My Version Hamburger Helper image

I made this recipe up because while I like Hamburger Helper, I just don't think it's all that healthy.

1 lb extra lean ground beef
2 1/2 cups pasta
1 (10 ounce) can tomato sauce
1 (6 ounce) can cheddar cheese soup
1/2 cup milk
1/2 cup diced onion
1/2 cup chopped mushroom
1/2 cup chopped bell pepper
1/2 cup chopped celery
chili powder, garlic powder, Italian seasoning, salt and pepper to taste

Steps:

  • Brown the beef and drain if needed in a large skillet. Add vegetables and cook through.
  • Add the pasta, tomato sauce, milk and seasonings. Bring to a boil.
  • Cover and simmer, stirring occasionally until pasta is cooked - approximately 12 minutes.

This one-pot dinner will have you feeling nostalgic for the boxed version without the preservatives and additives.

Number Of Ingredients 16

8 oz bacon, chopped
1 small yellow onion, chopped
½ cup red bell pepper, minced
1 cup shredded carrot
2 cloves garlic, grated
1 lb lean ground beef
kosher salt, to taste
1 tablespoon smoked paprika
2 tablespoons tomato paste, preferable double-concentrated
1 can diced tomato, petite
3 cups beef stock
2 cups whole milk
1 lb pasta shells, or short noodles of choice
2 cups shredded smoked gouda cheese
2 cups shredded cheddar cheese
fresh parsley, for garnish

Steps:

  • Add the bacon to a large pot. Turn the heat to medium-high and cook until crispy, 5-7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain. Discard all but 1 tablespoon of the rendered bacon fat in the pot.
  • Reduce the heat to medium and add the onion to the pot. Cook until softened, 5-7 minutes. Add the red bell pepper, carrots, and garlic. Cook until softened, 2-3 minutes more.
  • Increase the heat to medium-high and add the ground beef to the pan. Break up the beef with spatula and cook until browned, about 5 minutes. Season with salt.
  • Add the paprika and tomato paste. Cook until fragrant and the tomato paste turns brick-red in color, 2-3 minutes. Add the diced tomatoes, beef stock, and milk and bring to a low boil.
  • Once the liquid is boiling, add the pasta shells. Cover and cook for about 10 minutes, stirring occasionally, until the noodles are al dente and they have absorbed most of the liquid. NOTE: The timing will differ depending on what type of noodles you use.
  • Remove the pot from the heat. Stir in the Gouda and cheddar cheeses until melted. Fold in the cooked bacon.
  • Garnish with parsley, if desired.
  • Serve immediately.
  • Enjoy!

  • Increase heat to medium-high and add the ground beef. With the back of a large spoon or a sturdy spatula, break the meat into small pieces. Continue to brown, stirring periodically, until the meat is browned and cooked through, about 6 minutes.
  • Remove pan from the heat and carefully drain off any excess fat, leaving just a little bit in the pan to keep the meat moist (if you are using meat that is 93% lean, you likely will not need to drain it).

  • Heat olive oil in large skillet over medium high heat and add ground beef. Break into chunks with a wooden spoon and cook, stirring often, for about 5 minutes.
  • Add onion and cook for another 5 minutes or until beef is cooked through and onion is softened.
  • Add broth, water, ketchup, tomato paste, garlic powder and salt and pepper and stir to combine. Add macaroni and bring to a boil then reduce to simmer and cook for about 10 minutes or until macaroni is al dente and liquid has reduced.
  • Meanwhile, melt butter in another pan over medium high heat. Add flour and whisk for 1-2 minutes or until flour is cooked through. Add milk and whisk until smooth. Cook until sauce begins to thicken, about 4-5 minutes. Remove from heat and add cheese. Stir until cheese is melted and sauce is smooth.
