Juice of 1/2 lime
1 small garlic clove, minced
Pinch of cayenne pepper
Coarse salt
1 firm, ripe avocado, halved and pitted
1/2 yellow bell pepper, ribs and seeds removed, diced
6 cherry tomatoes, halved
1 scallion, trimmed and thinly sliced
1 tablespoon chopped fresh cilantro leaves, plus whole leaves for garnish

Steps:

  • 1. In a small bowl, whisk together olive oil, lime juice, garlic, and cayenne. Season with salt.
  • 2. Scoop out flesh from avocado halves, reserving shells, and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and chopped cilantro.
  • 3. Drizzle with dressing and season with salt. Gently stir to combine. Spoon mixture into reserved shells. Garnish with whole cilantro leaves and serve immediately.

1 ripe avocado, halved and seeded
1/2 yellow bell pepper, stem and seeds removed, diced (or red or green)
6 cherry tomatoes, halved
1 scallion, thinly sliced
1 tablespoon freshly chopped cilantro, plus leaves for garnish

Steps:

  • In a small bowl, whisk together oil, lime juice, garlic, and cayenne. Season with salt.
  • Scoop out meat from avocado halves and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and cilantro.

  • In a small bowl, whisk together the mustard, olive oil, balsamic vinegar and pepper. Arrange the slices of avocado and tomato alternately like the spokes of a wheel on one big serving plate, or individual plates. Drizzle lightly with the dressing, and serve immediately.

1/4 teaspoon table salt

  • * Place a medium saucepan filled with water over high heat; bring to a boil. Add beets, bring back to a boil and reduce heat to medium; simmer until beets pierce easily with the point of a sharp knife, about 25 minutes.

1/2 cup olive oil
1/3 cup lime juice
1/4 teaspoon liquid hot pepper sauce (we use louisiana red hot)
1 teaspoon sugar
1/2 teaspoon paprika
1 teaspoon onion, minced
2 medium avocados
2 cups pineapple chunks, drained
2 medium tomatoes, cut in thin wedges

Steps:

  • Make lime dressing: In a jar with a tight-fitting lid, combine all dressing ingredients; shake well. Refrigerate at least 1 hour. To make salad: Peel avocados; remove pits; cut into cubes. In medium bowl, combine avocado cubes and pineapple chunks. Pour dressing over all. Refrigerate 1 hour. To serve: Arrange avocado and pineapple on 6-8 individual serving plates. Circle each serving with tomato wedges. Cook time is refrigerating time.
