BANANA APPLESAUCE CAKE
"THIS CAKE was always my mother's special treat for her six children. It's a delectable 'mountain' of cake and fruit, and very moist."

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk. Beat in extracts. Combine flour and baking powder; add to creamed mixture alternately with milk, beating well after each addition., In a small bowl, beat egg whites until soft peaks form; gently fold into batter. Pour into three greased 9-in. round baking pans. Bake at 350° for 25-30 minutes or until cake tests done. Cool for 10 minutes; remove from pans to wire racks to cool completely. , Divide applesauce and spread over two cake layers. Dip bananas in lemon juice; arrange over applesauce. Stack on serving plate with plain layer on top. , For frosting, in a large heavy saucepan, combine the sugar, egg whites, water, cream of tartar and salt over low heat. With a hand mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 8-10 minutes. , Pour into a large bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes. Frost sides and top of cake. Sprinkle with coconut. Store in the refrigerator.

APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- Preheat oven to 350 degrees F.
- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
BANANA-PINEAPPLE CAKE
You can use Sunsweet Lighter Bake butter and oil replacement or make the fruit puree fat replacement or just add apple sauce in-place of the oil if you're looking for lighter fare... this is just the original recipe as given by my friend's wife Linda Tate. Being diabetic, I also use the splenda sugar replacement instead of regular granulated.

- Preheat oven to 350°F.
- In a mixing bowl, thoroughly stir together the flour, sugar, salt and baking soda.
- Make a well in the center of the dry ingredients.
- In another bowl, combine eggs, bananas, oil (or replacement), undrained pineapple and vanilla. Add all at once to dry ingredients, stirring until moistened.
- Pour batter into a greased and floured 10 inch fluted tube pan. Ensure sides are slighly higher than center.
- Bake at 350 F for 65 - 70 minutes or until cake tests done by insertion of a toothpick that comes out dry without any wet batter attached.
- Cool in pan for 15 minutes; remove and cool on wire rack. Sprinkle with powdered sugar or drizzle with a powdered sugar glaze, if desired.

- Preheat oven to 350.
- Place bananas in a large bowl and mash with electric mixer.
- Stir in sugar and let stand 15 minutes.
- Add applesauce and eggs and beat well.
- Add remaining ingredients and mix well.
- Pour into greased 9x5 loaf pan.
- Bake for 45 minutes, or until wooden toothpick inserted in center comes out clean.
- Remove from oven and let stand 10 minutes before removing from pan, cool on wire rack.

BANANA APPLESAUCE
I read about this side dish on another site and was intrigued. I had never heard of this combination before, you see. When I googled for the recipe, I got two versions, the one below which is from vegweb.com, and a much simpler one, which, I confess, is the one I tried. For this version you peel a banana and mash it in a bowl with a fork or potato masher. (You can soften the banana in the microwave by heating it for 20 seconds, if needed.) Add a can of applesauce to the mashed banana. You can puree the mixture or simply mash it with the potato masher which will usually get the mixture smooth.

- Peel, quarter, core and slice apples. Chop bananas. Combine both in in a large saucepan; add remaining ingredients.
- Bring to a boil; cover and simmer for 5 minutes or until apple is pulpy. Reduce heat to low or medium and whisk/stir until pretty well mashed; remove from heat and continue whisking/mashing until it is as smooth as you like it.
