6 large leaves Bibb lettuce, rinsed and patted dry
1 head Belgian endive, stem removed and cut crosswise into thin shreds
Pomegranate seeds, as garnish
2 tablespoons pomegranate juice
1 teaspoon grated orange zest
1/4 cup red wine vinegar
2 shallots, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon Dijon mustard
1/2 cup extra-virgin olive oil
3 oranges, peeled and segmented
1 small red onion, thinly sliced
8 ounces goat cheese, cut crosswise into 6 slices
6 thin slices prosciutto
1 large head radicchio, rinsed, patted dry and torn into bite sized pieces
1 bunch arugula or watercress, rinsed, patted dry and cut int bite sized pieces

Steps:

  • In a small bowl, combine the pomegranate juice and orange zest, vinegar, shallots, salt, pepper and mustard and whisks thoroughly to combine. Add the oil in a steady stream and whisk until emulsified. Fold the segmented oranges and sliced onions into 1/4 cup of the dressing and toss to combine and set aside.
  • Wrap each slice of goat cheese in a slice of prosciutto. Heat a large skillet over medium high heat. Add the wrapped cheeses and sear on both sides. Remove from the heat.
  • In a large salad bowl, combine the greens. Add the marinated orange sections and onion slices, and toss gently with enough extra dressing to coat evenly. Divide among salad plates and top each with a seared goat cheese package and a sprinkling of pomegranate seeds. Spoon a little extra dressing over each salad and serve immediately.

6 eggs
2 pounds red bliss potatoes, quartered
1/4 cup chopped onion
1/4 cup chopped celery
2 tablespoons jarred pickle relish, drained
3/4 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons salt
1/4 cup chopped green onions
1 tablespoon chopped parsley leaves
Freshly cracked black pepper

Steps:

  • Put the eggs in a saucepan, with water to cover, and add a pinch of salt. Cover and bring to a boil over medium heat. Remove the saucepan from the heat and allow it to sit for 10 minutes. Remove the eggs from the water and shock in an ice bath until cool. Peel and chop the eggs on a cutting board and put into a medium bowl. Set aside.
  • Add the potatoes to a medium pan and cover with water. Bring to a boil over medium heat and cook the potatoes until fork tender, about 10 to 15 minutes Drain and cool the potatoes on a sheet tray.
  • In a large serving bowl mix together the onion, celery, relish, mayonnaise, lemon juice, salt, green onions and parsley. Add eggs and cooled potatoes. Toss together and add black pepper, to taste.

3 pounds red potatoes, cut into chunks
1 cup low-fat sour cream
½ cup light mayonnaise
2 teaspoons Dijon mustard
1 teaspoon white vinegar
4 hard-cooked eggs, chopped
1 dill pickle, chopped
⅓ celery stalk, chopped
2 green onions, chopped
1 dash hot sauce
1 tablespoon dried dill weed
½ teaspoon garlic powder
1 dash onion salt
salt and pepper to taste

Steps:

  • Place the potatoes in a pot with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and transfer to a large bowl to cool.
  • In a medium bowl, mix the sour cream, mayonnaise, mustard, vinegar, eggs, pickle, celery, green onions, and hot sauce. Season with dill, garlic powder, onion salt, salt, and pepper. Pour over the potatoes, and gently toss to coat. Chill at least 3 hours in the refrigerator before serving.

This fabulous potato salad gets it's zesty flavour from a delicious mustardy buttermilk dressing with the addition of juniper berries. The salad needs to steep overnight, so plan ahead. You refresh it before serving with some additional dressing and a smattering of chopped spring onion and parsley. Impressive! From the cookbook New York Cooks. 2 1/2 lbs baby Red Bliss potatoes, unpeeled, cut into 3/4 inch chunks
2 tablespoons grey poupon country Dijon mustard
3 tablespoons white wine vinegar
1 tablespoon juniper berries, finely chopped (see step 2)
1 tablespoon sea salt
1 tablespoon fresh ground black pepper
1/4 cup buttermilk
1/4 cup extra virgin olive oil
1/2 cup finely chopped fresh parsley
1/2 cup finely chopped scallion (spring onions)

