3 pounds potatoes, scrubbed
2 sticks butter
1 1/4 cups hot milk
Freshly ground black pepper
1 head cabbage, cored and finely shredded
1 (1-pound) piece ham or bacon, cooked the day before
4 scallions, finely chopped
Chopped parsley leaves, for garnish

Steps:

  • Steam the potatoes in their skins for 30 minutes. Peel them using a knife and fork. Chop with a knife before mashing. Mash thoroughly to remove all the lumps. Add 1 stick of butter in pieces. Gradually add hot milk, stirring all the time. Season with a few grinds of black pepper.
  • Boil the cabbage in unsalted water until it turns a darker color. Add 2 tablespoons butter to tenderize it. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces.
  • Put the ham in a large saucepan and cover with water. Bring to the boil and simmer for 45 minutes until tender. Drain. Remove any fat and chop into small pieces.
  • Add cabbage, scallions, and ham to mashed potatoes, stirring them in gently.
  • Serve in individual soup plates. Make an indentation on the top by swirling a wooden spoon. Put 1 tablespoon of butter into each indentation. Sprinkle with parsley.

1 kg Potatoes (Peeled and cut into large chunks)
4 Cloves Garlic (Peeled and chopped (or use frozen preprepared as I do))
200 g Butter
300 g Cabbage (Finely sliced, I like Savoy but you can use whichever you prefer)
100 g Spring onions (Finely chopped, including the green parts)
100 ml Single cream
20 g Fresh chives (Chopped finely)
Plenty of sea salt flakes and freshly ground black pepper
A pat of butter and a sprinkling of fresh chives

Steps:

  • Boil the potatoes with the garlic for 15 - 20 minutes until cooked through.
  • While the potatoes are cooking, melt 100g of the butter in a small frying pan and saute the cabbage and spring onions for 3 - 4 minutes until softened.
  • Drain the potatoes and mash (leave the garlic in).
  • Add the cabbage and spring onions (including the butter they were cooked in) to the potatoes.
  • Meanwhile warm the remaining butter and cream until the butter is melted (I do this in the pan I fried the cabbage in). Add to the potato and cabbage mixture.
  • Add the chives and plenty of salt and pepper and stir until throughly combined. Serve immediately with extra butter and chives to garnish.

8 green onions, chopped
1 cup fat-free milk

  • Place potatoes in a Dutch oven; cover with water. Bring to a boil. Cover and cook over medium heat for 12-15 minutes or until potatoes are almost tender, adding the cabbage during the last 5 minutes of cooking., Meanwhile, in a small saucepan, combine green onions and milk. 1kg potato, well scrubbed (cut any large ones in half)
100g butter
140g sliced back bacon, finely chopped
1 small Savoy cabbage, finely shredded
150ml double cream

Steps:

  • Tip the potatoes into a large saucepan of water. Bring to the boil, then simmer for 15-20 mins, or until the flesh is tender when pierced.
  • Meanwhile, heat quarter of the butter in a saucepan, then fry the bacon and half the cabbage for 5 mins (see Kevin's tip, below, for how to use remaining cabbage). Turn off the heat and set aside. Drain potatoes in a colander and peel while still hot.
  • Mash potato until smooth. Heat cream with remaining butter and, when almost boiling, beat into the potato. Add bacon and cabbage to potato and mix. Season if you want.

3 large potatoes, peeled and quartered, or more to taste
1 pinch salt
6 tablespoons butter, cut into small chunks
½ cup sour cream
1 egg
1 tablespoon milk, or as needed
1 teaspoon butter, or as needed
3 cups shredded cabbage
2 leeks, chopped
1 small onion, chopped
2 cubes chicken bouillon
½ cup shredded Cheddar cheese

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Season the potatoes with salt, and mash with 6 tablespoons of butter, sour cream, egg, and milk.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
  • Heat 1 teaspoon butter in a skillet over medium heat, and cook and stir the cabbage, leeks, and onion until the cabbage is tender and the onion is translucent, about 10 minutes. Crush 2 bouillon cubes into the cabbage mixture, and stir to blend and dissolve the cubes. Stir the cabbage mixture into the potato mixture until thoroughly mixed, and spoon into the prepared casserole.
  • Bake in the preheated oven for 40 minutes; top with Cheddar cheese, and return to oven until the cheese melts, about 10 minutes.

