- Preheat oven to 400 degrees F.
- Combine dry ingredients in large bowl.
- Whisk milk, applesauce and vanilla in medium bowl.
- Add milk mixture to dry ingredients, stirring just until combined.
- Mix in bananas.
- Divide batter among 12 muffin cups (spray muffin pan with nonstick spray first).
- Bake until toothpick inserted in centre of muffins comes out clean, about 20 minutes.
- Transfer to a rack to cool.
- Serve warm or at room temperature.
MAGICKAL BANANA APPLE RAISIN OATMEAL BRAN MUFFINS
This is a healthy snack I concocted for my daughter when she was in school for those after school munchies. It satisfies and adds plenty of fiber, with flavor and nature's goodness. Sometimes I like to substitute the raisins for a cup of blueberries (fresh or frozen)or blackberries in the summer! If you have over ripe bananas, mash, add cinnamon, and freeze them to make these later. YUM!!

- Mash the banana in large bowl. Stir in cinnamon and milk, then oats, bran and raisins. (You may also add 1/3 of a skinned and grated apple if available, or ¼ cup applesauce for additional fiber and vitamins.) Let sit for about 15 minutes to soften cereal.
- Beat in the oil, then egg with spoon. If my banana is really ripe, I leave out the sugar or just add a bit to help with the rising of the muffin.
- Dump the dry ingredients into the bowl and stir in all at once, just until all is moisturized. If the mixture seems too stiff, add more milk, being careful not to over mix.
- Spoon into greased muffin tins or use liners. Bake at 350° for about 25 minutes or until a toothpick inserted in center comes out clean, or close to it. (not too sticky). Makes 10-12 muffins depending on the size of your bananas!
- *If you only use one banana and it's a small one, use about 1 cup white flour.

BANANA OAT BRAN MUFFINS WITH NO ADDED SUGAR
Yummy muffins with only fruit as the sweetener. Also, no flour only oat bran. This is the second recipe I have tried from "Sweet & Natural; Desserts without sugar, honey, molasses or artificial sweeteners" by Janet Warrington. This is definitely not a cupcake, but a good solid muffin with good nutrition. My kids liked them with jelly or a little spray butter (Hey, we can't eat perfectly ALL the time!). Dense and moist these are a nice breakfast or snack. I used frozen banana because I have a ton of bananas in my freezer, plus I think it mashes more easily. But feel free to use what you have!

- In a large bowl combine oat bran, flour (leaving 3 tablespoons), baking powder, brown sugar, salt and cinnamon.
- Make a well in the center of the mixture.
- Add milk, vanilla, honey and vegetable oil to the mixture.
- Mix well to combine. Do not over mix it as it will make the muffins dense.
- Combine remaining flour to the bananas and apples.
- Toss to coat well. This will allow the fruits to be evenly distributed in the batter.

INCREDIBLE OAT BRAN MUFFINS, PLAIN, BLUEBERRY OR BANANA
I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

- *Blueberry or banana variations are at bottom.
- Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
- Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
- Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.

- Preheat oven to 350F degrees. Grease a 1/3-cup muffin pan or line with paper cups .
- In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients - flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
