3 slices bacon (cut in to small pieces)
1 cup shredded or chopped rotisserie chicken
2 garlic cloves (chopped)
1/2 cup red onion (chopped)
16 oz penne pasta
3 cups chicken broth
1/2 cup heavy cream
pinch red pepper flakes (optional)
salt and pepper (to taste ( I used 1 tsp kosher salt & 2 pinches of black pepper))
1 cup BBQ sauce
1 cup shredded mozzarella cheese (plus more for garnish; optional)
fresh parsley (for garnish; optional)

Steps:

  • In a large saucepan, cook bacon
  • Add chicken, garlic, and red onion, and cook over medium heat for about 2 minutes to allow everything to cook and flavor together
  • Add in pasta, chicken broth, heavy cream, and spices
  • Bring to a boil, reduce heat, and cover
  • Let simmer for about 15 minutes, or until pasta is tender
  • Add in BBQ Sauce and shredded mozzarella, stirring gently to combine
  • When cheese is fully melted, Serve
  • Garnish with extra BBQ drizzle, shredded mozzarella, and parsley if desired

Bite-sized chunks of chicken in a light barbecue-style sauce combine with pasta, bacon, creamy melted gouda, and a bit fresh cilantro to make this flavorful baked pasta casserole.

3/4 lb boneless (skinless chicken thighs, cut into bite-sized pieces)
8 ounces pasta (penne, rotini, ziti)
1/4 lb bacon (preferably thick-cut, cut into 1/2-inch pieces)
1/2 cup red onion (chopped)
3 to 4 scallions (chopped)
1/4 cup fresh cilantro (or parsley, chopped)
4 ounces smoked (or regular Gouda cheese, coarsely grated)
1/3 cup ketchup
1 tablespoon honey
1 tablespoon low-sodium soy sauce
1 tablespoon apple cider vinegar
1 teaspoon Dijon-style mustard
1-1/2 teaspoons chipotle pepper sauce (more or less to taste)

Steps:

  • Preheat the oven to 375°F and generously coat a 1-1/2 quart casserole dish with nonstick spray.
  • Cook and drain the pasta according to package directions and set aside.
  • Fry the bacon until crisp, transfer to a paper towel-lined plate and set aside. Drain all but 2 tablespoons of fat from the pan and add the red onion.
  • Sauté the onion until softened, 2 minutes, then add the chicken and continue cooking, stirring often, until the chicken is cooked through, 3 to 4 minutes longer.
  • Remove the pan from the heat, add the reserved bacon and combine. Season to taste with salt and pepper and set aside to cool for 5 minutes.
  • While the chicken cools, prepare the sauce by combining the ketchup, honey, soy sauce, vinegar and mustard in a measuring cup. Stir in the chipotle pepper sauce to taste.
  • Add the sauce to the chicken mixture along with the scallions, cilantro and all but 1/4 cup of the grated cheese. Transfer to the prepared casserole dish and top with the remaining cheese.
  • Bake uncovered for 15 minutes. Serve immediately.

14.5 oz diced tomato, drained
15 oz corn, drained
½ red onion, diced
1 ½ cups ranch dressing
1 cup BBQ sauce
16 oz fusilli pasta
pepper, to taste
2 cups shredded mozzarella cheese
fresh parsley

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, combine chicken, tomatoes, corn, onion, ranch, and BBQ sauce.
  • Add the pasta, and mix until evenly coated.
  • Pour mixture into a 9x13 (22 x 33 cm) baking dish. Sprinkle with pepper to taste.
  • Top with mozzarella, and bake uncovered for 30 minutes.
  • Top with fresh parsley.
  • Enjoy!

1 tablespoon olive oil
1 small green bell pepper, chopped
1/2 yellow onion, finely chopped
1 tablespoon garlic salt
3 1/2 cups Neely's BBQ sauce, recipe follows
1 pound pork, beef, or chicken, cooked and chopped into bite-size pieces
1 pound spaghetti
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • In a large skillet, heat olive oil over medium heat. Saute the pepper and onion until softened, 1 to 2 minutes. Stir in the garlic salt. Add the BBQ sauce and bring to a boil. Reduce the heat to a low simmer and add the chopped meat.
  • Meanwhile, fill a large pot with water and bring to boil. Season liberally with salt and add spaghetti. Cook until al dente (firm but not hard), about 7 minutes, and drain. Toss spaghetti with sauce.
  • In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cooked uncovered, stirring frequently, for 1 hour 15 minutes.

I used ingredients which I knew they would like, but made it healthy to satisfy me. They loved it, as did my husband, and they still request it today. It's great with Italian or French bread!

1 (12 ounce) box tri-color spiral pasta
1 cup honey barbecue sauce
1 (14 ounce) can low sodium chicken broth
1 (14 1/2 ounce) can French style green beans, drained and rinsed
1 1/2 lbs boneless skinless chicken breasts
1 1/2 cups shredded mozzarella cheese
1 teaspoon garlic powder or 1 teaspoon minced garlic

Steps:

  • Pre-heat oven to 350 degrees.
  • Cook the chicken breasts in a lightly oiled skillet on medium heat for approximately 6-8 minutes on each side or until chicken is no longer pink inside; cool for 5 minutes; then dice.
  • At the same time, cook the pasta according to box directions. When done, drain the pasta and place in a large, greased baking dish. Add the chicken and remaining ingredients to the pasta. Mix well.
  • Cover and bake for 45 minutes. Stir and enjoy!

1 small onion, cut into slices
1 1/2 cups ketchup
1/2 cup packed brown sugar

One of my favorites is the BBQ chicken pasta at Semolina's. This recipe was copied from a cooking demonstration by one of the Semolina's chefs on the New Orleans PBS station. It's very close to what you get at Semolina's. I prefer chicken thighs but if you must boneless breasts work fine. P.S., if the best thing you ever tasted came out of a cassarole dish, this might be a little out there for you.

1 lb boneless chicken
1/2 red onion
1/2 bell pepper
2 garlic cloves
1 cup spaghetti sauce
2 cups barbecue sauce
1/4 cup fresh cilantro
1/4 teaspoon creole seasoning
1 cup gouda cheese
1 cup provolone cheese
1 lb rigatoni pasta

Steps:

  • Cook pasta according directions.
  • Cut chicken into 2" cubes.
  • Slice your Red Onion.
  • Chop Bell Pepper into 1 inch chunks.
  • Mince Garlic.
  • Chop Cilantro.
  • Heat about 4 table spoons of olive oil in a large skillet or wok over high heat and saute the chicken till it browns. 4-5 minute.
  • Turn heat down to medium high and add the Onion, Bell Pepper and Garlic and saute all till the vegies get crisp tender 2-3 minute.
  • Add the Marinara, BBQ Sauce, Creole Seasoning, and Cilantro leaves and stir till mixed and heated through.
  • Pour chicken and sauce over bowls of pasta and sprinkle with cheeses then some more Cilantro on top.
