I found this refreshing twist on coleslaw at a local grocery store and tweaked it to fit my family's taste. You can substitute raisins for dried cranberries. When it's available, I use a prepared apple cider salad dressing to make this dish even easier! -Susan Bickta, Kutztown, Pennsylvania

1 package (14 ounces) coleslaw mix
1-1/4 cups chopped fresh kale
1 cup crumbled Gorgonzola cheese
1 cup dried cranberries
1/3 cup finely chopped red onion
1 cup mayonnaise
2 tablespoons sugar
2 tablespoons thawed apple juice concentrate
4-1/2 teaspoons cider vinegar
1/8 teaspoon salt

Steps:

  • Place first 5 ingredients in a large bowl. In another bowl, whisk remaining ingredients. Pour over coleslaw mix; toss to coat. Refrigerate, covered, at least 2 hours before serving.

Apples give this slaw extra crunch and sweetness. Chose a firm apple, like a Granny Smith, that will stand up to the dressing.

1 head green cabbage, shredded
2 carrots, cut into matchsticks
2 apples, cut into matchsticks
2 tablespoon cilantro or parsley, finely chopped
¼ cup olive oil
¼ cup apple cider vinegar
¼ cup sugar
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • 1. In a large bowl toss, cabbage, carrots, apples, and cilantro. 2. In a small bowl whisk oil, vinegar, sugar, and salt together. Pour dressing over veggies and toss. Sit for 15 minutes before serving.

This recipe can be prepared in 45 minutes or less.

Number Of Ingredients 8

3/4 cup clear apple cider or apple juice
3/4 cup plain nonfat yogurt
2 tablespoons chopped fresh flat-leafed parsley leaves
2 tablespoons finely chopped fresh dill leaves
1/2 medium head red cabbage (about 1 pound)
1 large fennel bulb (sometimes called anise; about 1 pound)
1/2 English cucumber
2 Granny Smith apples

Steps:

  • In a small saucepan boil cider or juice until reduced to about 3 tablespoons, about 15 minutes. Cool cider or juice slightly and in a bowl whisk together with yogurt, parsley, and dill. Dressing may be made 1 day ahead and chilled, covered.
  • Halve cabbage lengthwise and with a mandoline or sharp knife cut crosswise into very thin shreds. Trim fennel stalks flush with bulb, discarding stalks, and cut fennel and cucumber into 1/4-inch dice. Vegetables may be prepared up to this point 4 hours ahead and chilled separately, covered.
  • Just before serving, cut apples into julienne strips and transfer with vegetables to a large bowl. Toss salad with dressing.
