STUFFED QUAHOGS

Stuffed Quahogs image

Quahogs are another name for hard-shell clams, and I know that at least in our region here in Maine, it refers to larger clams (as opposed to cherrystones). These are fairly easy to make, the worst part is the shucking, but I usually pass that job over to someone else. I eat these anytime I can get them. Update 10/16/2006. I've adjusted the cook times. We like them much better when they were cooked longer.

Time 40m

Yield 4 appetizer servings

Number Of Ingredients 16

1 tablespoon olive oil
2/3 cup chopped chorizo sausage
1/2 cup chopped onions
2 tablespoons minced shallots
1 tablespoon minced garlic
1/2 cup chopped green peppers
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 tablespoon chopped parsley
16 Qailhog clams, shucked and chopped. Reserve the shells fully intact
1 tablespoon Creole mustard
1/2 cup to 3/4 cup bread crumbs
1 cup garlic butter sauce, hot
1 cup sizzled leeks (julienned leeks, lightly fried)
2 tablespoons brunoise red peppers
2 tablespoons chopped parsley

Steps:

  • Preheat the oven to 400 degrees. In a saute pan, heat the olive oil. Add the chorizo and render for 2 to 3 minutes. Add the onions, shallots, garlic and peppers. Saute the mixture until the vegetables are light in color, about 2 minutes. Remove from the heat and turn into a mixing bowl. Season with salt, cayenne and parsley. Stir in the clams and creole mustard. Fold in enough bread crumbs to bind the mixture. Pack the mixture into each shell and tie with the butcher's twine. Place on a baking sheet and bake for 8 to 10 minutes, or until the stuffing is cooked through. Remove from the oven and place the untied clams on a platter. Drizzle the butter sauce over the clams. Place a small bundle of the leeks in the center of each clam. Garnish with red peppers, parsley and Essence.

Categories     appetizer

Time 2h10m

Yield 6 servings

Number Of Ingredients 22

8 quahog or chowder clams
6 tablespoons butter, at room temperature
2 tablespoons minced garlic
Kosher salt and freshly ground black pepper
8 ounces chopped chorizo sausage
1/2 cup minced onions
1/4 cup minced celery
1/4 cup minced green peppers
Emeril's Essence, for seasoning, recipe follows
1 cup dried fine bread crumbs
3 tablespoons chopped fresh parsley
1/4 cup reserved steaming liquid
1/2 cup grated Parmigiano-Reggiano
Chopped parsley, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F, and bring a pot of salted water to a boil.
  • Add the clams to the boiling water, cover, and cook for about 6 to 8 minutes or until the shells open. Discard any shells that do not open. Remove the clams from the pot and place on a parchment-lined sheet pan. When the clams are cool enough to handle, gently pry the shells apart enough to remove the clam, leaving the hinge attached. Loosen the muscle in the lower shell and remove the clam from the shell. Save the 6 nicest shells and place the shells on a parchment-lined baking sheet and set aside. Finely chop the clam meat and set aside.
  • In a mixing bowl, stir the butter and 1 tablespoon of the garlic together. Season the butter with salt and pepper. Spoon the butter onto a piece of plastic wrap. Form the butter into a 1-inch log, cover tightly, and place in the refrigerator. Refrigerate for 1 hour.
  • Heat a saute pan over medium-high heat. Add the chorizo and cook until rendered, about 2 minutes. Add the onions, celery and peppers. Season lightly with Essence. Cook for 2 more minutes. Stir in the remaining garlic, the breadcrumbs, and reserved clam meat and remove from the heat. Stir in the reserved cooking liquid and 2 tablespoons of the parsley. Season with Essence and cool slightly.
  • Pack the stuffing mixture into one side of each shell. Slice the compound butter into 6 equal slices. Place a slice of the butter on top of each stuffing mixture. Using your hands, pat the stuffing firmly into each clam shell. Top each evenly with the cheese and the remaining parsley. Close the shells as tightly as possible and wrap with aluminum foil or tie the shell tightly with butchers twine.
  • Bake for 15 to 20 minutes. Unwrap the clams and place on a serving platter. Garnish with additional parsley and Essence and serve hot.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

RHODE ISLAND STUFFIES

Rhode Island Stuffies image

My Dad makes these and I love them! Quahogs are a hard shelled type of clam. If you can not find them, 1 can of minced clams and 1 bottle of clam juice will work as a substitute. Chourice can be found in Portuguese markets, some chain grocery stores or online at such places as Gaspars.com.

Provided by quotFoodThe Way To

Categories     Portuguese

Time 45m

Yield 15 serving(s)

Number Of Ingredients 11

15 quahogs, shucked and then chopped
2 loaves Italian bread (day old bread)
2 tablespoons oil
2 medium onions, chopped
1/2 green pepper, chopped
2 -3 garlic cloves, minced
2 tablespoons crushed red pepper flakes
2 tablespoons parsley, chopped
paprika
margarine
1/2 lb portuguese chourice sausage (optional)

Steps:

  • Open quahogs, placing meat and juice in separate bowls. Save shells.
  • In a large bowl, break bread into small pieces and add enough quahog juice (clam juice) so bread is well moistened, but not soggy.
  • Add chopped quahogs (clams).
  • In a frying pan, add oil and sauté onion, green pepper and garlic until soft, but not brown.
  • Add sautéed onion, green pepper, garlic, and crushed red pepper to bread mixture; mix well.
  • Wash shells and separate.
  • Mound shell halves with stuffing.
  • Sprinkle top with paprika and parsley.
  • Dot tops with a small amount of margarine.
  • Set in a pan and bake in preheated 375°F oven for about 25 minutes or until heated through.
  • OPTIONAL: You may add ground Chourice to onion while sautéing.

  • Preheat oven to 400ºF. Place clams in a single layer in a very large pot, and add enough cold water to come up to the back hinge of clams (5 to 6 cups). Cover and bring to a simmer over high. Reduce heat as needed to maintain a low simmer; cook until clams open, about 5 minutes. Remove pot from heat, and uncover. Let stand until clams are cool enough to handle. Remove clams from pot, reserving broth. Discard any unopened clams. Remove clam meat from shells; finely chop meat, and set aside.
  • Using poultry shears, cut through shell hinges. Arrange half shells on an aluminum foil–lined rimmed baking sheet. Pour 2 cups clam broth into a liquid measuring cup, leaving any sand or residue in bottom of pot. Set clam broth aside. Reserve any remaining broth for another use, or discard.
  • Melt butter in a large skillet over medium. Add sausage, and cook, stirring occasionally, until sausage has plumped and released its red oil, 1 to 2 minutes. Remove sausage with a slotted spoon, and transfer to a plate lined with paper towels to drain. Add onion, celery, and bell pepper to skillet; stir to coat in fat. Cook, stirring often, until vegetables are softened, about 8 minutes. Add garlic, and cook, stirring often, 1 minute. Remove from heat.
  • Add chopped clam meat, sausage, breadcrumbs, thyme, and 1 cup reserved clam broth to skillet, and return to heat over medium. Fold to combine; cook just until heated through, about 1 minute. (If mixture is too dry, add remaining 1 cup broth, 1/4 cup at a time, as needed. Mixture should be moist but not wet.) Stir in parsley, salt, and black pepper.