1/2 head small green cabbage (from a 1 1/2- to 2-pound whole cabbage), halved again and cored
2 pounds large boiling potatoes, preferably Yukon Gold
1/2 cup chopped scallions
5 tablespoons unsalted butter, divided
1 large egg, lightly beaten
Special Equipment
a 9-inch pie plate, potato masher

Steps:

  • Steam cabbage in a steamer set over boiling water, covered, until just tender, 15 to 25 minutes. Remove lid, and when cool enough to handle, finely chop leaves.
  • Preheat oven to 375°F with rack in middle.
  • While cabbage is steaming, peel and quarter potatoes. Generously cover potatoes with cold water in a 3- to 4-quart saucepan and add 1 teaspoon salt. Bring to a boil, then reduce heat, and briskly simmer, partially covered, until tender, 25 to 30 minutes.
  • Drain potatoes well and mash in a large bowl with 3 tablespoons butter. Stir in cabbage, scallions, and salt and pepper to taste. Cool to warm and stir in egg.
  • Melt remaining 2 tablespoons butter. Brush pie plate with some of butter. Spread potato mixture evenly in plate and brush with remaining butter.
  • Bake until golden, about 35 minutes. Let stand 10 minutes before serving.

  • Gather the ingredients.

Look for floury potatoes - otherwise known as baking potatoes - as they have a lower moisture content and are perfect for the mash in this classic colcannon dish.

Number Of Ingredients 6

500g/1lb2oz floury potatoes, boiled until tender
250g/9oz cabbage, shredded and lightly steamed
2 tbsp cream (optional)
salt and black pepper
1 large or 2 small onions, sliced thinly
a little bacon fat, beef dripping or other oil, for frying

Steps:

  • Sieve or mash the potatoes and mix with the cabbage and cream. Season well with salt and pepper.
  • Fry the onion in the fat over a moderate heat until it is soft and beginning to brown.
  • Using a spatula, press half the potato and cabbage mixture in an even layer on to the onion and fry for 4-5 minutes until it is well browned and crispy underneath.
  • Cut the mixture into 4 quarters with the spatula or palette knife and turn them over carefully so that the crispy bit is uppermost. Press the remaining potato and cabbage mixture on to the first layer and after a few more minutes, cut and turn again.
  • When the bottom is again browned, you will have a crispy top too, a crispy bottom, and a crispy layer in the middle.

This colcannon recipe came from a Prince Edward Island, Canada, cookbook, if I remember correctly. I do not know the title to it or if it is still in print. There are many different recipes for colcannon, but this one is my favorite, the only one I make now.

3 -4 medium potatoes, peeled and cut in quarters
2 tablespoons milk or 2 tablespoons light cream
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups chopped cabbage
2 tablespoons butter or 2 tablespoons margarine
1/4 cup chopped onion
2 tablespoons butter (for frying)

Steps:

  • Cook potatoes in boiling water till tender; drain, reserving water.
  • Place in a large bowl.
  • Mash with hand masher till well-mashed.
  • (I find the electric mixer makes it too gooey).
  • Add milk, salt and pepper and beat till fluffy.
  • In the same saucepan as potatoes were cooked in, cook cabbage in reserved potato water for 6 to 8 minutes, until tender.
  • Drain.
  • Meanwhile, melt 2 tablespoons butter in frying pan and saute onion until tender.
  • Add mashed potato and cooked cabbage to the onion.
  • Heat throughly, stirring constantly.
  • Place in a heated serving dish.
  • Serve hot, topped with butter.

IRISH COLCANNON - CASSEROLE

A delicious twist on the Irish Colcannon recipe transformed into a delicious casserole.

