Yield Makes about 3 dozen

Number Of Ingredients 13

Unsalted butter, softened, for baking sheet
2 cups raisins (about 13 ounces)
1 cup sugar
1 teaspoon cornstarch
1/2 cup apple cider
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons coarse salt
1 1/4 cups vegetable shortening
1 1/4 cups packed light-brown sugar
1 large egg
1 1/4 teaspoons pure vanilla extract
2 1/2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees. Butter a 10-by-15-inch rimmed baking sheet. Line bottom with parchment paper, and butter parchment; set sheet aside.
  • Make filling: Pulse raisins and sugar in a food processor until almost pureed. Transfer to a saucepan. Whisk cornstarch into 1 cup cold water; whisk into raisin mixture. Stir in cider. Simmer over medium-low heat, stirring occasionally, until mixture thickens and sugar has dissolved, about 6 minutes.Let cool completely.
  • Make dough: Whisk together flour, baking soda, and salt in a medium bowl; set aside. Put shortening in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Add brown sugar, and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Mix in oats.
  • Press half the dough into prepared baking sheet. Spread raisin filling evenly over top of dough. Crumble remaining dough on top of filling using your fingers, gently pressing down so that topping covers filling. Bake, rotating sheet halfway through, until top is golden brown, about 35 minutes. Let cool completely in sheet on a wire rack. Cut into 2-inchsquares. Bars can be stored between layers of parchment in airtight containers at room temperature up to 5 days.

1 cup raisins
1 cup water
1/2 cup salad oil or 1/2 cup shortening
1 slightly beaten egg
1 cup sugar
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1/2 teaspoon clove
1/2 cup walnuts, chopped

Steps:

  • Combine raisins and water in a saucepan; bring to a boil. Remove from heat. Stir in salad oil, cool to lukewarm. Stir in sugar and egg. Sift together dry ingredients; beat into raisin mixture. Stir in nuts. Pour batter into greased 9 x 13" pan. Bake at 350* for 20 minutes or until done. When cooled cut into bars. Dust with powdered sugar.

1 cup sugar
1 cup raisins
1 cup cold water
1/2 cup butter
1 teaspoon cinnamon
1/2 teaspoon clove, ground
1/2 teaspoon nutmeg
1/4 teaspoon salt
2 cups flour, all purpose
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon vanilla
3/4 cup brown sugar
1/2 cup walnuts, chopped
1/4 cup flour, all purpose
2 tablespoons butter, melted
1 tablespoon cinnamon

Steps:

  • In a medium sauce pan over medium high heat add the sugar, raisins, water, butter, cinnamon, clove, nutmeg and salt.
  • Bring to a boil and gently boil for 3 minutes.
  • Remove from heat and let cool (about 20 minutes).
  • Preheat oven to 350°.
  • Add other ingredients (except for the topping), to sauce pan and blend well.
  • Spread in greased 10x15 pan.
  • Combine all topping ingredients in a small bowl.
  • Crumble topping over and press down slightly.
  • Bake at 350° for 15-20 minutes.
  • Cool before cutting.

1 1/4 cups all-purpose flour
1/3 cup granulated sugar
1/2 cup butter
1 cup raisins, chopped
1/2 cup raspberry jam or 1/2 cup plum jam
2 eggs
3/4 cup brown sugar, packed
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup walnuts, chopped
1 teaspoon orange peel, grated
1 teaspoon vanilla
confectioners' sugar

Steps:

  • Prepare Shortbread: Combine 1 1/4 cups flour, 1/3 cup sugar and 1/2 cup butter. Blend to fine crumbs. Press firmly into bottom of greased 8-inch square pan.
  • Bake at 350F for about 25 minutes or until lightly browned.
  • Mix raisins and jam. Spread over shortbread.
  • Beat eggs with brown sugar, flour, baking powder and salt. Stir in walnuts, orange peel and vanilla. Pour mixture over top. Return pan to oven. Bake 35-40 minutes until top is browned and springs back when punched.
  • Cool in pan. Sift with confectioners sugar.

1/2 pound (2 sticks) unsalted butter, room temperature
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup powdered sugar
2 1/2 cups unbleached all-purpose flour
2 cups raisins
1 egg

Steps:

  • Preheat the oven to 350°F.
  • Beat together the butter, salt, and vanilla until creamy. Add the powdered sugar and continue beating until light and fluffy. Stir in the flour to make a thick dough. With your hands, gather the dough into 2 balls, one a little larger than the other. Flatten the smaller ball of dough into a thin, even layer on the bottom of a 9- by 13-inch baking dish, as you would a tart shell. (Or use a larger baking sheet with low sides and press the dough into a 9- by 13-inch rectangle.) Spread the raisins evenly over the dough and gently press to embed them. Break the other ball of dough into pieces and distribute them over the raisins. Pressing gently, spread and flatten them to cover all the raisins evenly with a layer of dough. (If the baking dish is shallow enough, you can finish the top with a rolling pin.)
  • Beat the egg and use a pastry brush to coat the top of the dough evenly with egg. Slowly drag a fork back and forth across the dough to make a decorative pattern, using the back of the tines. Crisscrossed diagonal lines look quite nice. Bake about 40 minutes, until light golden brown. Cool and cut into 1-by 3-inch rectangular bars.

1/4 teaspoon salt

1/2 lb butter
1/2 cup powdered sugar
1 cup raisins (1/4 box)
1/2 cup water

Steps:

  • Preheat oven to 350 degrees.
  • Combine water and raisins in a small saucepan. Bring to a boil and continue to boil for about 5 minutes. Drain and set aside.
  • Spray 8 inch square baking dish with 'bakers spray'. (Non-stick spray with flour in it).
  • Combine all dry ingredients except for sugar. Set aside.
  • With hand-held mixer beat sugar and room temperature butter until creamed. Slowly add, in 3 batches, the dry mixture. Fold in cooled raisins.
  • Pat dough into baking dish and bake for about 20 minutes or until sides are golden and toothpick comes out clean.
  • Cool and cut into bars. They are very yummy eaten warm.
