Our hobo dinner is the ultimate comfort food. A perfect summer meal made over the campfire (or in the oven) Wonderful in fall as the nights get cooler.

1 pound ground beef (80/20)
salt (divided)
black pepper (divided)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon brown sugar (packed)
4 tablespoons butter (cut into cubes)
3 medium Russet potatoes (peeled and cut into cubes)
1 medium yellow onion (cut into cubes)
2 large carrots (peeled and cut into cubes)
1 can condensed cream of mushroom soup (low sodium)

Steps:

  • Preheat the oven to 350 °F.
  • In a bowl, mix together the beef (1 pound), 1 teaspoon salt, 1/2 teaspoon black pepper, garlic powder (1/2 teaspoon), onion powder (1/2 teaspoon), chili powder (1/2 teaspoon), and brown sugar (1/2 teaspoon) until the spices are evenly incorporated.
  • Form beef mixture into 4 equal-sized patties. Set aside.
  • Spread out 4- 12-inch sheets of heavy-duty aluminum foil.
  • Stack a 1/4 of each vegetable in a layer in the center of each sheet of foil. Sprinkle the vegetables generously with salt and pepper and dot the top with 1 tablespoon of cubed butter.
  • Top the vegetable layer with a beef patty then top with 2 tablespoons cream of mushroom soup.
  • Seal foil packets well and place them on a rimmed baking sheet. Bake in preheated oven until the beef patty reaches an internal temperature of 160 °F, and the vegetables are tender about 30-40 minutes.

1 pound Lean Ground Beef
1/2 onion sliced
1 cup Frozen Green Beans
1 cup Frozen Corn
4 small potatoes ((peeled and sliced into 1/4" thick slices))
4 tablespoons butter
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Form the beef into four patties and set aside.
  • Coat 4 large pieces of heavy duty foil with non-stick cooking spray.
  • Place one potato (peeled and sliced) in the middle of each piece of foil.
  • Place about 1/4 of the green beans and a 1/4 of the corn on each pile of potatoes.
  • Place a beef pattie on top of the vegetables on each piece of foil.
  • Top each foil packet with the sliced onions, a tablespoon of butter, and season with salt and pepper.
  • Fold up the sides of the foil. Then fold up the other sides to make a foil pack.
  • Place on the grill on medium high heat (or a campfire) for approximately 30 minutes or until the hamburger patties are cooked through.
  • Open the foil packets carefully and enjoy dinner!

12 ounces country-style bulk sausage
1/2 cup chopped yellow onions
1/2 cup sliced fresh mushrooms
1/4 cup vegetable oil
3 cups fresh hash browns
6 large eggs, whisked together
1 cup shredded Cheddar

Steps:

  • In a large skillet over medium-high heat, brown the sausage. If desired, drain the fat.
  • Add the onions and mushrooms and cook until tender, then set aside in a separate bowl.
  • In the same skillet, add the oil and hash browns over medium-high heat and cook until golden brown on 1 side. Once golden brown, add the eggs, sausage and the mushroom mixture. Scramble together until desired consistency and top with the Cheddar.
  • Cover with a lid until the cheese melts and serve.

1 large potato, peeled & diced
1 large carrot, peeled & diced
1 medium onion, sliced
1 frozen hamburger patty
1 teaspoon seasoning salt, to taste

Steps:

  • Place veggies and hamburger pattie in middle of large sheet of aluminum foil.
  • Sprinkle with seasoned salt.
  • Bring up the two long sides of the foil to meet above the food, fold (crimp) the foil several times until it is snug against the food.
  • Fold (crimp) the short ends of the foil several times until snug against the food.
  • This will seal the food in and prevent leakage.
  • Place package directly on hot charcoal and cook for about 15 to 20 minutes each side (or, you can place package in a 350-degree oven for 45 minutes to 1 hour).
  • Make as many packages as needed.