3 Slices of Thick Bacon
5 oz Organic Baby Kale
3 lbs Russet Potatoes, peeled and sliced
4 tbs Butter, softened
1/3 c Heavy Cream
1 tbs Mayonnaise (such as Duke's) or Sour Cream
1.5 tsp Salt (or to taste)
1/4 tsp Black Pepper
1 bunch of Scallions, diced
8 oz White Cheddar Cheese, grated

Steps:

  • Preheat oven to 350°F (176°C)
  • Cook bacon in a skillet until crispy. Set cooked bacon aside and reserve bacon fat from cooking. Dice the bacon.
  • Next saute the baby kale in the skillet with the bacon fat until wilted. This will only take about a minute. Remove wilted baby kale and set aside.
  • Next, add the peeled and sliced potatoes to a pot and cover with water. Bring to a boil and cook for 10 minutes until tender. Drain and add to a mixing bowl with softened butter. Whip the potatoes with a hand mixer until creamy. Add the heavy cream and mix to combine.
  • Next - Add the salt, pepper, mayonnaise (or sour cream) to the potato mixture. Mix to combine.
  • Finally, add the wilted baby kale greens, half of the diced green onions, half of the diced bacon and half of the grated cheese to the potato mixture and stir to combine everything together.
  • Add the potato mixture to a casserole dish and top with the remaining shredded cheese. Bake for 20 minutes or until the cheese is melted. Garnish the top of the casserole with the remaining diced scallions and bacon.

A wonderful combination of mashed potatoes, Savoy cabbage, cheese & chives - baked OR grilled to give a crispy cheesy topping. This is one of my very favourite family recipes - my Mum used to make it, as did her Mum before her! This is a Scottish recipe, similar to Irish Colcannon, which is also a potato & cabbage dish. You can serve this as a vegetable accompaniment or as a light luncheon dish with crusty bread & extra vegetables. P.S. My daughter calls this baked Bubble and Squeak & always asks for it when she comes home from university!

1 1/2 lbs potatoes, peeled & cut into small even size pieces
6 -8 large savoy cabbage leaves, washed, trimmed & cut into 1/4-inch strips
4 tablespoons fresh chives, chopped
2 ounces butter
2 -4 tablespoons milk

4 ounces scottish cheddar cheese or 4 ounces local cheddar cheese, grated

Steps:

  • Preheat oven to 225C/450F - ONLY if you wish to bake this. Otherwise, this dish can be grilled.
  • Lightly grease a heat resistant serving or baking dish.
  • Boil the potatoes for about 20 minutes or until soft.
  • At the the same time, boil the savoy cabbage for 5 minutes maximum - take off the heat, drain & allow to cool in a colander.
  • Drain the potatoes and add the butter, milk, salt and pepper. Using a potato masher or hand held mixer - mix & mash the potatoes thoroughly until smooth & with no lumps.
  • Add the cabbage & chives to the mashed potatoes - gently mix together.
  • Pile the Rumbledethumps mixture into your serving or baking dish - scatter the grated cheddar cheese over the top and EITHER, bake for 15 - 20 minutes in the oven OR put under a hot grill for about 5 minutes, until the cheese has melted and is bubbling.
  • Serve immediately with grilled or roast meat, casseroles, stews or roast chicken.
  • This also makes a wonderful vegetarian meal or a light luncheon dish - serve with crusty bread and extra vegetables if you wish.
  • This serves 4 people as an accompaniment and 2 people as a light luncheon dish.

2 1/2 pounds russet potatoes (about 4 potatoes, peeled and cut into large chunks)
Salt (to taste)
6 Tablespoons butter (salted or unsalted)
3 cups loosely packed curly kale (deveined and sliced into 1/2" thick strips)
1/2 cup chopped green onions (green parts only, about 4 green onions)
1 cup half-and-half (10% cream)

Steps:

  • Place the potato chunks into a large pot. Add cold water until the potatoes are covered with an inch of water. Add 1 - 2 Tablespoons of salt to the water (depending on taste preference).
  • Bring to a boil, and boil until the potatoes are fork tender (roughly 15 to 20 minutes). Drain the potatoes in a colander.
  • Return the pot to the stove over medium heat, and melt the butter. Add the kale and saute until tender and wilted (about 3 to 4 minutes). Add the green onions and saute for an additional minute. Pour in the half and half, and stir to combine. Turn the heat off.
  • Add the potatoes, and use a potato masher to mash. Stir to mix the mashed potatoes with the greens.
  • Taste and adjust salt to your preference. Serve hot with a dab of butter.

