With Creole seasoning, turkey sausage, vegetables, and rice, my Cajun-style easy homemade recipe for dirty rice is a flavorful weeknight supper idea.

4-5 cups cooked rice
1 pound uncooked turkey sausage (or ground beef)
1-3 tablespoons Creole seasoning* (I use Tony Chachere's)
1 celery stalk, chopped
1 small onion, chopped
1/2 bell pepper, chopped
2 tablespoons chopped or minced garlic
4 tablespoons fresh chopped parsley (or 2 tablespoons dried parsley)

Steps:

  • In a large skillet over medium heat, place celery, bell pepper, garlic, onion, parsley, and sausage. Break up the sausage and cook all, stirring regularly, until sausage is fully cooked and vegetables are tender.
  • Add the Creole seasoning and stir. Then stir in the rice and continue cooking over medium heat until rice is heated through, stirring well the whole time.

Classic Louisiana-style seasonings are the key ingredients in the best Cajun dirty rice recipe. Think of dirty rice as a Cajun rice pilaf. Don't knock it until you try it!

1 1/2 cup long-grain rice (Carolina, basmati, jasmine, etc)
2 cups chicken broth
2 cups water
3 tablespoons extra virgin olive oil
1/2 pound ground pork
1/2 cup chicken livers
3 slices of bacon, chopped
1/2 onion, chopped
2 celery stalks, chopped
1/2 green bell pepper or 1-3 jalapeños, seeded and chopped
1 tablespoon Cajun seasoning
2 green onions, chopped

Steps:

  • Cook the rice: Cook the rice according to the package instructions, but use chicken broth for one third of the cooking liquid. So, for example, if the package says to use 3 cups of water for 1 1/2 cups of rice, use 2 cups of water and 1 cup of chicken broth. Once the rice has finished cooking, remove from heat and let sit for 5 minutes. Turn the rice out onto a sheet pan and drizzle 1 tablespoon of olive oil over it. Mix to combine and let cool.
  • Mash or purée the chicken livers: While the rice is cooking, mash and finely chop the chicken livers, or purée briefly in a blender.
  • Cook the bacon until crispy: In a large pan that can eventually hold the rice plus everything else, put 1 tablespoon of oil plus the bacon in and cook over medium-low heat until the bacon is crispy.
  • Brown the pork and vegetables: Add the ground pork and increase the heat to high. Allow the meat to brown before stirring. As soon as the pork starts to brown, add the final tablespoon of oil and add the celery, jalapeños, and onions. Brown them all over medium-high heat. You may notice the bottom of the pan getting crusty. Keep it from burning by lowering the heat if needed. Add the minced liver and cook for a few minutes more.
  • Deglaze the pan: Add the remaining cup of chicken broth and deglaze the pan by scraping the bottom of the pan with a wooden spoon.
  • Add seasonings and cooked rice: Add the Cajun seasoning and turn the heat to high. Boil away most of the chicken stock and then add the cooked rice. Toss to combine.
  • Turn off the heat and add the green onions: Toss once more to combine and serve hot.

Dirty rice is a classic Cajun recipe made with chicken livers, ground meat, vegetables, and spices. These ingredients give the rice a "dirty" color.

3 1/2 cups chicken broth (or beef broth)
3/4 pound chicken gizzards
2 tablespoons bacon drippings (or oil)
4 tablespoons butter (divided)
1/2 pound ground pork (or pork sausage)
1/2 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped green bell pepper (or a combination of red and green)
2 cloves garlic (minced)
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon cayenne pepper (or a dash of Tabasco sauce )
1 1/2 cups long-grain white rice
1/2 pound chicken livers (minced)

Steps:

  • Gather the ingredients.
  • In a large saucepan over high heat, bring the chicken broth to a boil.
  • Add the chicken gizzards to the broth and reduce the heat to low; simmer for 30 minutes.
  • Remove the gizzards with a slotted spoon and grind or chop them very finely. Reserve the broth.
  • Add the bacon drippings or oil and 2 tablespoons of the butter to a Dutch oven or flameproof casserole over medium heat. Once the oil and butter mixture is hot, add the ground pork and ground or chopped gizzards.
  • Cook, stirring frequently until browned.
  • Lower the heat. Add the onions, celery, bell pepper, garlic, salt, pepper, paprika, and cayenne. Stir and continue cooking until the vegetables are tender, 5 to 7 minutes.
  • Add the rice and reserved broth and then quickly bring to a boil. Heat the oven to 250 F.
  • Stir, cover, and reduce the heat to low. Simmer for 15 minutes, or until the rice is tender.
  • Melt the remaining 2 tablespoons of butter in a skillet and sauté the minced chicken livers for 3 minutes.
  • Toss the minced chicken livers with the rice, taste for seasoning, and adjust with more salt and pepper as needed.
  • Cover the pan and place it in the preheated oven for 10 minutes.
  • Fluff with a fork. Serve and enjoy.

¼ pound chicken gizzards, rinsed
½ pound chicken livers, rinsed and trimmed
1 tablespoon vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
2 cups uncooked white rice
4 cups chicken broth
salt to taste
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 cup thinly sliced green onions

Steps:

  • Pulse gizzards in food processor, then pulse livers.
  • Heat oil in a large saucepan. Saute onion and gizzards over medium heat, stirring constantly, until meat begins to brown (about 5 minutes). Add livers and garlic and cook, stirring constantly, until brown (about 3 minutes).
  • Add rice and stir until coated with oil. Add broth, salt, pepper and cayenne pepper. Bring to a boil, then reduce heat to simmer. Cover and cook about 20 minutes, until rice has absorbed liquid. Sprinkle with green onion and serve.

1 lb bulk pork breakfast sausage (jimmy dean, hot or mild)
1 lb chicken livers, chopped fine or ground
1 lb ground beef
2 Tbsp worcestershire sauce (lea & perrins)
1 medium green bell pepper, diced
1 large onion, diced
2 stalk(s) celery, chopped fine
2 c converted long grain rice (zatarain's or uncle ben's)
1 bunch green onions, sliced thin
3 clove or "toes" garlic, minced
salt, black & cayenne pepper to taste
1 can(s) (14.5 oz) low sodium beef broth
1 can(s) (14.5 oz) low sodium chicken broth
3-4 oz water or as needed
2 tsp cajun/creole seasoning, or to taste
1/2 tsp sage *see cook's notes
2-3 bay leaves
1 1/2 c fresh chopped flat leaf parsley

Steps:

  • 1. In a large Dutch oven or saucepan, over medium-high heat, sauté the sausage, beef, and livers until no pink remains. Drain all but 3 Tbsp from the pan. (If sausage is very lean add bacon grease or butter to pan to make 3 Tbsp.)
  • 2. Add the bell pepper, onions, and celery. Season with salt and black pepper to taste.
  • 3. Cook for 5-7 minutes until the veggies begin to soften and brown. Add the rice, green onions, and garlic; continue to stir for 1-2 minutes until the rice begins to toast or turn brown.
  • 4. Add the worcestershire sauce, beef & chicken stock, creole seasoning, sage, and bay leaves. Mix well, turn the heat to low, cover and simmer for 20 minutes.
  • 5. Cook until the rice is fully tender and the broth has been absorbed. Stir well and remove from heat, then stir in the chopped parsley.
  • 6. *Cooks Notes: Don't let the Sage scare you off because you don't taste the small amount of sage in this recipe but it does make a difference in the taste, so don't leave it out. I personally do not like sage in anything, but this recipe is the exception. Some people like to put diced pork or Andouille sausage in their Dirty Rice, which is fine - almost anything goes, however, adding sausage or tomatoes will lean the dish towards a Jambalaya. Dirty Rice shouldn't be too wet or gummy, the grains should separate easily and still be moist enough to hold together on your fork.

Steps:

  • Heat oil in a large skillet over medium-high heat. Add beef and sausage; cook and stir, breaking into small pieces, until they begin to brown, about 5 minutes. Add onion, bell peppers, celery, and garlic. Continue to cook and stir until meat is fully browned, 3 to 4 minutes more. Stir in soy sauce, black pepper, paprika, oregano, Cajun seasoning, chili powder, garlic powder, and salt.
  • Stir in broth and bay leaves. Let simmer for 6 to 8 minutes. Fold in rice, 1 cup at a time, until fully coated. Mix in parsley. Simmer for 6 to 8 more minutes. Discard bay leaves and serve.
