Easy, healthy and delicious, this crock pot wild rice is a keeper in my book.

1 cup wild rice, uncooked
1/2 cup sliced fresh mushrooms
1/2 cup diced onion
1/2 cup diced green, yellow or red bell pepper (I had a package of multi-colred mini peppers so I used a combination)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2-1/2 cups fat-free low sodium vegetable or chicken broth

Steps:

  • Ideal slow cooker size: 2-Quart.
  • Layer the rice, mushrooms, onion, and pepper in the slow cooker.
  • Drizzle the olive oil over. Sprinkle with salt and pepper. Pour the broth over the rice and vegetables.
  • Cover and cook on LOW 4 to 6 hours, OR on HIGH for 2-1/2 to 3 hours, OR until rice and vegetables are tender and liquid is absorbed.

1 pound bulk pork sausage
4 celery ribs, chopped
1 small onion, chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup uncooked wild rice
1 can (4 ounces) mushroom stems and pieces, drained
3 cups chicken broth

Steps:

  • In a large skillet, cook and crumble sausage with celery and onion over medium heat until sausage is no longer pink and vegetables are tender, 6-8 minutes; drain. Transfer to a 3-qt. slow cooker. Add soups, rice and mushrooms. Stir in broth., Cook, covered, on low until rice is tender, 4-5 hours.

This looks just like a recipe I recently had at a potluck but didn't get the recipe. I found this on the Betty Crocker website. I hope it's a match. Make this hot and hearty soup the mainstay of a simple meal. Serve with whole-grain rolls or assorted crackers.

1 teaspoon vegetable oil
1 medium onion, chopped (1/2 cup)
2 medium celery ribs, diced (1 cup)
2 medium carrots, diced (1 cup)
1 cup smoked turkey, diced
1/2 cup wild rice, uncooked
1 teaspoon dried tarragon leaves
1/4 teaspoon pepper
2 (14 1/2 ounce) cans chicken broth
1 (12 ounce) can fat-free evaporated milk
1/3 cup all-purpose flour
1 cup frozen sweet peas, thawed
2 tablespoons dry sherry, if desired

Steps:

  • In 10-inch skillet, heat oil over medium heat. Cook onion in oil about 4 minutes, stirring occasionally, until tender.
  • Place onion, celery, carrots, turkey, wild rice, tarragon and pepper in 3 1/2- to 4-quart slow cooker. Pour broth over top.
  • Cover and cook on low heat setting 6 to 8 hours or until wild rice and vegetables are tender. Stir in peas last 15 minutes of cooking.
  • Mix milk and flour; stir into soup. Cover and cook about 20 minutes or until thickened.

I had some leftover chicken from Sunday Dinner that I wanted to use and found this recipe from Little Spice Jar. She used Trader Joe's 21 Spice Salute and I used a Spicy Poultry Rub Mix recipe . See Note.

1 cup wild rice, uncooked
2 cups chicken, shredded
1 cup onion, chopped
3/4 cup celery, chopped
3/4 cup carrot, chopped
4 -5 garlic cloves, minced
2 bay leaves
6 cups low sodium chicken broth
2 cups water
2 tablespoons poultry seasoning
3 tablespoons butter
2 tablespoons olive oil (or substitute more butter)
1/2 cup all-purpose flour
2 cups milk

Steps:

  • Rinse wild rice under running water. Place the uncooked rice, chicken breast, onions, celery, carrots, garlic, bay leaves, chicken broth, water, and poultry seasoning in a slow cooker. Cover and cook on the high setting for 3-4 hours or on the low setting for 7-8. In the last ½ hour of cooking, remove the chicken from the slow cooker. Allow to cool slightly before shredding using two forks.
  • When the rice is done cooking, add the shredded chicken back into the slow cooker. Melt the butter and oil in a saucepan. Add the flour and let the mixture cook for 1 minute. Whisk the mixture slowly while adding in the milk. Continue to whisk until all lumps have dissolved. Allow the mixture to thicken and become creamy.
  • Add this creamy mixture to the slow cooker. Stir to combine. Add additional water or milk to your preference if the consistency is too thick. Season with salt and pepper to taste.
  • Note : Spicy Poultry Rub , 3/4 cup paprika,1/4 cup black pepper,1/4 cup celery salt,1/4 cup sugar,2 TBSP each onion powder, dry mustard, cayenne pepper, lemon zest, Make 2 cups of Spine Mix.

2 cups wild rice, uncooked but rinsed well
1/2 cup slivered almonds (I personally don't add these) (optional)
1/2 cup chopped onion
1/2 cup chopped celery
1 (8 ounce) can mushrooms, drained
2 cups cut up chicken (rotisserie works well too)
6 cups chicken stock or 6 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 tablespoon parsley

Steps:

  • Wash and drain rice.
  • Combine all ingredients in slow cooker and mix it up well.
  • Cover and cook on low 4-6 hours.
  • DO NOT REMOVE LID BEFORE RICE HAS COOKED 4 HOURS.

Steps:

  • In slow cooker, combine the water, broth, cream of chicken soup, uncooked wild rice, thyme, and pepper.
  • Cover and cook on LOW for 7 to 8 hours or on HIGH for 3-1/2 to 4 hours.
  • To serve, stir in chicken and spinach.

I found this on a card supplied at the butcher's counter at Harris Teeter Grocery. The only change I made was to omit the marjoram leaves due to personal preference but I've added it back to the recipe as an option here. If you don't have bone-in chicken breasts you can use bone-in chicken thighs (about 10 thighs or 3 1/2 lbs). Remember to remove the skin of the chicken and any really visible fat deposits.

6 slices bacon, diced
1/2 cup sweet onion, chopped
1/4 cup celery, finely chopped
1/4 cup red bell pepper, chopped (optional)
5 cups water
2 cups uncooked wild rice, rinsed and drained
2 (10 3/4 ounce) cans cream of chicken soup (or may use cream of mushroom soup)
3 tablespoons soy sauce
1/2-1 teaspoon dried marjoram (optional)
1/2 teaspoon ground pepper
3 lbs bone-in skinless chicken breast halves, remove skin and visible fat from chicken

Steps:

  • In a large skillet, cook bacon until crispy. Add onion, celery and red bell pepper to skillet and cook & stir until tender.
  • Remove to a large bowl and blend the veggies/bacon mixture, water and all other ingredients (EXCEPT chicken) together.
  • Place chicken into a lightly sprayed slow cooker and pour rice mixture over the chicken - mixing well.
  • Cover and cook on low 5-7 hours or until chicken is completely cooked and rice is tender.

  • Wild rice will burst open when it’s done, so you’ll have a good idea of when it's fully cooked by looking at it. Once you see that the rice has burst open, give it a taste. If it’s still a little too crunchy for you, you can continue to cook the rice; checking every 15 minutes or so. Also, a good indicator that the dish is done is that the majority, if not all, of the broth will absorbed. If there is a little extra broth, that’s okay. You can easily strain the rice after its' done cooking so you don’t have leftover broth in your pilaf.