Reynolds Wrap Foil
1 1/2 lbs ground beef
6 slices bacon
12 small potatoes
2 medium red onions
2 cups baby carrots
1 cup red bell pepper
1 cup green bell pepper
2 cups zucchini
3 minced garlic cloves
2 tablespoons olive oil
1 teaspoon black pepper
2 teaspoons salt
1 tablespoon yellow mustard

Steps:

  • Tear off and set aside 6 12-inch square pieces of Reynold's Wrap foil to serve as your hobo dinner pouches. Also line a large baking dish or tray with a sheet of foil for easy clean up of any drips.
  • Chop vegetables into bite-size pieces and lightly cover with olive oil, salt, and pepper.
  • Mince garlic. Cover with salt and smash with blade of knife until forms a garlic-salt paste.
  • Mix into ground beef: garlic salt paste, pepper, olive oil, and yellow mustard. Stir until mixed well.
  • Form meat into 6 portions 1/4 lb. each and smash into thick burger patties on the foil sheets. Wrap a piece of bacon around each one.
  • Place vegetables with bacon burgers and fold the foil corners up to enclose the food in foil pouches.
  • Place foil pouches on foil lined baking pan and bake in oven @ 400 degrees for 30 minutes. You'll next drain out excess liquid from the vegetables then return to cook uncovered for another 15 minutes. This will allow vegetables to brown and onions to caramelize.
  • Drain water from vegetables by opening one side of each foil pouch, form it into the shape of a spout, and pour out the excess liquid by tilting them over a sink. The foil works great for this step because the tips of the foil at the top of the pouches cool off in seconds and you can hold onto them to drain out the liquid.
  • Open the pouches so food is uncovered and return to oven to continue cooking for 15 minutes. If you would like vegetables more browned and bacon crisper, also broil them on high 6 inches from heat for 2-3 minutes.
  • These hobo bacon burger dinners are great for eating on the go. The dinners can be stored in the fridge right in the same foil packs they cook in and can be easily transported for picnics and other events. They are also versatile with cooking; prepare the foil packs for cooking ahead of time and then throw them on a grill at a barbeque cookout or tailgate party.
  • Your hobos will be eating good!

It's very easy and inexpensive to make a delicious and healthy side dish that will feed a large crowd. The fun part is that you can add a little more or less of any ingredient, or even substitute completely.

3 baking potatoes, peeled and chopped
5 -6 carrots, chopped
1 bunch asparagus, chopped into 1-inch pieces
1 (8 ounce) package portabello mushrooms, chopped
1 onion, chopped
6 garlic cloves, diced
1 teaspoon basil
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons olive oil

Steps:

  • TIP: Chop the vegetables in sizes that relate to how quickly they cook. For example, chop the carrots smaller than the mushrooms.
  • Poke holes in the potatoes with a fork. Wrap each potates individually in a paper towel and microwave them together for 4-5 minutes before peeling and chopping.
  • Make 4 large aluminum foil pouches by folding the foil in half and then rolling the sides over at least 3 times. Add one fourth of each ingredient per pouch. Roll the top over to seal tightly.
  • Place the pouches on a hot grill and carefully turn and rotate every 5-10 minutes until all of the vegetables are soft or about 25-30 minutes. Leave the pouches closed until you are ready to serve.

This version of hobo dinner is one my mom and dad made when we were growing up. It uses smoked dinner sausage slices (Hillshire Farms, etc.) instead of ground beef or other meats. Everyone loves it. It only takes one dish to make this in, and it's an entire meal by itelf in my house. Amounts can be easily increased if more servings are needed. Keeps well in the refrigerator for 2-3 days, and is delicious reheated. Not sure if it can be frozen for later....

7 -8 medium potatoes, peeled and cut into 1 to 2 inch chunks

In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative!

  • 1. Lay out 4 foil squares. Make 4 large hamburger patties, season to taste. Layer sliced potatoes, carrots, cabbage. Top w butter, season to taste. Wrap sides of foil up tightly. Put on cookie sheet, bake for 50 min. Remove from oven, add cheese, let set 5-10 min. Enjoy!
  • 2. This was the way my mom always made it, no subs. As a kid I didn't like cabbage, but love it now. I want my kids to enjoy their food and this recipe makes it so easy to sub for individual tastes.
  • 3. Other suggerstions: mushrooms, corn, green beans, broccoli, cauliflower, onion, etc. limitless...I have also used chicken in place of hamburger! Just add EVOO.
