allow to cook for another 30 minutes after adding seasonings.
  • Remove bay leaves before serving. Garnish with fresh parsley.

1/2 pound cremini mushrooms, halved

Steps:

  • Toss the beef with the paprika, 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the beef and cook undisturbed until it begins to brown, about 3 minutes. Continue to cook, turning the beef as needed, until mostly browned, about 3 minutes more. Remove the skillet from the heat and transfer the beef to the insert of a 6-quart slow cooker; add the potatoes, mushrooms, carrots and onions and stir to combine.
  • Heat the remaining 1 tablespoon of oil in the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, thyme, caraway if using, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking; continue simmering and whisking until the gravy is smooth and thick, about 4 minutes.
  • Pour the gravy into the slow cooker, cover and cook on low for 8 hours. The meat and vegetables should be tender.

oil, for browning
1 large potato, peeled and cubed

Steps:

  • Toss stew meat with flour and brown in heated oil in a skillet.
  • Add the cooked meat and all other ingredients into a 4 Qt crock pot.
  • Stir well and cook on low 9-10 hours or on high 5-6 hours.
  • Turn crock pot off and enjoy!
  • I like my stew thick so after I turn the crock pot off I mix 1/2 cup of water with 2 tbsp of flour and stir into the stew.
  • I also like to add a small can of diced tomatoes at this time.
  • YUM!
  • Hint--one may substitue 1/2 cup of barley in place of the potato.

1 lb beef tips ((The package will either say beef tips or beef stew meat.))
10.75 oz can beefy mushroom soup
10.75 oz Can Cream of Mushroom Soup
1 oz ranch dip mix
1 oz brown gravy mix packet
6 medium Russet Potatoes (peeled and cubed)
16 oz bag baby carrots
4 cups Beef Broth
14.5 oz can stewed tomatoes (undrained)
Pepper Jack Cheese

Steps:

  • Put all of your ingredients, except the Pepper Jack cheese, in your 6 quart crock pot and stir until well combined.
  • Top everything with your Pepper Jack cheese, making sure your cheese does not touch your insert.
  • Cover and cook on low for 6-8 hours, stirring your cheese in with everything else about halfway through cooking time.
  • Stir again once your beef and veggies are done until your cheese is completely melted and mixed in.

This homemade family-style beef stew is made with potatoes, carrots, and seared stewing beef, along with stewed tomatoes and a variety of seasonings.

8 carrots
1 1/2 pounds potatoes (about 3 to 4 medium potatoes)
2 large onions
1 tablespoon vegetable oil
2 1/2 lbs. beef chuck
2 tablespoons all-purpose flour
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 (14.5-ounce) can stewed tomatoes (Italian seasoned or regular)
2 teaspoons Worcestershire sauce
Salt (to taste)

Steps:

  • Gather the ingredients.
  • Peel the carrots and slice them into 1-inch rounds.
  • Peel the potatoes and cut them into 1-inch chunks.
  • Peel the onions and chop them coarsely.
  • Cut the beef into 1-inch cubes.
  • Heat the vegetable oil in a skillet over medium-high heat. Add the beef and sear until it is well-browned on all sides.
  • Place half of the sliced carrots, potatoes, and chopped onion in the crock pot; top with the beef cubes.
  • In a small bowl, combine the flour, pepper, thyme, basil, and oregano; sprinkle over beef.
  • Add the remaining vegetables then top with the stewed tomatoes and their juices. Sprinkle with Worcestershire sauce.
  • Cover and cook on low for 8 to 10 hours, or until the meat is very tender.
  • Taste and add salt, as needed.
  • Serve the stew with a crusty no-knead bread or buttermilk biscuits .

1 16 oz. bag frozen mixed vegetables
1 small onion, finely diced
1 cup diced celery
1 large potato, peeled and diced in 1/2 inch cubes
3-4 cups beef broth
1 15 oz. can fire roasted diced tomatoes
1 1/2 tsp. dried Italian seasoning
1 bay leaf
2 sprigs of thyme
Salt and pepper (to taste)

Steps:

  • Add all the cubed beef, bag of frozen vegetables, diced onion, celery and potatoes to the slow cooker. Pour in the beef broth and stir. Add more liquid if you prefer.
  • Add the can of diced tomatoes and Italian seasoning, and stir. Place the bay leaf and sprigs of thyme in the liquid.
  • Put the lid on your slow cooker. Cook on LOW for 7-8 hours or HIGH for about 3-4 hours.
  • Taste and add salt and pepper to taste before serving.

  • Start out by cooking your ground beef if you need to and drain to remove the grease.

1 pound of stew meat (cooked or uncooked) or leftover pot roast
1 1/2 cups of corn
1 1/2 cups of cut green beans
1 1/2 cups of potatoes, chopped in bite sized pieces
2 cups of baby carrots
1 small can of tomato sauce
1 tsp salt
1 tsp pepper
1 tsp dried onion flakes or 1/2 fresh onion, chopped
1 packet of MSG free beef bouillon cubes or packets or organic beef broth (reduce water if you use broth)
3 cups of water

Steps:

  • Add all ingredients to the Crock Pot and stir to combine. Cook on high for 8-9 hours. To cook on low, make sure it cooks 10-12 hours or longer, depending on how done you like for your carrots to be.

2 cups 500 mL sliced celery
2 cups 500 mL baby carrots
1 small onion, cut into wedges
2 bay leaf
1 1/2 lb 681 g 1" (2.5 cm) beef for stew, cubes
1/4 cup 60 mL all-purpose flour
1/4 tsp 1 mL ground black pepper
1 tbsp 15 mL canola oil
2 cups 500 mL CAMPBELL'S® Ready to Use 30% Less Sodium Beef Broth
1/2 tbsp 8 mL Worcestershire sauce
1 tbsp 15 mL chopped fresh thyme leaves
2 cloves garlic, minced

Steps:

  • Combine vegetables in 4½ qt (4.3 L) slow cooker. Add bay leaves.
  • Place stewing beef, flour and pepper into a sealable plastic bag and toss to coat beef.
  • Brown beef well on all sides in heated oil over medium-high heat in large non-stick skillet. Place beef on top of vegetables in slow cooker.
  • Add broth, Worcestershire sauce, thyme and garlic to skillet and combine well with pan drippings. Pour mixture over beef and vegetables.
  • Cook, covered, on HIGH setting for 4 hours* or until the beef reaches internal temperature of 165°F (74°C) and is fork-tender. Discard bay leaves before serving.
