HOLLYWOOD CHEESECAKE
You've heard of New York cheesecake, well this is Hollywood cheesecake. It's rich, creamy and easy to make.

Steps:
- 1. Crust: Combine crumbs, sugar and butter; press onto bottom of 9 inch spring form pan. Bake at 325 degrees for 10 minutes.
- 2. Combine cream cheese, sugar, juice, peel and vanilla, mixing at medium speed on electric mixer until well blended. Add egg yolks, one at a time, mixing well after each addition. Beat egg whites until stiff; fold into cream cheese mixture. Pour over crust. Bake at 300 degrees for 45 minutes.
- 3. Combine sour cream, sugar and vanilla. Carefully spread over cheesecake; continue baking for 10 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill.

- Heat oven to 325°F.
- Combine graham crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan.
- Beat cream cheese, 1 cup sugar and vanilla with Mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
- Bake 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

- Preheat the oven to 325F. Line a 9x5 inch metal loaf pan with non-stick foil or line with regular foil and spray foil with cooking spray.
- In a food processor, process the graham crackers to make about ½ cup of crumbs. Add the butter and sugar and process until mixed. Press mixture into bottom of loaf pan and bake for 10 minutes.
- Clean out the food processor with some water. Add the cream cheese and sugar and process until smooth, stopping to scrape bowl if necessary. Add the lemon juice, lemon zest and vanilla and process to blend, then add the egg yolk and process. In a separate bowl, whip the egg white until stiff. Fold the cheesecake batter into the egg white (or vice versa) and then transfer it to the loaf pan.