Kosher salt and pepper
3 tbsp. unsalted butter, divided, plus more for serving
1 large leek, white and light green parts only, cut into ¼ inch pieces
1 large clove garlic, finely chopped
1/4 head savoy cabbage, cored and sliced
2 c. baby kale, roughly chopped
1 c. half-and-half
Sliced scallions, for sprinkling

Steps:

  • Place potatoes in a large pot, add enough cold water to cover, and bring to a boil. Add 1½ teaspoons salt, reduce heat and simmer until just tender, 15 to 18 minutes. Drain potatoes and return to the pot.
  • Meanwhile, melt 1 tablespoon butter in a large skillet on medium-low. Add leek and cook, covered, stirring occasionally, for 5 minutes. Stir in garlic and cook 1 minute. Add cabbage and cook, partially covered, stirring occasionally, until just tender, about 5 minutes. Remove from heat and toss with kale (it will begin to wilt).
  • Add half-and-half, remaining 2 tablespoons butter and ½ teaspoon salt to potatoes and gently mash. Fold in cabbage-kale mixture. Serve sprinkled with scallions, cracked pepper and additional butter, if desired.

4 russet potatoes, peeled and cubed
Salt
3 cups thinly sliced green cabbage
2 tablespoons olive oil
1 tablespoon fresh thyme, chopped
1 cup Organic Chicken Broth, recipe follows
Ground pepper
1 organic chicken carcass/leftover chicken bits, skin removed
Carrots, roughly chopped
Celery, roughly chopped
Leeks, washed and chopped
Onion, chopped
10 peppercorns
3 large bay leaves
Any leftover fresh herbs such as thyme, rosemary, oregano, parsley

Steps:

  • Begin by boiling the potatoes in salted water (1/4 tablespoon) until fork tender. Drain in a colander.
  • Saute the sliced cabbage in the olive oil on medium heat with the thyme. Cover and cook until soft, stirring occasionally.
  • In a small saucepan, warm the broth. Return the cooked potatoes to the pot they were boiled in and mash. When the cabbage is cooked, fold into the potatoes. Add the Organic Chicken Broth, 1/2 cup at a time, using only what's needed to make them creamy. Add salt and pepper to taste.
  • Put all the ingredients into a large soup pot and fill the entire pot with cold water, covering the chicken and vegetables as much as possible. Stir. Bring to a boil, and then reduce to a simmer. Cook uncovered for a couple of hours to extract the vegetable flavors. Strain over another soup pot or large bowl, separating the scraps from the broth. Divide among containers and freeze.

22 ounces floury potatoes (peeled and quartered)
4 pounds of curly kale (or spring cabbage, stems removed, chopped)
1/2 cup spring onions (roughly chopped)
6 ounces butter (divided)
1/4 cup spring onions (finely chopped)
Salt (to taste)
Freshly ground black pepper (to taste)

Steps:

  • Gather the ingredients.
  • Lightly salt a pot of hot water and simmer the potatoes until soft in the middle when pierced with a sharp knife.
  • In a different pot, blanch the curly kale in boiling water for 1 minute.
  • Drain the kale and reserve.
  • Place the 1/2 cup of roughly chopped spring onions and the blanched kale into a blender and pulse for 10 seconds until roughly mixed. (You want the vegetables to have some texture.)
  • Drain the potatoes and add 4 ounces of butter.
  • Mash the potatoes and butter until smooth and creamy.
  • Add the kale and spring onion mixture and stir well.
  • Add the 1/4 cup of finely chopped spring onions and season with salt and pepper to taste.
  • Top the mash with the optional 2 ounces of butter, if desired. Serve and enjoy.
