CHOCOLATE TIA MARIA NUGGETS

Gorgeously tempting chocolate treats with an added kick of Tia Maria

142ml carton double cream
200g bar dark chocolate , broken up
4 tbsp Tia Maria
icing sugar and cocoa powder , to coat

Steps:

  • Bring the cream to the boil in a small pan. Remove from the heat and stir in the chocolate until it has melted. Stir in the liqueur and pour into a bowl. Cool, then chill until firm, about 4 hrs, or overnight.
  • Sprinkle a sheet of greaseproof paper with icing sugar and another with cocoa powder. Take a teaspoon and scoop nuggets of truffle mix out of the bowl and onto either the paper with cocoa powder or icing sugar. Use two teaspoons to coat the nuggets then transfer them to paper sweet cases. Pack into paper sweet cases in boxes and chill. Store for up to 2 weeks.

50g dark chocolate , 70% cocoa, broken into squares
150ml double cream
2 tbsp Tia Maria (or use another liqueur such as Cointreau, Grand Marnier or Kahlua)
cocoa powder , for dusting
Cantuccini or amaretti biscuits , to serve

Steps:

  • Put the chocolate into a bowl. Mix the cream with the Tia Maria, reserve 2 tbsp, then tip the rest into a saucepan and bring just to the boil. Remove from the heat and tip straight over the chocolate, stirring until the chocolate melts. Divide between 2 small glasses and allow to cool slightly. Whip the remaining cream until slightly thickened, then spoon over the cooled chocolate mix. Chill for at least 1 hr to set. While you're waiting, cut a heart shape from a piece of thick card.
  • When ready to serve, set the card over the glass and sift over a dusting of cocoa powder. Lift off carefully and do the same with the other glass.

85g hot melted butter , plus extra butter for greasing
14 plain chocolate digestive biscuits , finely crushed
3 x 300g packs full-fat Philadelphia cheese
200g golden caster sugar
4 tbsp plain flour
2 tsp vanilla extract
2 tbsp Tia Maria
3 large eggs
285ml carton soured cream
142ml carton soured cream
2 tbsp Tia Maria
cocoa , for dusting
8 Ferrero Rocher chocolates, unwrapped

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Line the base of a 25cm springform tin with baking parchment. Blend butter and biscuit crumbs. Press onto the base of the tin, bake for 10 mins, then cool.
  • Increase the oven temperature to 240C/fan 200C/gas 9. Beat the cheese and sugar with an electric whisk until smooth, then whisk in the flour, vanilla, 2 tbsp Tia Maria, eggs and 285ml soured cream.
  • Grease sides of the cake tin with butter. Pour in the mixture and smooth. Bake for 10 mins, then turn oven down to 110C/fan 90C/ gas ¼ for 25 mins. Turn off the oven, then open the door and leave to cool inside the oven for 2 hrs. Don't worry if it cracks a little.
  • Mix 142ml soured cream and Tia Maria, then smooth on top of the cheesecake. Chill.

TIRAMISU CHEESECAKE

Easy to transport and serve, this is a great dessert to take to a party. Everyone loves tiramisu and everyone loves cheesecake so it's a winner all round

300g pack dark chocolate digestives
80g butter , melted
500g milk chocolate , the best quality you can find, finely chopped
300ml double cream
100ml Tia Maria
300g cream cheese
200ml double cream
1 tsp vanilla extract
1 orange , zested
50g icing sugar
cocoa powder and crushed coffee beans, to serve

Steps:

  • Line the base of a 23cm springform cake tin with baking parchment. Crush the biscuits as finely as possible in a food bag using a rolling pin, or in a food processor, and mix with the melted butter. Tip into the tin, pressing down to flatten and set aside in the fridge.
  • For the chocolate layer, tip the chocolate, cream and Tia Maria into a bowl and melt over a pan of simmering water. Once melted, quickly stir together and pour over the biscuit base, then chill in the fridge for at least 3 hrs, or until set.
  • When the chocolate layer is set, beat the cream cheese, double cream, vanilla, orange and sugar together, then spread and swirl the mix evenly over the chocolate layer. Put the cake back in the fridge for a couple of hours or overnight. Can be made up to two days in advance and kept covered in the fridge.
  • To serve, remove from the fridge, sieve over the cocoa powder and sprinkle over the crushed coffee beans. Run a knife around the edge of the cheesecake and release from the tin and serve. For a neater finish, blowtorch the outside of the tin to release the sides.

This beautiful and scrumptious dessert is sure to be a crowd pleaser and a lovely holiday dessert. As an added bonus, it's easy to make. While I make my own cookies from scratch, you could certainly use store-bought chocolate chip cookies in a crunch. For those unfamiliar, Tia Maria is a (non creamy)coffee flavoured liqueur - you can use cheaper varieties but they don't taste as good, imho. I often use a springform for this but you could also do it on a nice cakeplate.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar (packed)
1 teaspoon vanilla extract
2 large eggs
2 cups nestle semisweet chocolate morsels (you can also use Hershey Special Dark morsels instead)
8 ounces Tia Maria
2/3 cup milk
1 quart heavy whipping cream (well chilled)
2 -3 tablespoons powdered sugar (depends on how sweet you like it)
1 teaspoon vanilla
slivered almonds
chocolate shavings (or curls)

Steps:

  • For cookies:.
  • PREHEAT oven to 375°F.
  • COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.
  • BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
  • CHILL metal mixing bowl in freezer. Then beat whipping cream till soft peaks form. Sift in powdered sugar and vanilla and beat till firm peaks form.
  • MIX together milk and Tia maria in bowl. Dip cookies in mixture, then arrange in layer at bottom of springform, using some cookies to line sides of pan. Add layer of whipped cream, then another layer of cookies. Alternate cookies and whipped cream until cookies are finished, then cover rest of dessert in whipped cream.
  • SPRINKLE slivered almonds on sides of torte. Carefully place chocolate curls at top of cake. You can also place a strawberry in the top center for an elegant look.
  • Refrigerate for at least 12 hours prior to serving.
  • Enjoy!

1/4 cup confectioners' sugar
1 (2 lb) package chocolate chip cookies
2/3 cup milk
2/3 cup Tia Maria
1 ounce semisweet chocolate

Steps:

  • Whip cream with sugar with electric mixer until stiff, set aside.
  • Dip cookies quickly into milk then into liqueur.
  • Arrange in a single layer in bottom of ungreased 10” springform pan.
  • Fill in spaces with pieces of cookies which have also been dipped.
  • Spread a layer of whipped cream over cookies.
  • Repeat twice more with remaining cookies and whipped cream ending up with whipped cream.
  • Grate chocolate square and sprinkle over top of torte.
  • Refrigerate overnight.
  • Needs 24 hours to set.

TIA MARIA SOUR CREAM DIP FOR FRUIT

I first tried this years ago when a friend passed on the recipe. I whipped the ingredients together until thick and loved the result but later found my friend just stirred hers so her dip was quite liquidy. I actually prefer it whipped but either way guests enjoy it. I have also used Godiva or Mozart Liqueur (chocolate) depending on what I have available. I made this yesterday with Mozart Liqueur for JanS - she requested I submit the recipe.

300 ml pure sour cream, light will not whip
2 -3 tablespoons brown sugar, to taste
4 tablespoons Tia Maria, to taste

Steps:

  • Whip ingredients together until thick.
  • Serve with fresh fruit cut into reasonable sized chunks for easy dipping.
  • I like to use rockmelon, pineapple, kiwi fruit, strawberries and then maybe another fruit in season, whatever looks nice arranged in colours.