Steps:

  • Simmer the potatoes in a pot of well salted water that you have brung to the boil. Cook until just done without allowing the potatoes to become mushy. Drain well, then rinse in cold water. Spread on some kitchen toweling to dry.
  • Combine the mustard, vinegar, juniper berries, salt, pepper and buttermilk in the bowl of a small sized food processor or the bowl of a stick blender and blitz until fairly smooth and well combined. (I find this chops the juniper berries with no problem. Gradually whisk in the olive oil until the dressing is creamy.
  • Put the lukewarm potatoes into a bowl and add half the buttermilk dressing. Cover and chill overnight.
  • One hour before serving stir in the remaining buttermilk dressing and the parsley and onions. Leave to set at room temperature until serving.

10-12 Red Bliss potatoes, boiled
6 hard-boiled eggs, shelled
3 tablespoons mayonnaise, plus additional if needed
1/2 teaspoon curry powder, plus additional to taste
Salt to taste
Pepper to taste
1/2 cup black olives
1/2 cup cocktail olives (reserve 1 tablespoon of the brine)

Steps:

  • Cut the potatoes and eggs into small chunks about a 1/2 inch square. Put them in a bowl with the mayonnaise, curry powder, salt, pepper, olives, and reserved brine and mix until well combined. If you find that the ingredients aren't wet enough, you can add more mayonnaise - everything should hold together nicely. Let stand overnight to give the ingredients a chance to marinate. Taste the next day for seasoning. If necessary, add more curry powder, salt, or pepper.

Using a basic cookie recipe, I revised it to be gluten-free and instead of the soft cake-like texture that Starbucks® Cranberry Bliss Bars have, these have a chewy, cookie-like texture. Also, I reduced the sugar so they're not quite so sweet.

1 cup unsalted butter, softened
¾ cup brown sugar
½ cup white sugar
2 large eggs
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 ½ cups gluten-free flour blend (such as Namaste Perfect Flour Blend™)
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon xanthan gum
1 (8 ounce) package white chocolate chips
¾ cup shredded coconut
1 (16 ounce) container cream cheese frosting
½ cup chopped dried cranberries, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch pan.
  • Beat butter, brown sugar, white sugar, eggs, cinnamon, and vanilla extract together in a bowl until smooth.
  • Stir flour, baking soda, salt, and xanthan gum together in a separate bowl. Stir 1/2 of the flour mixture into the egg mixture; mix well. Stir in remaining flour mixture, along with white chocolate chips and coconut. Mix well. Press into the prepared pan.
  • Bake in the preheated oven until the edges start to brown, about 23 minutes. Let cool completely, about 30 minutes.
  • Frost with cream cheese frosting and sprinkle with cranberry bits. Cut into 48 triangles.

This summer staple has no mayonnaise, so it's perfect for an outdoor lunch.

Number Of Ingredients 9

3 pounds red bliss potatoes (or any small red-skinned potatoes)
1 pound thick-cut bacon
1/4 cup grainy mustard
1/3 cup red wine vinegar
2 teaspoons sugar
Salt and freshly ground pepper
2/3 cup light olive oil or vegetable oil
1 red onion, finely diced
1 cup chopped flat-leaf parsley

Steps:

  • Place unpeeled potatoes in a large pot. Cover with cold water and bring to a boil. Turn down heat and simmer gently until potatoes are tender when pierced with the point of a knife, about 35 minutes. Drain and refresh in cold water.
  • In a nonstick skillet, cook bacon until very crisp. Drain on paper towels. When cool, crumble into large pieces. Set aside.
  • In a small bowl, whisk together mustard, vinegar, sugar, and salt and pepper to taste. Whisk in oil and set aside.
  • Cut potatoes into 1/4-inch-thick slices and place in a large bowl. Stir in onion and dressing. Let marinate at least 1 hour.
  • Before serving, stir in parsley and bacon, reserving some to sprinkle on top.
