This classic chicken Parmesan recipe gets the Good Food makeover, resulting in a hearty yet healthy dish great for sharing with your mates

- Halve 2 large skinless chicken breasts through the middle then place the 4 pieces between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin.
- Dip in 2 beaten eggs, then 75g breadcrumbs, mixed with half of the 75g grated parmesan. Set aside on a plate in the fridge while you make the sauce.
- Heat 1 tbsp olive oil and cook 2 crushed garlic cloves for 1 min, then tip in half a 690ml jar passata, 1 tsp caster sugar and 1 tsp dried oregano. Season and simmer for 5-10 mins.
- Heat grill to High and cook the chicken for 5 mins each side, then remove.
- Pour the tomato sauce into a shallow ovenproof dish and top with the chicken.
- Scatter over torn pieces of half a 125g ball light mozzarella, and the remaining grated parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling.
- Serve with vegetables or salad and some pasta or potatoes, if you like.

Back in the day, when life revolved around the kids' practices and games and other after-school activities, dinner usually had to be on the table in 30 minutes max. This recipe from Southern Living was one of our 'quick-and-easy' favorites. Prepare a package of long-grain and wild rice, throw some green beans in a saucepan to heat, chop up a few pieces of fruit (or open a can), and you'll have a very acceptable dinner in spite of your crazy schedule! :) Also, whether you're cooking for 1 or 4 or 10, this one is easily adaptable.

- Melt 4 tablespoons butter or margarine in a large skillet over medium heat.
- Rinse chicken pieces with cold water and pat dry.
- When butter has melted and begun to sizzle slightly, add chicken to skillet.
- Cook chicken approximately 10 minutes, until nicely-browned.
- Meanwhile, rinse and trim onions; slice thinly, including some green "tops".
- Clean mushrooms and remove stems; slice caps.
- When chicken is browned on the outside and appears to be cooked approximately halfway through, turn the pieces over and sprinkle evenly with salt and pepper.
- Add mushrooms and onions to skillet, along with additional butter if necessary.
- (Note: The original recipe did not call for extra, but I sometimes have to add a tablespoon or two so that the veggies will sauté properly instead of sticking). Cook approximately 10 additional minutes, until chicken is thoroughly done.
- Place a slice of cheese on each piece of chicken.
- Remove to a platter and cover with foil.
- Allow chicken to sit about 5 minutes until cheese melts.
- Spoon mushroom mixture over chicken before serving.

- Preheat oven to 400°F (200°C).
- On a parchment-lined baking sheet, season both sides of the chicken with olive oil, salt, pepper, garlic powder, and oregano.
- Bake for 30 minutes, or until cooked through and juices run clear.
- While the chicken is in the oven, combine the balsamic vinegar and honey in a sauce pot and simmer, stirring occasionally.
- NOTE: It should take about 20 minutes for the mixture to reduce.
- Once the glaze has reached your desired thickness, remove it from the heat and set aside.
- Remove the chicken from the oven and top with slices of mozzarella and tomato.
- Broil for 8-10 minutes, or until the cheese is melty and the tomatoes are slightly charred.

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
- Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
- To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

- Cook the pasta according to the package directions.
- Heat the olive oil in a skillet over medium-high heat. Add the chicken pieces in a single layer and sprinkle with salt and pepper. Allow to cook, without stirring, until golden, about 2 minutes. Stir the chicken around to brown it on all sides. Remove to a plate.
- In the same skillet over medium-high heat, add the garlic and onions and stir immediately to start cooking. Cook until the onions are deep golden, stirring occasionally, 2 to 3 minutes.

- Preheat oven to 375F and move the rack to the middle position.
- Season both sides of each piece of chicken with the garlic powder and salt & pepper.
- Add the oil to a skillet over medium-high heat. Once the pan is hot, sear the chicken for 5 minutes/side. Add the chicken to a greased baking dish (I used a 9x13) once both sides are seared.
- Pour the marinara sauce over the chicken and use a spoon to spread it evenly over and around the chicken.

- Season each side of the chicken breast cutlets with salt, pepper, and 1/2 teaspoon of Italian seasoning.
- Add the avocado oil to a large oven proof skillet (such as cast iron or stainless steel) and heat over medium-high heat. Brown each side of the chicken cutlets and cook until a meat thermometer reads an internal temperature of 150F.
- Remove the chicken from the pan to a plate and set aside. Pour the marinara in the skillet and scrape any browned bit from the bottom of the pan with a spatula. Return the chicken to the pan and top each cutlet with 1/4 cup of shredded mozzarella cheese, followed by the rest of the Italian seasoning.
